Hold the Phone..This Salad Is Insanely Easy and A Must Have For Your Next Barbeque

This is a great recipe to make ahead. Just think. You have friends coming over, or you know it has been a long day. You could pick something up at a store. OR you can put something together that is healthy and gentle on the food budget.

Having great recipes helps to make your life more enjoyable because it gives you the opportunity to live in the moment, not in the mad-dash.

SOUTHWEST PASTA SALAD

PASTA SALAD

Ingredients

  • 1 lb. dry pasta, such as elbow, bow tie, or rotini
  • 1 15-oz. can corn kernels
  • 1 15-oz. can black beans
  • 1 c. shredded Cheddar
  • 1 c. halved cherry tomatoes
  • 2 avocados, diced
  • 1/3 c. Chopped cilantro
  • In a large pot of salted boiling water, cook pasta according to package directions until al dente.

Directions:

  1. Drain and and cool, 5 minutes.
  2. Stir corn, black beans, cheese, tomatoes, avocados and cilantro in with pasta.
  3. Toss with dressing.
  4. Cover tightly and refrigerate 1 hour before serving.

DRESSING

Ingredients:

  • 1 c. Greek yogurt
  • 1/3 c. extra-virgin olive oil
  • 1 tbsp. honey
  • 1 tbsp. apple cider vinegar
  • 2 cloves garlic, minced
  • 2 Limes, juiced
  • 1/2 jalapeño, chopped
  • 1 1/2 tbsp. Taco Seasoning
  • kosher salt

Directions:

  1. Whisk all ingredients together.
  2. Taste and add salt as desired.
  3. Pour over salad and stir.

Quick Tip: This dressing is so good, you might want to make up an extra bottle to put on a garden fresh salad. Yum.
