I love the fact that this does not have 1 1/2 cups of oil in it. I think the sour cream is the perfect swap out to help create this light cake that will have everyone swinging from the branches with joy!
Best Banana Cake Recipe
Ingredients:
- 1 1/3 cup sugar
- 1 cup sour cream
- 2 eggs
- 4 Tablespoons butter, softened
- 1 1/2 cup mashed ripe bananas (about 3-4 bananas)
- 1 1/2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
Directions:
- Preheat the oven to 375 degrees F. (350 degrees F in a glass pan)
- Cream together sugar, sour cream, egg, and 2 tablespoons softened butter.
- Add mashed bananas and 1 1/2 teaspoons vanilla extract.
- Add flour, salt, and baking soda; mix well.
- Pour into a greased 9×13-inch pan.
- Bake at 375 degrees F (or 350 degrees F see above) for 30-40 minutes until a toothpick inserted in the center comes out clean.
- Cool completely before frosting.
Wow that seems so easy!
