No time for breakfast? Think again!

This easy breakfast is the best idea since sliced bread. I totally get that sometimes we don’t have time to actually sit down and have a hot meal, especially when everyone running in different directions first thing in the morning.

I have heard over and over again that breakfast is the most important meal of the day. To be honest, this breakfast is way too easy to skip. It is the perfect grab and go food that combines all the best breakfast food in one little package consisting of more food!

You could buy a tray of  breakfast-ables that have a some grapes, a few crackers, and a hard boiled egg in it. However,  it probably has a shelf life of about 3 weeks.

Isn’t’ something fresh a better way to roll?

The answer to that is YES. Now, I am not going to say that my kids would have eaten this breakfast every day of the year because they love having choices but this is definitely something that would have been a regular on the menu.

This is what Natalie has to say about this fast food from home recipe.

Our oldest is obsessed with french toast. He requests it on an almost daily basis. Our youngest would rather eat eggs and sausage. But like many of you, our mornings are rushed and I don’t always have time to make a big hearty breakfast. So this was my solution. Quick, easy and surprisingly tasty!

No Matter What You Call This, It Is a Hit In Our House!

A few years after John and I got married John’s mom gave us a super thoughtful gift. She had one of John’s favorite recipes that was still on the index recipe card and had it framed for us. We have moved us several times and some of our decor has changed but one thing we have had with us is that framed recipe card.

I love the bent edges and the smeared writing in the corner, but what I love most are all the memories we have made while eating one of these amazing breakfast dishes. Truth be told I love this for brunch. It is super light and is the perfect way to hold your family favorite topping. Sometimes we just squeeze fresh lemons over the top and dust with powdered sugar.

I know one year I had several of my daughter’s friends at our house for a week. I think those girls ate more “Poofta” in one week than most Americans eat during their lifetime. Yes, it really is that good and so easy you will probably find yourself wanting to make this more often. Think of a crepe only a baked!

I don’t know if it was the Poofta, the fact that they had stayed up all night sharing  girl talk, or just being together, but it was Yes, it really is that good and so easy you will probably find yourself wanting to make this more often. Think of a crepe only a baked!

This Dutch Baby pancake is baked in the oven and is deliciously light and airy, and tastes so good with a generous dusting of powdered sugar and topped with sweet and juicy cooked apples!

Who has time to make something for a potluck? This recipe solves your problem.

Here is the thing, we used to attend a small church in the town we lived in for several years. the first Sunday of every month was potluck Sunday. Sounds great right? Wrong! I hated potluck Sunday.

It was a miracle to get everyone up and out the door. Let alone try to get something made to take. One Sunday I was so frustrated decided to skip potluck Sunday altogether!

It just wasn’t worth the stress, hassle, or mess.

There were plenty of Sundays I just opened a huge can of peaches, put them in a glass bowl and sprinkled a little cinnamon on top.

The bowl was always emptied, but I wished I had a better handle on what I could bring.

This recipe is something I could have totally prepared the night before so all I would have had to do it take it with me and put it in the oven. Live and learn!

I have never seen anything this amazing since Mabel brought her famous Noodle DoDa Spam Hotdish!

Real men eat REAL food! This dish is loaded with all kinds of fresh and amazing food that anyone with an appetite will love.

Not I have to admit, I don’t always put this in a crust because to be honest, I am trying to shave off a few calories here and there, but this recipe is awesome because it can be made with or without the crust. The real flavor and nutrition is in the filling.
With a recipe like this you can do sop many amazing things to suit your preferences and please everyone who comes to the table. In fact you might want to go ahead and make a few versions. I know we have kids that love sauted mushrooms and some that really don’t so I could make one of each I mean why waste a perfectly good ingredient on a picky eater who is going to leave them on the plate?

You can also add in sun dried tomatoes, cubed zucchini, and I have even been known to toss some left-over rice or corn in just because I hate tossing out a small serving and know it will get eaten eventually.
Part of being a good household manager is trying to think of creative ways to re-purpose things and that includes how we deal with left-overs. Maybe this should have been called Left Over Quiche! Now that is success!

Remember the days when a snack was something your mom made from scratch? Time to get back to basics with this simple recipe.

Those were the days before high fructose corn syrup and partially hydrogenated oil was part of our vocabulary.

My mom would make individual sandwich baggies of trail mix and dried fruit and I remember the taste of her homemade fruit leather from our area’s farm fresh produce.

Today, convenience often trumps healthy alternatives. Being able to rip open a foil pouch is so much easier than making something from scratch. I think it boils down to what you want to feed your family.

Seriously, it is not practical to think that everyone is going to have time to sit down for a hot breakfast. One of these granola bars and a string cheese and you are fueled for your next adventure wherever that might take you.

Plus, for road trips or long hikes, this is something that is easy to take along. Actually, I think this might be a great snack to take on your next trip involving air travel! Not that I am ungrateful for the Tablespoon of Peanuts handed out, but having something a little more substantial would be nice for those trips where you are going to have a long flight followed by a lay-over.

Whatever the case may be..I hope you enjoy these as much as my family does!

I tried several different recipes before I found one that I knew my kids would love. Baking the first five ingredients before mixing made a huge difference in how the bars turned out.

I am usually skeptical of recipes that claim to be copy cat or inspired by favorite eateries..or in this case a familiar sight on most street corners. This recipe really works. The secret is in the science.

Have you even mixed baking soda and vinegar together? My kids used to do it every Easter time when the plastic eggs were plentiful. They would put both ingredients in one half, close the other half tight , shake it up and throw it as high in the air as they could. Then laugh like little fiends as it exploded in midair.

Thankfully this recipe does not involve re-purposing plastic eggs, but the science behind the mid-air explosions does create something magical. Fiendish giggles may or may not be part of the process.

Plus with a recipe that is easy, why not whip up a batch? Who knows, this is just the kind of thing that might inspire your inner science nerd to create something else!

Move over Scones…These Easy Blueberry Lemon Drop Biscuits Take the Breakfast Spotlight.

I love blueberry lemon scones, but I have to admit it can be a bit tricky to keep them from getting a bit dry. So when I saw this recipe I was thrilled. In fact I couldn’t wait for breakfast to make these! And the result? Too good to be true!

One of the things that I think has been tough as a mom is keeping our meals interesting. I mean, sure, my teen says he could eat cold cereal ever day, but when I bake something from scratch and they are still warm out of the oven, that is pure happiness on a plate.

And really, who need to wait until breakfast? With a cold glass of milk this makes a great little snack.

This is what Mahy at Two Purple Figs has to say about this drop dead gorgeous recipe.

By all means don’t think I am anti-scones because I really love them! But those for me are a completely different experience, and it’s one closer to a muffin top. It has a nice delicate crust (closer to a scone) and an inside fluffy and tender (closer to a muffin). it’s not too sweet yet still good enough to be eaten on its’ own so glaze is completely optional here! It also happens to be so so easy.

What a win-win!

Make it Egg-citing! Make this the night before!

I am not going to say that I spend my nights dreaming of a breakfast casserole that is as delicious as it is easy, but I DO dream of the days when the busy-ness of life doesn’t crowd out creativity.

This is another great casserole I am planning to put in y recipe file to make for the week. Seriously, if you know that your week is hectic, sometimes it is nice to know that breakfast is almost ready. If you divide this into muffin tins or even small loaf pans, you can freeze them for later.

When I say the recipe for Blueberry Buckle I was surprised! I am not sure about you but the only blueberry buckle I had heard of to this point has to do with little jars of purple baby food.

From the moment I twisted off the lid to that little glass jar I could smell that blueberry cobbler type of smell. A huge improvement over the green beans and squash.

I just bought a container of fresh blueberries and was looking for a few new things to try and this is definitely going on the list.

Basically, it looks like a coffee cake with blueberries in it. Which makes me wonder if I could make this same recipe by using a muffin time. What would be a great way to help with serving size.

I don’t mean to buckle under pressure. Having something that can almost serve itself is a huge benefit. Imagine having a platter of baked goods, yogurts, and fresh fruit all set out for breakfast! Yep.. that is serious mom points.

A buckle is an old-fashioned single layered cake interspersed with berries and with a streusel-type topping that “buckles” as it cools. There is one word for that blueberry buckle: sublime. Not too sweet, perfectly moist, warm and bursting with berries. OK – that was more than one word, but this is a must-try recipe!
