Get Crackin’ Breakfast is On the Table!

This casserole has everything in it!  All we need to do is add some fresh fruit on the side and pour a glass of orange juice.

And if making a big pan seems like too much for your smaller crowd. Go ahead and put this into two or three loaf pans, depending on if you add in some veggies. This freezes well so now you are set for a few more meals!

TATER TOT SAUSAGE BREAKFAST CASSEROLE

 

Ingredients:

  • 2 lb hot breakfast sausage
  • 1 (30-32 oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 10 eggs
  • 2 cups milk

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large skillet, cook sausage until no longer pink. Drain fat.
  3. In a large bowl, toss together tater tots, cooked sausage and cheeses. Pour into a lightly greased 9×13-inch pan.
  4. Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over tater tot mixture.                    **Cover and refrigerate at this point if baking later.**
  5. Bake uncovered for 50 – 60 minutes, or until eggs are set.

Quick Tip: Try other breakfast meats as well such as diced ham or crumbed bacon. I actually love a curry chicken sausage that a local store carries. Go wild!
