Wondering if You have time for a cup of coffee? When these are hot out of the oven, you will want to make time.

I grew up near a place called Apple Hill. Every fall as a teenager I worked at one of the many orchards serving up all kinds of yummy apple recipes, including caramel apples, apple pie, apple cake, apple doughnuts and apple cider. But, I don’t recall ever serving up apple muffins!

These are super easy and chances are you already have most of the ingredients in your pantry and fridge. Martha Stewart uses a Macintosh apple , but seriously, any baking apple will work fine. If in doubt you can always grab a granny smith apple. In fact these muffins are going to be gone before they are cooled so you might just want to grab two in case you need to make another batch.

One of the things I loved about working in the orchard was seeing how many varieties of apples there were. Each apple was distinct and had various benefits. We had neighbors up in the Sierras who had an apple orchard. It was over 3,200 foot elevation and the Arkansas Blacks could not be picked until after the first hard frost. That was when the sugar set in. Who knew?

They weren’t great for eating because they were hard and super crunchy, plus a bit tart, but they made the best apple butter you have ever tasted.

So pick your apples wisely to get the best flavor in what you are cooking and baking.

Then there are the Pink Lady apples..and Honey Crisp..oh my!

Quick Tip: Feel free to make a double batch of these muffins. When completely cool, wrap in saran wrap and place in freezer bag. Put bag in freezer. When you want to have one or take one with you to school or work, all you have to do is pull one from the bag and go. It will defrost soon enough or just put it in the microwave for 10 seconds.

Having A Ladle Of This Made Me Feel Loved and Cared For.

I had been in Northern California for over a month with our three youngest kids. Our son was given an intern at the small airport where his Civil Air Patrol met and it just worked out for me to pack up the kids and go for the whole summer.

At the end of summer we returned from the small cabin we had rented in the Sierra Mountains back to Southern California. Ii was over eight hours of driving in our very crowded Camry. To simply state that we were tired would be like saying the Olsen Twins are thin.

After we got over the Grapevine we were going to stop at my brother’s home. He was expecting us.

I was looking forward to seeing him and I think all four of us were anxious to get out of the car. But, I totally did not expect to be wrapped in the aroma of what he had simmering on the stove when I walked in the door.

I felt so loved and comforted from my head to my flip-flip wearing toes. “What is that?” I asked hi after a hug.
“Meat and Peas,” He responded. It still needs another hour and then it will be ready.”

So worth waiting for.

Even though this recipe is ridiculously easy, and each one of you probably has their own version of it, it’s all the random flavors that totally make it. Beef, peas, tomatoes, onions… the combination is SO GOOD!

Quick Tip: I actually cook several strips of bacon in the ditch oven until crisp. Remove to paper towel and use drippings to braise the meat in. Right before serving I crumble the bacon and add to top.

Hey, I just got back from my daughter and son-in-law’s home. I call him my bonus boy because I love him just like one of my own! They are expecting their second baby any day now.

Since I live on the other end of the state from them and I might not get to be there as soon as the baby is born I decided to fly up and spend a few days getting meals planned, prepped and in the freezer so my daughter can take it easy until the baby gets here. Well, they do have a two year old so I guess I should say “Take it as easy as possible with a toddler under foot.”

We did quite a bit of food prep and one of the things we did was purchase a rotisserie chicken to make a casserole with. It was awesome to not have to cook that extra ingredient and it was perfect fr what we needed.

I just wish I had this recipe when I went there. I love that you can prep this, put it in a pan, freeze it and bake it weeks after you made it. Now that is a helpful meal right there. Looking in the freezer and realizing you have a few of these kings of meals in your freezer would be like looking in the dryer only to discover that someone left a five dollar bill in their pocket. Actually I like to consider that my tip:~D

So let me give you a tip my cooking friend. Don’t spend so much time making each meal when you can cook extra and freeze half for later, it is such a huge time and money saver and seriously, think about not having to wash all the pans every single night. Woot Woot!

Who knew zucchini could get so dressed up?

I love adding in zucchini to baked goods and if you have ever had a garden or been friends with someone who has had a garden you know that getting creative with those squash veggies is important  because chances are there will be plenty.

In fact, I know people who lock their car doors when they show up at church during the summer months, not because they are afraid of having something stolen, but for fear that someone will sneak a grocery bag full of zucchini in their back seat.

Yes. It really can be that bad. One time we were gone for a week during the summer and came home to a zucchini so big we had to carve it like a turkey.

Even picky eaters will agree that eating their veggies has never been so great.

Hey..It is breakfast somewhere in the world! Am I right or what?

Here is the deal. Our family loves breakfast, but we don’t always have time in the morning. We are usually rushing to get out the door for work or school and end up grabbing something on the go. Being able to actually sit down for a meal is a rare opportunity.

Which is why we decided several years ago to have a “Breakfast for dinner” night.

Being able to make a big pan of this also means something else I love about this casserole. Leftovers! This is so amazing heated up that if there is any left you will want to make sure to put it somewhere in the fridge that your family won’t find it, like in an empty tofu container :~D

It can be made ahead of time and refrigerated or frozen for later. This is a great dish for overnight guests. Mix it up the night before and bake it in the morning. SO easy!

I used to joke that dinner time was the worst hour of the day. Something always happens.

When we had all six kids at home I really had to have a good system to make sure dinner time was not a high “Code Red” stress time. No matter when I started dinner, it seemed that was the kick off to someone dropping something down the toilet, the dog running in with muddy paws, kids crying because someone breathed on them or sat on their side of the couch. One of the things that really saved my sanity was to focus on how I could make the dinner hour something we lived through, seriously, dinner happens every night so it shouldn’t be a shock.

The number one thing I started doing that made a huge difference? Planning ahead.

Chicken Broccoli Rice Casserole is delicious, filling, frugal, and so freezer-friendly! If you freeze the bags flat, you can store them on their side like filing folders to fit a lot in a small freezer.

 Ice Cream That You Can Make In Your Blender Is The Bomb!

I remember the sound of the ice cream freezer as it churned the fresh ingredients. The sound of ice crunching with rock salt to get just the right temperature. It seemed to take forever. Adding more ice. Then salt.

Finally when the churning was done the top would be covered with an old towel or newspapers. The ice cream would need to finish freezing before the paddle was removed and the first scoops could be placed in bowls of those anxious for this timeless summer tradition.
