And You Thought They Wouldn’t Eat Their Vegetables!

This is  true confession time. I don’t remember ever really eating fresh green beans as a kid. We usually we had several jars of my grandmother’s canned beans in the pantry. I Loved her canned green beans because she always cooked up a big pan of bacon and put  about 1/3 of a strip of crispy bacon in each jar. They were so delicious I could have eaten a whole jar by myself. But then I wouldn’t have room for homemade apricot cobbler with vanilla icecream!

Well, I am not really ready to can beans anytime soon,  but I still love the taste of bacon with the beans since that was how Grandma Miller fixed hers. This recipe hit its out of the park. It is easy, colorful, and tasty. And because each of the little bundles is wrapped in a neat little strip of bacon you have a handle on portion control!

I think my grandma would have approved!

This is what Holly of Spend With Pennies has to say about her fantastic side dish.

“These start with fresh green beans (washed and trimmed) and they’re cooked for just a few of minutes.  A little trick I learned at culinary boot camp is that adding a little pinch of baking soda to the boiling water keeps the beans a nice bright green rather than that drab boiled green color.”

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip: You can buy pre-cooked bacon to save time if you are a bit pinched for time. Also feel free to try other flavors of bacon such as peppered or maple bacon.

Need to Bring a Stellar Side Dish To The Next Potluck? This Is One That Is Sure To Impress!

Is it just me or is trying to come up with creative ways for my family to add more vegetables a chore. Seriously, I have grilled zucchini, sautéed carrots, and steamed broccoli, but this recipe takes creativity to a whole new level.

The think I love about buying a cauliflower is that they really last a long time in the fridge. Even after they are cut up they are super hearty. You can eat them raw with a dip, or even riced as the base of a dish. Talk about functional!  I love that this dish is actually more along the line of a loaded baked potato. All the familiar flavors of your favorite stuffed spud are in this cheesy casserole that is low in carbs and high in flavor.

The other day I say that the store I was shopping at started carrying multi colored cauliflower. There are shades of green and purples. Talk about a color splash. I think that it exactly the kind of thing kids would love trying. And adding bacon to the top is just flat out brilliant. I know my kids will eat just about anything that has bacon on it and chances are so will your family. So roll up your sleeves, pick up some of this versatile yet understated veggie and make something memorable.

Quick Tip: This recipe makes quite a big dish, so for a smaller crowd, just cut the ingredients in half!

If You Grew Up Eating Campbell’s Mmm-mm-Good Soup, You Will Love This

I was perusing the soup isle at the grocery store the other day because I needed a can of cream of chicken soup. When my eyes landed on the Bean and Bacon soup I just couldn’t get it out of my mind. I loved eating Bean and Bacon soup when I was a kid, it was so creamy and satisfying. I almost picked up a can but when I saw how much it cost for what was sure to be one meal I hesitated. I knew I could make a whole pot of soup for my family and have enough for leftovers if I made it myself, and even though I grew up on the taste of the Campbell’s version I know that anything made fresh tastes so much better and is better for you.

Boy was I right. This soup is really easy to make and is so delicious that I am already looking forward to making it again. There is something about a bowl of this, cupped in your hands, that just warms you to the core. So while the commercial jingle says “Mmm..Mmm..Good.” I am now singing a new tune that states “Ahh Ahh Amazing!”

I love that this uses canned northern beans, but for you die hard Insta-Pot chefs, go ahead and start with dry beans and cook them up first. Talk about stretching your food budget dollars.

This is what Deborah of Taste and Tell has to say about this childhood favorite.

“Skip the can – Filled with veggies and chunks of bacon, it’s the soup that blows that soup of my childhood out of the water. Seriously – this bean and bacon soup was so good – there will be no more cans of soup in my future!”

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip: This is seriously so good you might want to go ahead and make a double batch in your crock pot or Insta-Pot and freeze some for later.

Buttermilk Biscuits to Warm Up you in the Morning

When I saw that Julia, Julia was coming out I could not wait. I absolutely love Nora Ephron and was excited to see how she blended the two stories together. I was not disappointed. As much as I love Nora Ephron who produced such classics like the movie  You’ve Got Mail, I absolutely adore Julia Childs. If you haven’t read My Life In France that Julia wrote with her nephew, run, don’t walk to your nearest bookstore of library and get it.  The book really captured all the things that people love about that great American legend.

Did you know Julia didn’t know how to cook at all when she was first engaged to be married to the love of her life, Paul Childs? She took classes so she would be able to tackle basic homemaking skills. It wasn’t until she became bored with learning how to make hats and play bridge during their time in France that Julia decided to take a culinary class, because the one thing she knew she had a passion for was eating! After enrolling in the class for housewives she decided she need more of a challenge and moved to the next level. I love that about her. She was willing to roll up her sleeves and learn something new. She never gave up. She was passionate and persistent in all that she did and she never forgot the basics. Like this simple recipe for biscuits.

This is what Susie said about the recipe she submitted to the Food Network.

“This is one of the first recipes I made by Julia Child and I still use it often. I like using these for a brunch or stuffed with ham & cheese for breakfast on the go.”

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip: These are perfect for egg breakfast sandwiches, but you can add a little fresh parmesan cheese and serve with potato soup!

Banana Cream Cheese Bread for Breakfast!

I love making small loaves of quick bread. Especially when I have some ripe bananas that need to be used. I have baked a dozens upon dozens of loaves of banana bread from a recipe I got from my sister in law, Barb. Trust me, anything that Barb makes is amazingly awesome. There have been times when I have made 4 loaves at a time because you have to bake these breads for up to an hour and I hate heating up the house for something that is going to be eaten before it is even fully cooled off.

The other day I had a coupon for Michael’s and decided to go ahead and get the mini loaf pan I have had my eyes on. Every time I walk by the baking isle I just can’t get over how adorable the little loaves and so finally I caved and bought it. I was going to bake my usual banana bread recipe but then I saw this! Banana bread with a baked in cream cheese layer? Wowza! My sister in law if going to be shocked when she slices into a loaf of this! And think of how beautiful it will look on a plate of baked goods at your next coffee time with friends.

This is what Averie of Averie Cooks has to say about her yummy recipe.

“The bread is soft, moist and the cream cheese layer is like having a layer of cheesecake baked into banana bread. No complaints here.”

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick tip: Bread will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.

If You Love Tomato Soup, You Are Going To Flip Out When You Taste This

I never knew how much I loved tomato soup until several years ago. My mom used to use the canned soup in recipes but she never made it to serve as a soup. I hadn’t really tried it until I was an adult. I just remember the first time I tried it at my favorite restaurant. It was the Soup of The Day so I figured it couldn’t hurt. But, after only one spoonful I knew I loved it. Seriously! On a chilly day there is nothing like that creamy soup that just warms you up from the inside out. I love adding in a few spoonfuls of my favorite salsa to heat things up a bit more and a small dollop of sour cream on the top to stir in.

I guess I had never thought to make this from scratch, which is hilarious since I make everything from scratch, including marshmallows!  Ree Drummond takes this recipe up a notch by making adorable croutons to float on top. They remind me of a smaller version of what I make for French Onion Soup.  Ree goes the extra mile in so many of the things she does. I hope one day I will have the opportunity to visit her Mercantile Store, because if it is anything like she is I am sure it is down home, practical and very personable.

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip: If you are having a huge crop of tomatoes and are not sure what to do with them, consider lightly rubbing with oil, cutting them in half and placing them cut upside side down on a baking tray to place under broiler until blistered. It is a great roasted tomato taste.

Put These Ingredients In Your Crock Pot And Watch Out!

I grew up eating Pork And Beans that came in a can. My mom would always have a few cans packed when we went camping and I remember her opening the lid and letting the contents fall into a pan, the scooping out the pat of white fat before heating it up. We usually ate the bowl of pork and beans with hot dots cut up in it. Hey, no judgment for the Beans and Weenies staple that graced our picnic table, we were camping remember?

When we moved to Minnesota they dumped cans of pork and beans into a casserole dish, stirred in BBQ sauce and diced onions and baked them.

I love the idea of having a Hawaiian style dish that is based off the familiar dish. Perfect for serving with hamburgers, hot dogs, chicken or whatever else you want to put on the grill.

You could just make this on the stove top but it is even easier to just put everything in the crock pot and let it simmer. So next time you are invited to a tailgate party, a birthday party, or anything in between, go ahead and sign up to bring a side dish that is sure to be a hit. But, just between the two of us, I would definitely leave out the hotdogs!

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick tip: Think about what you would put on a kabob. Add in diced onion and even diced bell pepper.

This Might Just Be The Best New Recipe You Try All Fall

Let’s just be totally honest here. I love American food just as much as anyone else such as hamburgers and French fries, Mac and Cheese, where the cheese just connects your fork to the plate it is so stringy and gooey, and pizza. So when I saw a recipe where all these flavors were mixed together in one skillet I was a bit skeptical. I mean is this like a “Clean out the fridge and see if anyone notices.”  Kind of a recipe?  The answer to that is NO! This literally where you cook everything using only one pan, wave your magic wooden spoon, and smell the magic happen!

I should have known this would be amazing when I saw it had bacon in it. Now the biggest hurdle is to see if my family loves it.

The apples and Brussel sprouts are perfect cooked this way, which is a huge deal for me. I am not the biggest Brussel sprout fan, but my family just could not get enough of this once I put it one the table. In fact, they already asked me to put it on the menu again and want me to make a double batch so we have enough for lunch left-overs.
This is what Erin of Well Plated has to say about this healthy dish.

“With sweet potatoes, apples, Brussels sprouts and bacon, this healthy Paleo chicken skillet is packed with flavor and delivers every food group in one pan!”

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip: This meal stays good for three days in fridge but when reheating you may want to add a bit more chicken broth to keep from drying out.

If You Can Boil Water You Can Make This Classic Dish

Last year we were hosting a couple of teens from Australia for a week. Our son was so excited and we really wanted to make them feel welcome. They had already exchanged information and had been messaging back and forth.

One of the boys loves soccer, our son loved football, and another kid loved skateboarding. There were so many things we learned about each other and each other’s country. The one thing I wanted to know was what to fix them. Did they love breakfast? Toast with Vegemite?

I found out that once of the boy’s favorite food was mac and cheese. He loved it so much, he didn’t care if I fixed it for every single meal and would much rather have the cheesy pasta over any of the desserts I made. So I decided to make several versions and have him pick out which one he loved the best. Every day the boys would do something different. One day they went kayaking, one afternoon they went to a museum, and one day they went to Sea World. Every night they came home to a main course, and over half the time, there was a pan of pasta and cheese on the table. Which one was our Aussie friend’s favorite? They were all so good he couldn’t decide!

This is what one of the boys told my son after they returned home.

“Tell you mum “Hi” and let her know I miss the mac and cheese!”

Quick Tip: Want to add a little spicy heat? Scoop some salsa into the cheese as it is melting.

Do Not Try To Make These Without Learning The Secret Ingredient In This Recipe.

I don’t know about you but if I could pick a food that I have learned to love as an adult I would have to say it would be sweet potatoes.  There is a little bit of a difference between sweet potatoes and tams. I actually thought they were the same thing but they are different plants. I think the sweet potato is a little sweeter and it also has more of a consistency of Yukon gold as far as fibrous texture goes.

As far back as I can remember my mom used to make a sweet potato dish by starting with canned yams. You know the ones. They show up on the end caps at grocery stores around Thanksgiving. Usually there is also tall stack of mini marshmallows right next to them along with brown sugar. Yep, that is the casserole I am talking about and while Thanksgiving might not feel complete without it, kind of like the multi layer Jello Salad recipe that has been around for ages, sometimes a little change is a good thing.

Using fresh ingredients is such a game changer. When I first made recipes that called for sweet potatoes and began cooking with them I had no idea how delicious they really were. When I found out they were good for you, well let’s just say a happy dance might have happened right in my kitchen!

This is what Karina of Café Delights has to say about this yummy recipe.

“Also, I always make these with breadcrumbs. The times I’ve tried these with flour, they come out gooey in the centre. Very, very soft and almost like a cake batter.”

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip; Try making these in a non-stick pan since they are a little fragile when turning.
