Best Banana Cake Recipe04/17/2015

I love the fact that this does not have 1 1/2 cups of oil in it. I think the sour cream is the perfect swap out to help create this light cake that will have everyone swinging from the branches with joy!

Best Banana Cake Recipe

Ingredients:

  • 1 1/3 cup sugar
  • 1 cup sour cream
  • 2 eggs
  • 4 Tablespoons butter, softened
  • 1 1/2 cup mashed ripe bananas (about 3-4 bananas)
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Directions:

  1. Preheat the oven to 375 degrees F. (350 degrees F in a glass pan)
  2. Cream together sugar, sour cream, egg, and 2 tablespoons softened butter.
  3. Add mashed bananas and 1 1/2 teaspoons vanilla extract.
  4. Add flour, salt, and baking soda; mix well.
  5. Pour into a greased 9×13-inch pan.
  6. Bake at 375 degrees F (or 350 degrees F see above) for 30-40 minutes until a toothpick inserted in the center comes out clean.
  7. Cool completely before frosting.

Wow that seems so easy!

Quick Tip. I am a huge fan of making muffins. I think I am going to try some mini muffins. Perfect for little ones.
