Every time my mom made it I knew that someone special was coming over for dinner. As an adult, I love the fact that Pineapple Upside Down Cake can be served warm, so there isn’t any need to cover the buttery cake with frosting.

Using a muffin tin to bake individual cakes is perfect for creating these little mini cakes.
