Peach Cobbler that is Eazy Breazy? Yes it is!

My Great Grandmother used to make cobblers all the time. I grew up making the biscuit like crust that was pieced together like an old quilt. Carefully the dough was wrapped around fresh fruit. The juices bubbled through the slit on top. Ahh.. Be still my beating heart!

Add a scoop of ice cream to the top of the warm cobbler, fresh from the oven and I am serious, I think I heard angels singing!

Well, this cobbler is a bit different. Instead of a biscuit dough it is more like a thick batter that floats to the top when it is being baked, allowing the juices to really infuse the crust.

Totally worth trying. I mean how can you go wrong with fresh peaches, flour and butter!

When you think about it, the ingredients of this Frozen Yogurt are actually good for you!~ The Greek yogurt and strawberries are perfect together and with only a few more ingredients, a blender, and room in the freezer, and you are set for cooling off!
I was thinking that this might also be good to make into small individual cups or better yet, popsicle containers.

I love that this recipe uses strawberries, but to be honest when I was looking up fast and easy summer recipes, the ones that really kept [popping out were the ones that didn’t require an Ice Cream Freezer.

You only need a blender for this one. I can’t believe I didn;t try this sooner. Plus,

I know there are a lot of people who make their own Greek yogurt, but I am totally OK to just buy it from the store, After all, a mom can only do so much!

Pie for a crowd? No problem with this “Best of Show” recipe!

It is always a tough thing when you are bringing a pie to a family function or big potluck. You know that there are only 8-10 pieces in a dish..depending on how small you cut the pieces.

But Pie for a whole crowd? Now that is what I am talking about! I love the fresh taste of strawberries and how they add just as much color as they do flavor to any meal, so being able to make one dessert to feed several people is a real bonus recipe for me.

My grandpa used to say that he only liked two kinds of Pie, Warm and Cold! I think he would totally have loved this one and so will your family and friends.

This recipe is super simple and I love the filling.  It’s so much better than the gloopy glaze that you can buy in the little containers.  Made easily in a sheet pan, it is easy to make ahead and take to a cookout!

This Cake Will Have Your Family Going Bananas!  Literally.

The great thing about bananas is that they are so cheap. I mean the average price I pay is 69 cents a pound! My kids eat them like crazy so I am always buying more bunches..about as often as I buy milk!

Sometimes the bananas get a bit freckled. When other fruit is in season such as peaches, strawberries, and grapes, the bananas are not the first go -to snack. That is okay too! My kids have always been crazy about banana bread and muffins so this cake is really up their ally! Or should I say Tree :~D

Banana Consumption at my house is really hard to predict. When I buy a bunch of bananas, sometimes I don’t get one because they IMMEDIATELY get gobbled up by hungry, ravenous beasts…aka…my littles. Anyone who knows me know I am a total FREAK for anything lemon.

I don’t know what it is but I just can’t get enough of the bright tangy taste of lemons.

Even the sight if the citrus is cheery. Nothing says clean and fresh like a bowl of lemons right in the middle of the table.

Being from Northern California I wasn’t surrounded by citrus like we are in sunny Southern CA. While I don’t think this area will ever feel like home, I have to admit I have become very spoiled with the abundance of produce.

Lemon Curd is one of my favorite things to make. When I have a bowl of lemons I will usually can a few jars, but since they are such a treat, I end up giving them away as little gifts.

Which means I need to make another batch. It is a vicious cycle, but when life gives you lemons..make something fabulous.

This dessert really caught my eye because it is a bit lighter than a traditional cheesecake and is a no-bake option. the last thing you want to do on a hot summer day is turn on the oven.

Quick Tip: If you have an abundance of lemons  and are not sure what to do with them consider juicing them and pouring the juice into ice cube trays. When they are frozen, just pop the lemon juice cubes out, put into a freezer bag, and put back into freezer. When you need some lemon for anything or even to make a drink with just take out as many cubes as you need.

When we moved to Southern California there was a restaurant that our older boys took us to. They raved about how zesty and fantastic the ribs were.

I thought maybe they were exaggerating a bit since they missed my cooking. I was wrong! Phil’s Bar-B-Que was a huge hit on our family trip and has since become one of our favorite rib places.

The big platter of food was devoured by our carnivorous offspring like Vikings after a plunder. When I saw that there was an actual sink in the family style dining room I assumed they were going a bit overboard. Not at all. The sink was perfect to rinse off what would have taken a small bale of napkins to clean up.

Ever since then I have been hoping to find a recipe that tastes similar and I think this one might be it.

 Ice Cream That You Can Make In Your Blender Is The Bomb!

I remember the sound of the ice cream freezer as it churned the fresh ingredients. The sound of ice crunching with rock salt to get just the right temperature. It seemed to take forever. Adding more ice. Then salt.

Finally when the churning was done the top would be covered with an old towel or newspapers. The ice cream would need to finish freezing before the paddle was removed and the first scoops could be placed in bowls of those anxious for this timeless summer tradition.

If you are at an Ice-Cream gathering, it is fun to watch everyday people become homemade ice cream connoisseurs. Each recipe varied just a tad. Some are purists in their approach. Plain vanilla is topped with warm fudge sauce and sprinkled with nuts or sliced strawberries.

Have you ever had such a huge craving for something? It seems that every time I see baskets of blueberries begin to make their appearance in the produce section I find myself scouring over recipe books and magazines for a new recipe.

When I saw this one for a crumble cake I decided I didn’t need to look any further. The crumble topping cakes are always so yummy and the fact that they don’t require cooling completely to add frosting makes this an easy dessert to toss in the oven right before company comes so the house smells amazing.

I had no idea making granita was so simple! Oh well, better late than never!

Anytime I saw the glossy photos of fresh fruit granita I was in awe. Seriously, it looked so refreshing and as a gal who asked for a snow cone machine for Mother’s Day one year, this really appeals to me.

When my husband and I got married we went to Hawaii for our honeymoon. Every afternoon we would get a huge “brain freeze” snowcone instead of lunch. I loved the assorted tropical flavors and the cool icy treat.

I can’t believe I never looked at the recipe. I knew it must be difficult or time-consuming. Boy, was I wrong. You blend the ingredients in the blender and put into a metal 9 x 13 and put it in the freezer. Several hours later you have something that will be the coolest thing ever..literally!

And the other great thing about this easy to create dessert is that there are so many times I will buy a watermelon and it is more than we can eat over a few days. Being able to put a pan of this in the freezer helps me to utilize all of my fruit before it goes bad. That is a saving.

You know summer is official when you see bins of watermelons at local farmer’s markets and grocery stores. I remember my parents buying watermelons on our way camping and putting them in the stream to keep cold. That was in the day when watermelons were the size of something shot out of submarines and big black seeds dotted the red juicy flesh. As a kid, part of the fun of eating a big wedge of watermelon was to see who could spit the seeds the farthest.

I Have Baked A Lot of Bread, But Never One Topped With These Ingredients.

 

I started baking my own bread about 25 years ago. I made several loaves at a time and put some in the freezer. It was a long day of waiting for the dough to rise, punching it down, kneading it, letting it rise again, and then baking. But it was worth it.

I heard once that the smell of freshly baked bread helps to increase your sense of well-being and I totally believe it. My family is used to eating sandwiches made with home-baked bread, homemade pizza crusts, and sweet bread with dried apricots, dried cranberries, and nutmeg.

Several years after I started baking bread the best thing ever was invented. Bread machines! No longer did bread baking take all day, it was just a matter of putting in the ingredients and waking up to the smell of a bakery right in my own kitchen. I still use my bread machine, but knowing a few recipes I can create by hand it nice as well.
