I grew up eating corned beef and cabbage. To be honest, it was not my favorite. Okay, it was probably the least favorite thing off the long list of dinners my mom made.

My mom was so creative in the kitchen and could whip up anything at a moments notice, but the cabbage thing? Well, let’s just say you could smell it boiling before you opened the door and it was not something you wanted to put in your mouth.

The crazy thing is that I LOVE Reuben sandwiches and love the flavor of cabbage and sausage, just not boiled. This totally saves the day and I can’t wait to make this for my mom the next time she comes out to visit.

Since there are so many flavors of sausage you can try them all and still feel like you are changing things up a bit!

I might even add some caraway seed in there just to give it that Reuben Sandwich flavor I love.

One Pan meals are becoming a standard at our house. I always remember my mom making several dishes to put on the table. Anything cooked in a pan was put in a serving dish before being set on the table. It was just the way things were. We didn’t use cloth napkins but my mom did teach me how to set a nice table, complete with a center piece.

It was nice to sit down as a family, but afterwards there was always the task of dish duty. I was usually the one who was in charge of hand washing.

In fact all these years later I feel like I am still in charge of hand washing the pots and pans so whenever I come across a meal I can make in just one pot, or skillet I am totally on it.

Seriously, no one will even remember what the main dish is after they take a bite of this Ahh-mazing potato dish.

My family loves it when I make creamy homemade mashed potatoes, but sometimes that is just a lot of work and it usually leaves a bigger mess than I would like to tackle when everyone is over.
Peeling the potatoes, boiling, mashing them, then trying to get them on the table while they are still steaming hot is not an easy task.

Finding recipes that I can make the day ahead and just pop in the oven is a huge win for me! I mean with my large family we tend to really go through the food for family gatherings so having something so tasty and filling as a side is awesome. Having something that is budget friendly is even better! In fact this recipe is something that has become a standard on our table for any holiday or reunion.

I remember the time I made a rice pilaf instead and I will tell you that was a huge mistake. The first thing my kids asked were, “Where are the potatoes? ” I told them I thought I would try something new. Total fail. So the next time to make up for it I baked a huge pan of this and added in a few extra strips of bacon. They were so thrilled they could have skipped dessert and just had this as we played cards after dinner was over.

And because I could make it ahead, I was able to spend more time visiting and less time in the kitchen.

When I saw this recipe I thought Naji was just kidding. I mean how many cookie recipes require only three ingredients? Even boxed cake mixes need, eggs, oil, water, and the mix! But she was totally serious!

I am the kind of mom who has always had the cookies in the cookie jar. If it is empty for more that two days, my family begins to grumble and wonder if I am staging a protest.

Even our kids friends look at the glass cookie jar on our counter when they walk into the house, not to see if it is full, but to see what kind of cookies are in it.

Usually I need to have a few hours to get the huge batch baked and cleaned up.

But, every once in a while it is nice to just make something different. When I know my teen’s football team had a tough loss, or my husband had a hard day at work, what a better way to welcome them home than with a plate of freshly baked and still warm cookies?

Because this recipe is so easy and is a small batch, it doesn’t require a lot of time, or make a big mess. It is just a baker’s dozen way to say..”I Think You Are One Great Cookie!”

This is what Naji says about her recipe after she switched an ingredient in the classic recipe.

But use brown sugar instead… and wow! The difference is astonishing. The cookie is soft and chewy and it has more flavor too, that slight caramel-y flavor that brown sugar has.

One Potato, Two Potato, Three Potato, Four…

Oohh man I wish I had kept track of how many pounds of potatoes our family have consumed over the years. Or maybe I should say truck loads!  We are huge fans of hash browns to potato soup and everything in between.

Potato sides are huge because they are so filling with makes them easy on the budget and when you have a houseful of family, friends, or guests, being able to feed every one without breaking the bank is a huge reality.

I remember when the main potato that was the most consumed were the russets. They are still super popular, but now there are other standards such as Yukon Gold and small red potato. Yeah for spuds of all shapes and sizes!

Our family loves pizza! Seriously, I think they would have pizza night every night if I made it!

But sometimes I don’t have time, and sometimes we really don’t need a full meal, just something for an after school snack, movie treat, and something hot and yummy. Something that is more filling and is more nutritious than chips or a handful of crackers.

This is exactly the kind of thing you could make any time of day for a quick snack or even part of a meal..heck if the kids or grandkids are coming over and having a slumber party! Pizza Out!

Since this is made in a casserole or even a Bundt pan you don’t even have to worry about forks and plates since you can just pull this apart and eat with your fingers. Napkins, however, are always a good idea!

Okay, now I am getting hungry! Time to raid the fridge and whip of a batch of these!

No time for breakfast? Think again!

This easy breakfast is the best idea since sliced bread. I totally get that sometimes we don’t have time to actually sit down and have a hot meal, especially when everyone running in different directions first thing in the morning.

I have heard over and over again that breakfast is the most important meal of the day. To be honest, this breakfast is way too easy to skip. It is the perfect grab and go food that combines all the best breakfast food in one little package consisting of more food!

You could buy a tray of  breakfast-ables that have a some grapes, a few crackers, and a hard boiled egg in it. However,  it probably has a shelf life of about 3 weeks.

Isn’t’ something fresh a better way to roll?

The answer to that is YES. Now, I am not going to say that my kids would have eaten this breakfast every day of the year because they love having choices but this is definitely something that would have been a regular on the menu.

Our oldest is obsessed with french toast. He requests it on an almost daily basis. Our youngest would rather eat eggs and sausage. But like many of you, our mornings are rushed and I don’t always have time to make a big hearty breakfast. So this was my solution. Quick, easy and surprisingly tasty!

This is one of the easiest recipes you will find on the internet.

This recipe only has 4 ingredients. FOUR! As far as measuring anything, that doesn’t even need to happen. It is just a matter of dumping everything in a pan, stirring it up, and baking until hot and cheesy.

It is the kind of recipe you love to take because people go wild over it, however, you hate to give out the recipe because people have no idea how insanely simple this is.

In fact, I thought it was a joke at first and had to make sure this wasn’t posted on April Fools Day!

So the next time someone is taking sign ups for a pot luck or a get together grab a pencil or pen and sign up for a side dish. As many 9 x 13 pans as I have made, it is nice to know we can make this into 2 – 8 x8 pans of three loaf pans for a smaller crowd.

When John and I first got married cooking for only two was a big adjustment. I had done quite a bit of cooking and as the oldest of 4 children, it meant a lot of casseroles and large quantities. So it was a surprise when John came home from work and saw I had made 2 9×13 pans of enchiladas. TWO.
“Who is coming over?” he asked.

“No one,” I replied. “I just thought I would make enough for left overs!” Yep..Enchiladas for the next two weeks and that was after we took our neighbor over some. Being able to adapt recipes for your crowd size is so important.

The French Onion part of this casserole comes from you favorite French Onion dip. I prefer Kraft French Onion dip, but any refrigerated French Onion dip will work great. I loved the flavors in this casserole. I could have made a meal out of it! We like to serve it with chicken, steaks, pork tenderloin and burgers. It really goes with everything. Make this ASAP!

No Matter What You Call This, It Is a Hit In Our House!

A few years after John and I got married John’s mom gave us a super thoughtful gift. She had one of John’s favorite recipes that was still on the index recipe card and had it framed for us. We have moved us several times and some of our decor has changed but one thing we have had with us is that framed recipe card.

I love the bent edges and the smeared writing in the corner, but what I love most are all the memories we have made while eating one of these amazing breakfast dishes. Truth be told I love this for brunch. It is super light and is the perfect way to hold your family favorite topping. Sometimes we just squeeze fresh lemons over the top and dust with powdered sugar.

I know one year I had several of my daughter’s friends at our house for a week. I think those girls ate more “Poofta” in one week than most Americans eat during their lifetime. Yes, it really is that good and so easy you will probably find yourself wanting to make this more often. Think of a crepe only a baked!

Not only is this a beautiful dish it is totally packed with flavor you don’t want to miss.

I used to make this with ham and cheese, but making this with taco meat is an absolute stroke of genius.

I know that this recipe from Pillsbury said it is for 8 people, but there is no way my family would have been able to eat this and not walk away hungry so I used to make two of these.

Being able to have ingredients on hand for when life is busy is not only a healthier option it is so much better on the budget.

Buying the tubes of crescent rolls isn’t the cheapest, but I have usually been able to find these on sale from time to time and the shelf life is pretty decent so next time you think about it of see these, go ahead and buy a few tubes.Plus, it is cheaper than driving through a fast food line.

I had a tube of dough on hand one Sunday not long ago, my teen was working on homework, my husband was resting up for the busy week ahead. I tossed one of these in the oven. The fact that is was filled with hot meat and cheese made everyone smile. A snack isn’t always just a cookie or a banana, sometimes you need something a little more.

After it was finished off I got a heartfelt Thank you! And since I served it onto paper plates, right from the cookie sheet. the mess was super minimal. Hey, I need a break every once in a while as well!
