Wow, I don’t know about your household routine, but ours can get a bit crazy.

With Breakfast being so important I hate having the kids rush out the door without something that sticks to their ribs. Heck, I hate rushing out the door with an empty stomach!
Sometimes cold cereal just doesn’t hit the sop and cooking up eggs or toast? Yeah, that will leave a mess. So when I saw all the hype about overnight oats I thought, I might just give it a try. I was pretty skeptical, I mean if it isn’t cooked then what will it be like?

I love it!

Seriously! I buy a big container of Greek Yogurt at Costco and make up 6 of these at a time. When you put the mason jar lids on, they keep just fine. The next morning I just grab one, plus a spoon and I am ready to go.I love being able to mix it up with other fruit that is in season as well.
I just picked up a bag of fresh peaches..mmmm now that sounds pretty good.

I love making these in small mason jars, but if you have little ones you might consider a plastic container that is a bit more safe especially if you plan to take this to the early morning soccer or football games. Glass at a park isn’t always allowed. Didn’t I tell you this was an awesome breakfast!

This is what my teen said as he grabbed one of these last Saturday before Football practice.

This strawberry dessert salad is ADDICTING!

I just started cooking for a family and one of the little boys LOVES strawberries. When I saw that this is a super easy recipe that feels like a dessert but is loaded with fresh berries I put it on my list of things to make.
I know he is going to be thrilled and might even request “salad” more often.

As much as I love cooking with the fresh berries, I love that this salad is made with fresh berries AND homemade toffee topping.
How impressive is that?

Can you imagine showing up with a bowl of this at your next function or potluck? All I am saying is that you might want to make a double batch so you can leave a little at home because, take it from me,  there is a very slim chance that this dish won’t be one of the first ones gone.

My plan was a success and everyone loved it so much I actually have made it twice this week! I decided this was too good to keep a secret. If you want to to make everyone’s mouth happy at your next potluck or family gathering, this salad will not disappoint!

I don’t know what it is about blueberries and lemon, but this recipe really does take the CAKE!

Not only is this a fruit filled cake that would be a great edition to any table, this recipe can easily be made into smaller spring form pans..which I love to do!

There is something special about sharing home-baked goodies with others and a small spring form pan of blueberry lemon cake is sure to please anyone you know who could use a little TLC or even a Just Because I am Thinking Of You!

I also read where someone did a recipe and a half and used a bundt cake pan. Now that is creative!

That is the fun part of baking. Taking a recipe and adding your own little touch! In fact I think I have a tart pan I might bake this in and fill with whipped cream. Hello.. I think my oven Mixer is calling!  So many recipes ~ so little time!

Or..just surprise your family with this. They will totally thank you for it!

This Blueberry Lemon Cake is loaded with 1 pound of blueberries and every bite has sweet pops of juicy blueberry and fresh lemon flavor. It’s not too sweet and not too tangy, but just right. This is my favorite tea/ coffee cake and it’s easy, easy, easy!!

If I had a nickel for every cold or reheated pancake I have eaten over the last three decades…I think you get the picture.

Growing up, my dad loved making big pancake breakfasts. It was not unusual for him to stand over the hot griddle making edible pieces of art that looked like Sponge Bob on water skis or a replica of our 1970 Suburban. It was fun, but it was also a mess.

As a mom, yeah, I don’t really have time for that part. It isn’t that I am opposed to pancakes, even though I tend to be more of a waffle girl, it just seems like a lot of work and the person on the end of the spatula is the last to eat since eating them “hot off the griddle” so the butter melts is important.

This recipe isn’t nearly as fun as my dad’s creations, but much more practical since it is something I make for our family.

There is nothing like waking up to the smell of something freshly baked coming out of the oven to rouse sleepy teens and this is perfect if everyone needs to leave the house in a hurry.

This recipe is awesome to reheat and can be kept for several days in the fridge for breakfast the following day or for you Lord of The Rings peeps..Second Breakfast!
To be totally honest we love having a “Breakfast For Dinner” option on our bi-weekly meal plan. Served with hash browns, bacon, and sliced fruit, you can have a wonderful Brinner…which is breakfast and dinner together. Not a real word, but you get the idea.

Here is what the cooks at Celebrating Sweets has to say about this breakfast recipe.

Here’s what’s amazing about this pancake casserole: you essentially make a big batch of buttermilk pancake batter flavored with vanilla and a touch of lemon zest. Rather than using the batter for individual pancakes (and standing at the stove and flipping, flipping, flipping…), the batter gets poured into a casserole dish, topped with blueberries and brown sugar crumble, and BAKED in the oven! Easy peasy. And the end result is wonderful! Breakfast just got 100 times better.

I am usually skeptical of recipes that claim to be copy cat or inspired by favorite eateries..or in this case a familiar sight on most street corners. This recipe really works. The secret is in the science.

Have you even mixed baking soda and vinegar together? My kids used to do it every Easter time when the plastic eggs were plentiful. They would put both ingredients in one half, close the other half tight , shake it up and throw it as high in the air as they could. Then laugh like little fiends as it exploded in midair.

Thankfully this recipe does not involve re-purposing plastic eggs, but the science behind the mid-air explosions does create something magical. Fiendish giggles may or may not be part of the process.

Plus with a recipe that is easy, why not whip up a batch? Who knows, this is just the kind of thing that might inspire your inner science nerd to create something else!

Ina Garten’s Inspired Flag Cake Worth Saluting

There is something about a stars and stripes inspired cake to really set the patriotic mood.

When we lived in Dutch Flat, we loved watching the old fashioned 4th of July parade.  Kids on bikes and go-carts, a bagpipe, lots of old cars, and of course small family decorated floats were cheered by the adoring crowd.

Everyone made two loops around the town that was settled during the gold rush, partially because the parade route was so small but also for tradition sake since the town was founded prior to CA becoming part of the Union. In the towns early years the trip was made one around with the Confederate flag and once with the Union flag.

As a mom of a Marine and an Army mechanic, I have extra love for all things red, white, and blue. This cake is a perfect way to celebrate the freedoms we enjoy.

This is what Cade and Carrian of Oh Sweet Basil have to say about this Flag Cake Recipe.

Now, Ina Garten is one of my foodie heroes for many reasons, but the biggest is that her food always turns out. One of Ina’s most popular recipes is for her Flag Cake. And it’s awesome. But mine might just be better than Ina Garten’s Flag Cake.

When I say the recipe for Blueberry Buckle I was surprised! I am not sure about you but the only blueberry buckle I had heard of to this point has to do with little jars of purple baby food.

From the moment I twisted off the lid to that little glass jar I could smell that blueberry cobbler type of smell. A huge improvement over the green beans and squash.

I just bought a container of fresh blueberries and was looking for a few new things to try and this is definitely going on the list.

Basically, it looks like a coffee cake with blueberries in it. Which makes me wonder if I could make this same recipe by using a muffin time. What would be a great way to help with serving size.

I don’t mean to buckle under pressure. Having something that can almost serve itself is a huge benefit. Imagine having a platter of baked goods, yogurts, and fresh fruit all set out for breakfast! Yep.. that is serious mom points.

A buckle is an old-fashioned single layered cake interspersed with berries and with a streusel-type topping that “buckles” as it cools. There is one word for that blueberry buckle: sublime. Not too sweet, perfectly moist, warm and bursting with berries. OK – that was more than one word, but this is a must-try recipe!

One of the things I did when our kids were younger was to get them involved in the kitchen. I would wash their hands, put on their little aprons, and pull stools next to the counter for them to sit on.

It was a time to talk, to share, to teach, and a time when they felt the satisfaction of producing something they felt proud of and shared with others. It isn’t an easy thing because it does take time and energy, but it was worth every second.

One of the benefits is in the math department. When you are doubling a recipe a youngster can see for themselves as they measure out ingredients that 1/2 plus 1/2 does NOT equal 1/4, but rather 1 whole. Measuring out vanilla or salt is also key, 3/4 plus 3/4 is not 6/8. Well, you get the picture, and thankfully so does you little kitchen helper.

As someone who struggled with math growing up, I loved being able to offer a hands-on approach to learning with my kids.

Finding recipes that are easy enough for the youngest of cooking enthusiasts to help with isn’t always easy, but this one is a sure hit.

When I saw this one for a crumble cake I decided I didn’t need to look any further. The crumble topping cakes are always so yummy and the fact that they don’t require cooling completely to add frosting makes this an easy dessert to toss in the oven right before company comes so the house smells amazing.
