This Bowl of Soup Will Really  Warm You Up!

I love being able to toss a handful of ingredients in a slow cooker and know that in 5 hours we will have an amazing soup ready to eat. This is the kind of meal I love putting together during the week when it feels like you are running out of time and the last thing you want to do is make a meal and clean up a mess! I mean, sure you will have to deal with the empty cans but I can totally handle that!

Ree Drummond always pulls together the easiest meals that are bursting with flavor! And this is one soup that does not disappoint! Ree knows that having a family dinner together is important and being able to take the frazzled mess out of meal planning is a huge benefit.

I love that this recipe can be made while you are out and about, but in a pinch, you can always make this on the stove top in a Dutch oven and let it simmer for a while. Since this recipe makes 12 servings you can count on having leftovers to take for lunch, or enjoy another meal!

I love the flavor of citrus. Usually I make lemon curd, or have key lime pie, but this cake brings all those flavors together in this wonderful cake.

I think I really fell in love with the flavor of lime when I went to Belize to visit a friend.She used to put slices of the citrus in our drinking water. I am not sure if it was because the water wasn’t the best tasting or if she just preferred the light refreshing taste, but it really grew on me. Even the color of the thin green slices in the water looked nice and refreshing. In the middle of a hot and humid afternoon it was absolutely wonderful.

Every time I go to one of my favorite markets I pick up an couple of limes. Margaret would be happy to know that she still inspired me after all these years.

I still love the flavor of lime and this cake is loaded with it!

Dinner, Appetizer, Lunch? WOW talk about multi functional!

I use to buy a big bag of meatballs from Costco when all out kids were home. They weren’t the best tasting, not sure it is was the flavor or the texture, but they were food that could be fixed in a hurry. That was what counted then since we had 6 kids at home.

I used to use the meatballs in spaghetti sauce, sub sandwiches, and for a quick snack dipped in BBQ sauce.

But they weren’t the best tasting thing so after we had several kids move out and our family size change, I began to buy more and more things in smaller quantity.

This meatball recipe might just be what I was looking for! Since I am not a huge ground turkey fan I will replace it for ground chicken. If you are a beef purist, go ahead and use ground beef. Hey..it is your dinner! Do what works best for you!

If you have some reluctant or picky eaters, feel free to go light on some of the sriacha sauce. Trust me ..we lived in the Midwest for 9 years. Pretty sure their idea of hot sauce was un-refrigerated ketchup!

This is what Kelly at Eat Yourself Skinny has to say about this winner of a recipe.

Not only is this sauce ridiculously easy to make, but as I said before, how can you go wrong with flavors like Sriracha, soy sauce, ginger, honey, and garlic?! The answer is you can’t. Most store-bought sauces come saturated in preservatives and other ingredients that you can’t really pronounce which is why I am all about making my own.

Quick Tip:  Since these are so yummy and easy to put together why not make up at least a double batch of meatballs, freeze them on a cookie sheet after baking and then put in freezer bag. Take out as needed.

The first time I heard about quinoa I had NO idea what they were talking about.

My son was telling me about some of his recipes and I kept asking..is it a grain? What is it?

So I looked it up and this was the definition.

Pronounced “keen-wah,” this protein-packed grain contains every amino acid, and is particularly rich in lysine, which promotes healthy tissue growth throughout the body. Quinoa is also a good source of iron, magnesium, vitamin E, potassium, and fiber.

So basically it is a nutrient rich seed that is categorized as a protein.

I have started making a few things with it and replacing rice and it kind of reminds me of brown rice, only a bit nuttier.

Of course, it doesn’t have that high starch factor that you get from white rice. You know..the way you mash your fork on your plate and the rice sticks to it like something out of a Play-doh fin factory, but it is good for you. So if you haven’t tried Quinoa. Go ahead and try this recipe. Either way, I think we will be eating more of that super food in the future!

I love that Richa has this recipe designed to be divided into four bowls. What a time saver to have lunch or dinner ready to go.

If all you have to do is pop this in the microwave and re-heat then you can spend more time doing something you enjoy then trying to order something off the “to-go” menu!

Quick Tip: Make sure you rinse the quinoa thoroughly to get rid of a slightly bitter taste after cooking. Not a big deal and some quinoa doesn’t even have it. But seriously it is a small thing to do. Much easier than dealing with kale!

Sometimes it is easy to be jealous of someones’ plate. Especially if you are counting calories or carbs!

Trust me I know! I have been dieting my whole life and there is nothing more frustrating than trying to cut back on your calorie intake, knowing that you will not be eating the food you love! Sure, this might mean that the super cheesy sour cream chicken enchiladas don’t take front and center on the menu, but when you add in great options like this salad you won’t even miss it.

I also love that you can have all the ingredients prepped and ready to toss together during the week for lunches. I think one of the things that sabotages alot of our eating is the fact we don’t plan ahead and have food that is healthy ready to eat WHEN we are hungry. As a result we end up just grabbing something from the snack bar, the food truck, drive-thru, or the fridge.

Feel free to customize this recipe to suit your taste and needs. On a Weight Watchers point program? Cut down on the corn and beans and add in bell peppers and spicy pickled carrots.

This Skinny Taco Salad is also ideal for meal prep. Chop the veggies and cook the turkey in advance and store them individually in the refrigerator. Then throughout the week, you can quickly assemble individual portions and add any other toppings you desire.

No Bake Cheesecake? How cool! Literally.

I love the taste of cheesecake, but it can be so heavy and overwhelming. Adding in citrus really lightens up the flavor and the fact that this is a no bake treat makes it nice. Really, who wants to heat up the house during the summer months.

When we lived in the Midwest I noticed that the older farm houses had a “summer kitchen”.  It was a small outbuilding next to the house that had a stove and storage. It was where the canning, cooking, and baking took place during the summer months, especially when the harvest was plentiful.

Coming from CA, I thought that seemed odd, but when the temperature and the humidity started rising to a sweltering level I understood the wisdom.

Being able to make anything without having to heat up the house was a huge benefit.

Here is what Martha says about her no-bake Key Lime Cheesecake.

This airy, mousse-like treat blends the tartness of Key lime pie with the richness of cheesecake. Its graham-cracker crust sets in the freezer rather than the oven, and the traditional whipped-cream topping is folded right into the filling, along with fresh citrus juice and zest, cream cheese, and sweetened condensed milk. Chill it overnight, and wake up to a world of bliss.

Anyone who knows me know I am a total FREAK for anything lemon.

I don’t know what it is but I just can’t get enough of the bright tangy taste of lemons.

Even the sight if the citrus is cheery. Nothing says clean and fresh like a bowl of lemons right in the middle of the table.

Being from Northern California I wasn’t surrounded by citrus like we are in sunny Southern CA. While I don’t think this area will ever feel like home, I have to admit I have become very spoiled with the abundance of produce.

Lemon Curd is one of my favorite things to make. When I have a bowl of lemons I will usually can a few jars, but since they are such a treat, I end up giving them away as little gifts.

Which means I need to make another batch. It is a vicious cycle, but when life gives you lemons..make something fabulous.

This dessert really caught my eye because it is a bit lighter than a traditional cheesecake and is a no-bake option. the last thing you want to do on a hot summer day is turn on the oven.

This is what Michelle has to say about this lip smacking summer delight.

Quick Tip: If you have an abundance of lemons  and are not sure what to do with them consider juicing them and pouring the juice into ice cube trays. When they are frozen, just pop the lemon juice cubes out, put into a freezer bag, and put back into freezer. When you need some lemon for anything or even to make a drink with just take out as many cubes as you need.

I had no idea making granita was so simple! Oh well, better late than never!

Anytime I saw the glossy photos of fresh fruit granita I was in awe. Seriously, it looked so refreshing and as a gal who asked for a snow cone machine for Mother’s Day one year, this really appeals to me.

When my husband and I got married we went to Hawaii for our honeymoon. Every afternoon we would get a huge “brain freeze” snowcone instead of lunch. I loved the assorted tropical flavors and the cool icy treat.

I can’t believe I never looked at the recipe. I knew it must be difficult or time-consuming. Boy, was I wrong. You blend the ingredients in the blender and put into a metal 9 x 13 and put it in the freezer. Several hours later you have something that will be the coolest thing ever..literally!

And the other great thing about this easy to create dessert is that there are so many times I will buy a watermelon and it is more than we can eat over a few days. Being able to put a pan of this in the freezer helps me to utilize all of my fruit before it goes bad. That is a saving.

This is what Marci says about this yummy treat.

You know summer is official when you see bins of watermelons at local farmer’s markets and grocery stores. I remember my parents buying watermelons on our way camping and putting them in the stream to keep cold. That was in the day when watermelons were the size of something shot out of submarines and big black seeds dotted the red juicy flesh. As a kid, part of the fun of eating a big wedge of watermelon was to see who could spit the seeds the farthest.

Freshly Squeezed Love Right Here

Lately, I have been watching a British baking show. My daughter-in-law is the one who got me started and I was hooked from the first time I heard one of the bakers say the word “Scrummy” as in scrumptious and yummy. Brilliant!

One of the things I noticed about the show was their obsession with cakes. Lots of cakes I had never heard of and it seemed that some of the elements produced a sound they were being judged on. Did it Crack? Snap? Crunch?

Well, the sound this recipe makes might be just silence followed by an “ahh”.  It is simple, yet when served with a spot of tea or coffee, can be just the perfect touch to just about any occasion. And face it getting all the socks to match up after they have been through the wash is an occasion to celebrate!
