Do You Know Why Real Men Eat Quiche?
I know this is a great recipe because Paula Deen is involved and everything she makes is AH-mazing, but I really try to cut back on calories whenever I can. One way to do that is to add 8 eggs instead of 6 and use 1 cup of half and half. \
Spinach and Bacon Quiche
Ingredients:
- 6 large eggs, beaten
- 1 1/2 cups heavy cream
- Salt and pepper
- 2 cups chopped fresh baby spinach, packed
- 1 pound bacon, cooked and crumbled
- 1 1/2 cups shredded Swiss cheese
- 1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate.
Directions:
- Preheat the oven to 375 degrees F.
- Combine the eggs, cream, salt, and pepper in a food processor or blender.
- Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top.
- Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.
Quick Tip: PIE CRUST RECIPE- if you really want to make a quiche and don’t have a purchased pie crust, don’t let that stop you! Make this and you are good to go.
- 1 1/4 cups all-purpose flour, plus extra for rolling
- 1 stick unsalted butter, very-cold, shredded of cut into small pea sized pieces.
- 1/2 teaspoon salt
- 1/1 teaspoon sugar
- 3 to 4 Tbsp ice water
Mix dry ingredients with the butter, slowly add in cold water, stirring after each one until it forms a ball. Do not over knead.
Wrap in saran wrap and put in fridge for an hour.
Can be doubled for two quiches or for a double crusted pie.
Roll out and put into pie pan.
