In 30 Minutes This One Skillet Meal Will Be ready to Serve

Don’t you just love it when something comes together perfect? That is exactly how I feel about this super yummy meal that can be on the table in 30 minutes. Really? All you have to do is add a salad and maybe sliced French bread and your family will be amazed that you can create food that is as healthy as it is tasty.

The big key to making family dinners memorable is in using fresh ingredients and not relying on powdered mixes to bring out the flavors of your food. One thing I noticed was that the tastier the food was the more time we ended up sitting at the table and savoring it.

Being able to add in spinach was a great way to get some extra greens in our diet as well as add color. The last time I made this was for one of my high school friends who was in town. She wondered if I wanted to meet for dinner but I suggested I make her dinner instead. We talked and laughed for about 4 hours! Something that would have never happened in a busy restaurant and she insisted on getting the recipe before she left.

The Taste Of a Classic, Only In A Soup

I love making and eating soups. I think that on a brisk day nothing beats a big bowl with some fresh breadstick to just warm you up from the inside out. We lived in MN for nine years and believe me, there were lots and lots of soup days.

When we moved back to Northern California we lived in the Sierra Mountains. It was a wonderful feeling to have a big pot of soup or stew on the stove when snowflakes started to fall.  The perfect meal after a day of sledding or shoveling the walkway!

Then we made the move to San Diego area. I have to admit I miss the seasons. Not only is it hard to think of fall or winter when you are still wearing flip flops and short sleeves, we don’t eat soup very often. At least not as often as I would like, but thankfully I hear temperatures are going to be dropping soon. We might even have a few mornings where you will be able to see your breath when you walk outside. If there is a dusting of frost, well down in SoCal they refer to that as a weather event.

Have you ever made tamales from scratch? This is SO Much easier!

A few years ago my daughter and I decided to learn how to make tamales. When I saw that a local eaterie was having a class I decided to sign up us. In fact, I decided to sign up my mom as well. I made us all matching aprons and we took the class together. It was a total blast and the best part was that we were able to take the tamales we made

The other thing I learned after taking the class is that tamale making is hard work! It is very time consuming and I can see why groups of people make them together and create huge bunches.
Even though this isn’t quite the same thing, I love that the flavors remind me of what we created during class. I also love that this can be made in one pan. Actually a skillet, which has perfect for going from the oven straight to the table.

And you know what that means? The less pans there are the less mess it makes. Serious;y this is going to be one of our new go to meals. It might have to cook for 50 minutes but only takes 10 mi minutes to prepare.

Can you really think about eating a nice juicy burger without fries on the side?  Not me!

One of our favorite places to grab a quick bite is In and Out Burger. Our son works there now so we have plenty of reasons to swing in. Ordering a number 3, grilled onions with peppers, protein style hits the spot every single time. I love that everything is fresh and hot. Just like when I make food at home.

Even if I don’t order fries when we stop at our favorite fast food burger place  I still find myself sneaking a few off my husband’s tray. Usually he just goes ahead and order extra fries because he knows that I can not eat just one ..or two..of three.

I have made baked fries a few times and it never seemed as good as I hoped, but this recipe is totally different. This recipe addresses why baked fries tend to get a bit soggy. And really, who wants a soggy fry?

Somethings are just worth the effort! Wait until you stick your fork in this!

There are a few foods that my family could eat every single week. Lasagna and pizza are on the op of the favorite foods list. So seeing those two words together in the same recipe is perfect!

I have been a little hesitant to try this recipe because it looked like more work than I wanted to tackle. But really, it isn’t something too gigantic and if you make this on a Sunday afternoon, you can bake it as soon as you get home from work on Monday.

Since this makes a huge pan, I suggest being prepared for two meals and maybe some lunch leftovers. Gotta
love that!
When you are having a large crowd over it is nice to be able to figure out how many serving you are going to need and this recipe really sets the serving and portion size up with each roll. plus you can have everything ready to just pop those babies in the oven.

Just ask someone to bring the salad, bread, and a side or dessert.

I know not everyone is a pork eater so don’t toss this recipe out because of the pepperoni! After all you can do a meatless option or a chicken meat option.

Either way, the fresh ingredients in this homemade sauce will be a show stopper that will definitely turn heads.

These pizza lasagna rolls are a fun meal that the whole family will love — what’s not to love about pizza and lasagna? With a little planning ahead, they are a great weeknight meal.

Pasta Salad is one of my favorite dishes because you can serve it cold! And it goes with anything you pull off the BBQ!

I adore pasta salad and I think I have made it different almost every time. Why? Because it is the best way to use up extra diced bell peppers or olives that you have in the fridge.
I love that you can serve it as is, or add diced chicken or ham in it.

If you are rushed for time and just realized you don’t have anything planned for dinner, swing into Costco. You can pick up all the ingredients, including my favorite basil pesto, french bread, and even a rotisserie chicken to cut up. Really, this can be a side dish or actually star as the main course.

If you have any left over trust me it will taste even better the following day. The flavors just meld together in a way that makes you want to hum a happy tune while cleaning up.
Since there isn’t any heavy sauce added, this is a great lighter fare.

For Farmer’s Market enthusiasts, this is also a great recipe to think of and if you are super ambitious to feel free to make your own pesto- see recipe below.

In the summer months, I have to admit, I tend to get a little lazy when it comes to side dishes. Really, why not cut up a watermelon and call it good! But every once in a while, the regular dish of baked beans, salad, or melon, might not be the best choice. Sure it is the easiest go-to, but how about trying something new.

This corn dish is savory and has a little heat. Plus you can actually prepare this in advance so all you have to do is toss it in the oven before you need it so it is hot and ready to serve. Seriously, I think people will love this.

If you have fresh corn, well, there you go! A new way to serve it. In fact, I love roasting corn on the BBQ, cutting it off the ear and putting it in the freezer for later use. I roast it right in the husk so it doesn’t dry out and has a bit of a smokey flavor. But, you can also just buy a can of corn and call it good. After all, this is supposed to make your life easier so let’s apron up and get cooking.

Imma had a recipe for creamed corn, but I never have that on hand. Ever. So was happy to see that she also had this version.

I think it is just as easy and actually looks a little better. Plus, I do like the idea of adding in sausage if you would like. Hey, I am all for cleaning out the little odds and ends in the fridge and if it sounds like it could go in this cheesy dish, feel free to add it in.

There are no words that I can use to satisfactory express how tasty this Caribbean Corn Pie is. Seriously! Am going blank on this one. Ok, here is my attempt at it. Spoon after spoon after spoon of Pillowy, Creamy, Corny, Spicy Goodness.

Starting with a great basic recipe means that you can re-create that magic right in your own kitchen. Let me show you how!

We love having breakfast food! Whether it is cornmeal waffles with apple cider sauce, biscuits and gravy,  or a vegetable filled egg frittata.  The problem is that we are usually too busy to enjoy breakfast, so we decided to start having a “Breakfast for Dinner” every other week.

We love it!

A great meal like an Egg Casserole also highlights local produce and takes advantage of whatever is in season. Plus, it is great to be able to go through the fridge and use up what you have such as a quarter bell pepper, spinach, and specialty sausage.

My favorite grocery store sometimes carries Apricot Curry Chicken Sausage that is AWESOME in this dish.

Plus, with only using one pan, this savory meal is an easy clean-up. Sure, you have the cutting board and your favorite knife, but that is about it!

Plus, any leftovers are totally awesome heated up.

This is what Carrie had to say about her farm fresh recipe.

You can easily swap out or leave out any ingredients that you don’t like or add in veggies & meats that do you like. Not a fan of rainbow chard? Add fresh spinach instead. Happen to be vegetarian? Leave out the sausage and add more fresh market veggies.

Make it Egg-citing! Make this the night before!

I am not going to say that I spend my nights dreaming of a breakfast casserole that is as delicious as it is easy, but I DO dream of the days when the busy-ness of life doesn’t crowd out creativity.

This is another great casserole I am planning to put in y recipe file to make for the week. Seriously, if you know that your week is hectic, sometimes it is nice to know that breakfast is almost ready. If you divide this into muffin tins or even small loaf pans, you can freeze them for later.

Especially Sunday mornings, at least for me when our kids were younger. We managed the other days of the week so I am not sure what it is about Sunday, but I found myself so frazzled and frustrated by the time we got to church I could cry. And not the happy cry either.

Someone was always looking for a shoe, taking too long in the shower, spilling something on the floor, and everyone was hungry. There were times when I would finally have everyone ready and I would literally be in my pajamas with the 5 minute countdown” until the Suburban shuttle departed the driveway.

One day I realized I could change the “Sunday madness”. So I made some changes.
I had everyone pick out what they were going to wear, shoes included on Saturday night AND I started making breakfast Saturday evening that I could just pop in the oven in the morning. No mess. No fuss.  I was able to breathe a sigh of relief. Can I get an AMEN to that?

Now, going to church on Sundays might not be your big stress day. For me it was. It could be the early morning travelling soccer games, or just getting to work on time, The thing that really lowered my stress level was learning to plan ahead.

So grab your apron and plan to make a pan of these eggs and maybe even a batch of muffins.

Hearty breakfasts really rock my world! This one is loaded with bacon, sausage, and eggs with potatoes and veggies. It is amazing and stress-free, which is right up my alley. That is one of the many reasons I absolutely love – love – LOVE make ahead breakfasts!

Quick Tip: Next time you bake a ham, go ahead and dice up some to save for later. You can even measure it out so you have 1 1/2 cups in each bag. Then when you want to make this, the meat it ready to go! However.. I think I would still add the bacon :~D
