Make An Impression That Is Unforgettable!

I love making desserts, but I tend to get a bit in a rut sometimes. And I absolutely LOVE lemon and blueberries together. Anytime of day!

But when it comes to cakes, I am not always very confident. Sometimes they tend to be dry and we end up having now being able to eat all of it. Sad but true. I know I have mentioned before on Urban Retro Recipes that we are more of a cookie and pie family.

While I was looking for good blueberry and lemon recipes I came across this one. It is for a poke cake. There is no danger of this drying out! It has moisture and flavor seeped into every last bite. In fact, this makes a great cake to make ahead. Perfect for when company, like your mother-in-law, comes to visit and you want everything to be cleaned up before they get there. So you have more time visiting and less time cleaning in the kitchen!

Here is what the cooks at Tip Hero have to say about their recipe.

That’s right— this one’s a poke cake! We’re filling it with pudding, topping it with a homemade blueberry sauce, and then on top of that, we’re adding a delicious cream cheese whipped frosting that just takes it to whole other level.

GO TO THE NEXT PAGE FOR THE INGREDIENTS AND DIRECTIONS.

Quick tip: If you want to use other fruit such as peaches, nectarines, or blackberries  go right ahead! Bake your cake and eat it too :~D

No need to wait for the Girl Scouts to set up their table outside a grocery store or knock on your door.

You can have the wonderful taste of the Samoa Cookies anytime you want with this “to-die-for” recipe.

What a commitment! I mean those little girls in the cute green outfits and decorated sashes are really serious about sales. And we are not talking about cashing in on a few crumbs.

Revenue from the sales of Girl Scout cookies has been around $700 million since 1999.

You go Girl Scouts!  Way to learn some valuable sales skills, as well as make a whole lotta people happy!

People look forward to their cookies all year and for good reason. They are amazingly memorable.

Just like this dessert.

This is what Alyssa of the Recipe Critic has to say about this creative recipe.

A chocolate Oreo crust with creamy cheesecake in the center and topped with coconut caramel and drizzled in chocolate.  All of the things that you love in a Samoa Cookie in a delicious cheesecake dessert!

Peach Cobbler that is Eazy Breazy? Yes it is!

My Great Grandmother used to make cobblers all the time. I grew up making the biscuit like crust that was pieced together like an old quilt. Carefully the dough was wrapped around fresh fruit. The juices bubbled through the slit on top. Ahh.. Be still my beating heart!

Add a scoop of ice cream to the top of the warm cobbler, fresh from the oven and I am serious, I think I heard angels singing!

Well, this cobbler is a bit different. Instead of a biscuit dough it is more like a thick batter that floats to the top when it is being baked, allowing the juices to really infuse the crust.

Totally worth trying. I mean how can you go wrong with fresh peaches, flour and butter!

This is what Center Cut has to say about their recipe.

You gotta love those classic flavors. Peach Cobbler is about as classic as it gets.

Quick Tip: If you want to cut back on the sugar just add half a cup. Some fruit is sweeter than others so not as much is needed.

These perfect little morsels will be the talk of the Party!

I love fruit filled desserts and have always tried to avoid making cheesecakes because they look so intimidating. The no-bake ones are always an option but get real, they don’t have that classic cheesecake texture of taste. Then I saw these little minis. I never knew there were little mini cheesecake pans!
As soon as I saw this recipe I ordered one off Amazon and am so excited to try it out.
In fact, I think the only person in our family to attempt a cheesecake was my husband, John, when he made his mom’s recipe for a cake auction. It was very time intensive and seemed complicated with all the different steps.

In the end, it was wonderful, don’t get me wrong, it was just more than I wanted to commit to.

You can use a muffin pan, but the perfect little cylinders shapes are just too adorable. Since the cakes are so small the whole cheese cake water-bath isn’t necessary. Plus, cheesecakes can be so rich and filling.

For those wanting to cut back on calories, this little indulgence doesn’t really add to much guilt.

Having a granddaughter I am very excited about making these for our tea parties. I know she will absolutely love them, and so will her doll and stuffed animals, I might have to help them eat theirs. Anything I can do to help!

These can also be made with Vanilla Oreos and a regular filling topped with a strawberry or blueberry sauce. Not that I am a huge fan of the Vanilla Oreos. But, for a pie crust that might be a pretty good idea.

This is what Danielle of Live Well, Bake Often has to say about her recipe.

An easy two ingredient Oreo crust topped with a smooth and creamy Oreo cheesecake filling. These Mini Oreo Cheesecakes make a perfect dessert for any time of year!

GO TO THE NEXT PAGE FOR THE INGREDIENTS AND DIRECTIONS.

Quick Tip: Make these the day before and keep in fridge. Because the tops may have a few little cracks in it, pipe on some whipped cream right before serving. Plus, it will look extra cute!

“There are three responses to a piece of design~ yes, no, and WOW. Wow is the one to aim for.” Milton Glaser

One of the things I did when our kids were younger was to get them involved in the kitchen. I would wash their hands, put on their little aprons, and pull stools next to the counter for them to sit on.

It was a time to talk, to share, to teach, and a time when they felt the satisfaction of producing something they felt proud of and shared with others. It isn’t an easy thing because it does take time and energy, but it was worth every second.

One of the benefits is in the math department. When you are doubling a recipe a youngster can see for themselves as they measure out ingredients that 1/2 plus 1/2 does NOT equal 1/4, but rather 1 whole. Measuring out vanilla or salt is also key, 3/4 plus 3/4 is not 6/8. Well, you get the picture, and thankfully so does you little kitchen helper.

As someone who struggled with math growing up, I loved being able to offer a hands-on approach to learning with my kids.

Finding recipes that are easy enough for the youngest of cooking enthusiasts to help with isn’t always easy, but this one is a sure hit.

Here is what Dan at Cakes Cottage has to say about his fun recipe.

Summer is so close and the hot temperatures, are already in full swing where I live, and I have NO desire to crank up my oven. That’s where this No-Bake Summer Berry Icebox Cake comes into play!

Quick Tip: If you don’t have blueberries and strawberries, feel free to swap in another fruit such as banana and raspberries. I love the patriotic feel of this cake, but if you are serving this at a baby or bridal shower it would be easy to stick with a color theme.

Summertime and the pickin’ is easy!

I remember the summer day when we lived in Fergus Falls, MN and my friend Ginger Vennerstrom asked me if I wanted to make fresh from the field strawberry jam.

I had no idea where the best U-Pick patches were, and I had never made jam before, but I decided to give it a whirl and so early one morning, while the dew was still clinging to the green leafy foliage I loaded our kids up in our old Suburban, and we picked up Ginger and her boys and off we went.

The fresh earthy smell greeted us as soon as we stepped onto the edge of the large field. We carried buckets for our luscious treasures, and soon we had picked enough to make jam that would last throughout the year. Everyone’s fingers were stained a red color. Juice, of berries that had been bitten into, were dripped down the front of our shirts.

“No wonder Ginger had told us to wear old clothes,” I thought as I brushed off the dirt from my knees.

Berry picking and jam making were an incredible experience that we carried on for several years until we moved. Ginger..this recipe is for you!

No Bake. No Fuss. No Problem!

One of my favorite things to do as a mom is to cook with my kids. I started letting them help me in the kitchen from the time they could hold a wooden spoon. Finding recipes that are yummy to serve as well as easy enough to have your kids help out isn’t always easy but this one totally works.

Not only are you talking about measurements and teaching your kids to follow directions, you allow them to help serve someone else.

Being able to make something that others appreciate gives kids a real sense of accomplishment. The recipe we usually made involved layering a few ingredients in a pan and baking. This recipe is very similar. Only instead of baking, you just pop this pan in the fridge to set up!

In fact, don’t be surprised if your kids volunteer to bring dessert more often!

The fudge sauce is also great on ice cream so you might want to make an extra batch just to have on hand!

The simple taste of graham crackers, vanilla pudding and chocolate are a sure winner for any occasion or potluck gathering.

USE THE RED NEXT PAGE LINK BELOW FOR THE RECIPE AND INGREDIENTS.

Quick Tip: The ingredients for this recipe is something you can keep on hand. Cool Whip can be frozen and thawed out in the fridge the day before you need to use it OR try this with real whipped cream.

Making This Is As Easy As Riding a Bike!

As a kid, I loved the smell of Pineapple Upside down cake. It reminds me of coming home from school and smelling the simple dessert as soon as I opened the door.

Every time my mom made it I knew that someone special was coming over for dinner. As an adult, I love the fact that Pineapple Upside Down Cake can be served warm, so there isn’t any need to cover the buttery cake with frosting.

Using a muffin tin to bake individual cakes is perfect for creating these little mini cakes.
Since this is such a simple recipe, chances are you might even have these ingredients already in your pantry!

USE THE RED NEXT PAGE LINK BELOW FOR THE INGREDIENTS AND DIRECTIONS.

Quick Tip.

If you don’t have pineapple rings, you can put in a spoonful of pineapple tidbits instead.

Thanks Marci for sharing this recipe.

If this is what a salad looks like all I can say is Bring it on!

Enticing my kids to eat their vegetables is like trying to turn cleaning their room into a game. It only works if you are Mary Poppins!

Packed with vegetables, crisp apples, craisins, and walnuts this is as satisfying to the taste buds as it is pleasing to the eye.

Face it, I haven’t heard very many people say the eat too many vegetables, but with a recipe like this, getting your tribe to eat their greens won’t be too difficult. In fact, they might even ask for a second helping!

Quick Tip: Mix up salad, put in a large Zip-Loc bag, and keep in refrigerator until you are ready to use. Then just pour in dressing, shake and put into a bowl for serving.

An Added Bonus Is That This Dessert Is Gluten Free

Once of my mom’s best friends from high school married a man from Australia and moved to the land of Koala Bears and Kookaburra birds.

I remember it was a big deal every time her family traveled to the states because it was usually several years between visits. I think it was when they were having a get together that we had pavlova for the first time. After that, every time my mom made the melt in your mouth dessert I would think of Wendy and her family.

Serving Pavlova in Australia is what serving pie is in the United States.

It was when they were having a get together with Wendy’s Austrailian family that we had pavlova for the first time. After that, every time my mom made the melt in your mouth dessert I would think of my mom’s friend and the joy they stories they would laugh about when they were together.
