Love being able to make something everyone will love for dinner without making a mess? Yeah.. Me Too!

This is kind of crazy, but I have always wanted to take Tap Dance. Several Years ago I Signed up for class, but after I bought the tap shoes, convinced a friend to sign up with me, and made arrangements for my two young ones to be watched for an hour a week, I found out I was pregnant!

My doctor said as long as it wasn’t clogging I was okay to stay in the class, so I did. I tapped until a few weeks before I delivered. Put it this way, I couldn’t see my feet but I could hear them! And that was the end of my tapping.

Eighteen years later, I am signed up again and am having a total blast, but on Tap days it is nice to have something I don’t have to spend a lot of time preparing. And that is when this dish makes an entrance from stage right. (That is a little theater lingo I picked up.)

Anyway, chicken and rice! Who doesn’t love a good chicken and rice casserole sorta dish. But the beauty here is that it’s all made in one skillet, quickly and before you know it dinner is ready to be served.

Who has time to make something for a potluck? This recipe solves your problem.

Here is the thing, we used to attend a small church in the town we lived in for several years. the first Sunday of every month was potluck Sunday. Sounds great right? Wrong! I hated potluck Sunday.

It was a miracle to get everyone up and out the door. Let alone try to get something made to take. One Sunday I was so frustrated decided to skip potluck Sunday altogether!

It just wasn’t worth the stress, hassle, or mess.

There were plenty of Sundays I just opened a huge can of peaches, put them in a glass bowl and sprinkled a little cinnamon on top.

The bowl was always emptied, but I wished I had a better handle on what I could bring.

This recipe is something I could have totally prepared the night before so all I would have had to do it take it with me and put it in the oven. Live and learn!

My Dining Table It the Right Place For This Pasta Dish!

I am very sure that good food is my families “Love Language”. Wehn they walk in the door and are greated with garlic and basil leaves being stirred together is is like a huge hug.
Seriously, this is one of those dished that you make and wonder why you have never thought of it before.
I love that the sauce is so much lighter than a heavy marinara sauce or Alfredo sauce and the sun dried tomatoes are the perfect touch to this Italian inspired dish.

I think we sometimes don’t stop to think about what we have in our pantry or refridge to make dinner. Sometimes we think we have to stop and get one or two things at the store every day. That is so expensive and time consuming, plus I can’t even count how many times I have walked into a store to get milk and come out with several bags of groceries I didn’t even know I needed.

So much of this recipe is from fresh food, so next time you are at the store or farmers market go ahead and pick up a few of these ingredients. You will be glad you did and so will your family.
Because this is a basic recipe you can add in what you want such as diced onions, zucchini, bell peppers and even olives.

What makes this pasta very special is that in addition to fresh tomatoes, basil, garlic, and spinach, I also used sun-dried tomatoes and red pepper flakes to add lots of flavor!

Every House Needs a Good Foundation to Be Built On. Consider This The Foundation of Your Best Pasta Recipes.

This is the first year in a long long time we have not had a small space garden. My husband is the green thumb in our family and with all the family things going on, we just didn’t get one planted in time.

It didn’t seem like a big deal. I was busy as well so not having to remember to water and look for pesky weeds was kind of a relief. BUT, now I am really missing the bounty of tomatoes he used to bring in by the basket full.

I made countless tomato salads and salsa, but after seeing this recipe, I wish I could cook up a huge crock pot and can it for later! How tasty would that be! Fresh from the garden tomato taste in the middle of winter.

Well, even if you don’t have a garden you can head to a local farmers market and pick up a huge sack for this basic sauce. I love that this is a meatless version for all my vegetarian friend, but for us omnivores, I add in cooked Italian sausage! WOWZA!

The Pasta sauce is the base for so many recipes and you can buy a jar of it, but I really like making my own. It is tastier, more budget friendly , and you know exactly what you have put in it.

For moms who make their own babyfood or toddler food , this is great because you can adjust the spices and know your little one is eating something that is healthy for them.

Don’t you hate it when you are asked to bring finger food and you draw a blank. Quickly you run down the list of things you usually take to the party, or gathering and always come up with the same three things.

Veggie dip and a bag of mini carrots, chips and bean dip, or a watermelon. Yeah, I know that is lame, but obviously I am not the only one who gets stumped seeing that we had five people bring sliced watermelon to the last family reunion.

Int eh time it actually takes to cut up a watermelon, and trust me on this, I am pretty darned good at that, you could have these little beefy nuggets in the crock-pot and turned on.

The secret isn’t in the three simple ingredients. It is in the time you give it to soak and saturate in the slow cooker or crock pot depending where you are from.

After 3 hours your family and friends will start forming a line, toothpicks in hand, and offer to see if these meatballs are done. That my friend is when you know you have reached appetizer greatness.

Who came up with the idea to mix chili sauce and grape jelly together and then toss it over some meatballs? I remember these being served at any and every single party I attended growing up.Church gatherings, family potlucks, baby showers…..they’re everywhere!

There is something wonderful that happens when you sink your fork in a flaky biscuit that is swimming in sausage gravy. Heaven on your fork.

Biscuits and Gravy are one of my husband’s favorite food. He orders it almost every time we eat breakfast out. Why? Because it is filling and, if made right, savory. While there are tons of options, he looks over the menu carefully. I always know he will still pick the biscuits and gravy.

Recently we were in Ohio visiting family and met with several of his cousins at Bob Evans. As expected he placed his usual order. The biscuits were so flaky and tall, I didn’t think he was going to eat everything on his plate, then again it did come with two eggs on the side. But he managed.

In fact, John’s birthday is coming up. I better head to the store and get the fixin’s for this breakfast. He will love it and so will your family when you make it for them as well.

The best part is that you can make biscuits from a can, or go ahead and make them from scratch. No judgement here!

 What happened to summer! I mean we should still be buying stuff for S’mores not stuff for backpacks.

I remember that school didn’t start until after the Jerry Lewis telethon.

Now, the school where our kiddo attends is starting in the middle of August! Goodbye summer days, hello weeknight routines!

Part of that routine is having a good meal plan. I need to know what we are having way before the kids ask that dreaded question..”What’s For Dinner?”

The other thing I don’t love during the busy nights of school activities is a huge dinner mess. Planning ahead helps with that as well. This One Pot dinner is one of those bare bones recipes that you can add to. Kind of like a blank canvas!

So go ahead. Plan to make this, but then add in the things your family loves such as olives, hot sausage, corn, you name it.

Help make dinner time a time to reconnect. A time to celebrate the little things, and a time to reflect on what is truly important in our lives.

I am not sure what is more famous. IKEA furniture or their meatballs in creamy sauce?

I remember hearing a few friends talk about stopping in at IKEA’s for lunch. I thought they meant going on their lunch hour, but nope..they really meant lunch. As in .. WE just can’t live without these meatballs!

It must be the smell of Scandinavian furniture that lured them in, but now that they are addicted their freezers are stocked with IKEA entrees like these Swedish Meatballs.

We have never lived near an IKEA’s so I have to say I have not been one of those meatball fanatics, but when I saw that this recipe was a Copy Cat version I decided to give it a try.

I love that you can make a double batch and freeze the uncooked meatballs to cook up later or just put the cooked meatballs in freezer for later. Without the sauce on them , they can also double as spaghetti meatballs!

Nothing beats homemade meatballs smothered in a creamy gravy sauce, and they taste much better than the IKEA version!

I have made the same lasagna recipe since I was old enough to boil noodles. This NO-BOIL option changed everything!

My mom made lasagna a certain way, and I am pretty darned sure she learned how to make it from her mom. It was always delicious, always a hit, and always a big mess.  I used all my big pans and had so much boiling going on. It was totally worth it, don’t get me wrong, but it was a commitment.

Then, my daughter had a group of friends over for a few days and they decided to make dinner. One of her friends, Emarie, took on the task of making a lasagna. When she pulled the ingredients out of her grocery bag I was skeptical. Really skeptical.

After all, that is not how I made the traditional pasta, or my mom. Really, if you are not going through all the work, can it really be authentic? But it was! It was actually BETTER than the recipe my mom passed on. (Nothing personal MOM. Just stating the fact.)

I have made lasagna twice as much after finding this No Fuss recipe and I hope you love it as much as I do.
