Did You Know The Smell of Bread Increases a Person’s Sense of Well Being?

Well it does! I read a study on it not long ago and the aroma of freshly baked bread actually has a positive effect on people. Isn’t that great to know!

The next time I am going to have people over I might have to bake a batch of this just to get the party off to a good start! Can you imagine making these before a boring staff meeting?

Instead of grumbling and complaining about the same things over and over, you might just hear “Yes! That sounds like a good idea!” and “Why didn’t we think of that sooner!” That is when you know it is the bread talking!

I might have to try that our when I ask my kids and husband if they could help clean out the garage! I guess you could say this creative bread recipe is a bit on the knotty side.. but we will just let that be our little secret! I mean who am I to stand in the way of a little bit of doughy happiness and well being!

Who knew zucchini could get so dressed up?

I love adding in zucchini to baked goods and if you have ever had a garden or been friends with someone who has had a garden you know that getting creative with those squash veggies is important  because chances are there will be plenty.

In fact, I know people who lock their car doors when they show up at church during the summer months, not because they are afraid of having something stolen, but for fear that someone will sneak a grocery bag full of zucchini in their back seat.

Yes. It really can be that bad. One time we were gone for a week during the summer and came home to a zucchini so big we had to carve it like a turkey.

Even picky eaters will agree that eating their veggies has never been so great.

Peach Cobbler that is Eazy Breazy? Yes it is!

My Great Grandmother used to make cobblers all the time. I grew up making the biscuit like crust that was pieced together like an old quilt. Carefully the dough was wrapped around fresh fruit. The juices bubbled through the slit on top. Ahh.. Be still my beating heart!

Add a scoop of ice cream to the top of the warm cobbler, fresh from the oven and I am serious, I think I heard angels singing!

Well, this cobbler is a bit different. Instead of a biscuit dough it is more like a thick batter that floats to the top when it is being baked, allowing the juices to really infuse the crust.

Totally worth trying. I mean how can you go wrong with fresh peaches, flour and butter!

You gotta love those classic flavors. Peach Cobbler is about as classic as it gets.

The smell of freshly baked goods creates more than you think.

There is nothing like the smell of fresh bread getting ready to come out of the oven.

In fact, scientists have said that the pleasant aroma can trigger a heightened sense of well being and security.

This is exactly the kinds of recipe they are talking about. The yeast dough that may take longer than simple quick breads such as a biscuit or muffins, but will be remembered long after the last roll is eaten.
The thing required makes this a labor of love. Time.

Thankfully you might have a mixer with a dough hook or even a bread machine with a dough setting, but if not, there is something that feels therapeutic about hand kneading the dough until the consistency is just right, letting it rise and then punching it down and letting it rise again.

And the taste..there is just nothing like it in the world.

I used to make cinnamon rolls about once a month when our kids were young. Usually on a Saturday morning so that on Sunday I could put these out, along with a dish of egg casserole and some fruit.

The perfect breakfast or brunch for a day to rest.

Sometimes I would just roll up cinnamon and sugar, sometimes I would add chopped nuts, dried apricots, and craisins.

It was not uncommon for someone to “Stop by” as they strolled past our house. I would love to think it was because they wanted to chat for a few minutes, but think it most likely had to do with the fact you could smell the cinnamon rolls from the street right as they were getting ready to come out.

Unresistable.

You can create that same memory for your family. One they will never forget from the first bite of this classic, yet timeless pastry.

What are the right ingredients? Well, let’s start with garlic, bell peppers and PINEAPPLE!

I know there are a lot of chicken breast fans but I happen to be partial to boneless skinless thighs. They don’t dry out and are super flavorful.

Having a recipe that can easily be re-heated is awesome as well. Face it, not all meals taste as good the following day, but a recipe like this really allows the flavors to mix together. Hello left-overs!

I love being able to put rice in the rice cooker and know that by the time it is ready, dinner will be ready to serve.

One of my favorite things to get at a local restaurant is their firecracker chicken, seconded by sweet and sour. I started thinking about it, and thought how yummy it would be to make a cross over of sweet and sour and firecracker, and so I came up with Pineapple Firecracker Chicken. It has that heat you expect from firecracker chicken, with the sweetness of sweet and sour.

Quick Tip: If you don’t have frozen pineapple chinks you can use canned pineapple in its own juice or even fresh pineapple!

Another time saving idea is to have the chicken already prepped ahead of time. If you are making something like chicken enchiladas, go ahead and buy more meat, cut it up and put 2 pounds in the freezer. Make sure to mark the bag what you are planning to use it for.

It really should be called Str-ahhh-berry Shortcake.

I am pretty sure I have been eating strawberry shortcake my whole life.

I wouldn’t say I am an official connoisseur, but when your grandmothers from both sides of the family are amazing cooks and they live in Salinas, CA which can practically grow strawberries year round, you tend to develop a taste for a really good shortcake.

My grandparents always had a garden and in the coastal weather, something was always growing. Beans, corn, lemons, onions, artichokes, and strawberries. The garden plot was almost the same square footage as the small house they had built.

They left Kansas during the dust storms with all their belongings to a valley where they hoped to find jobs, a place to set down roots, and build a future for their family.

And they did.

One of the first things my grandparents did was to plant a garden. The shelves were always lined with canned goods, the freezer full of produce, and when we went to their home, we always knew something amazing would be served.

I think my grandmother would have loved this recipe.

I was just talking with someone about what we loved about living in the Midwest.

First of all, being from California, I thought that fireflys were just about the most magical thing I had ever seen. When you saw them in a grassy field on a warm muggy night, it was like watching a party of Pixies bounce along in the sky. Lighting up, then disappearing, like leaving little dash marks.

The other thing we loved about the Midwest was the slower pace of life. Everything was measured in miles, not minutes.It wasn’t 45 minutes to work, it was 20 miles.

I loved the people. We had some of our closest friendships with the people we met while living there. Friendships that, almost 18 years later, are still dear to our hearts.

This is the kind of salad that is easy to have the ingredients on hand so that you can toss something together for impromptu gatherings.

And if you are lucky, you might even spy a few fireflies in the expansive night sky.

This kicked up pasta salad with a zesty Greek yogurt dressing is full of the fixings from taco seasoning to cilantro, cheddar cheese, avocado, black beans, and corn. So easy to mix up ahead of time, too!

Summertime and the pickin’ is easy!

I remember the summer day when we lived in Fergus Falls, MN and my friend Ginger Vennerstrom asked me if I wanted to make fresh from the field strawberry jam.

I had no idea where the best U-Pick patches were, and I had never made jam before, but I decided to give it a whirl and so early one morning, while the dew was still clinging to the green leafy foliage I loaded our kids up in our old Suburban, and we picked up Ginger and her boys and off we went.

The fresh earthy smell greeted us as soon as we stepped onto the edge of the large field. We carried buckets for our luscious treasures, and soon we had picked enough to make jam that would last throughout the year. Everyone’s fingers were stained a red color. Juice, of berries that had been bitten into, were dripped down the front of our shirts.

“No wonder Ginger had told us to wear old clothes,” I thought as I brushed off the dirt from my knees.

Berry picking and jam making were an incredible experience that we carried on for several years until we moved. Ginger..this recipe is for you!
