Picky Eaters in your family?

Sometimes letting your kids pick out the past that they would love to see in the salad helps to encourage them. In fact, it might be a good idea to set some pasta aside in a bowl and have them add the ingredients they would love such as diced olives, chicken, even cheddar cheese squares. Whatever it takes to get those reluctant eaters to eat up!

Pesto Pasta Salad

Ingredients

  • 8 ounces uncooked farfalle noodles, whole wheat or white
    3/4 – 1 cup basil pesto, or store bought
  • 1 cup grape tomatoes, halved
  • 1 cup yellow cherry tomatoes, halved
  • 3 ounces fresh mozzarella cheese, cut into 1/2-inch cubes
  • 1/4 cup fresh grated parmesan cheese
  • OPTIONAL- diced onions, olives, pimento, capers, peas, zucchini, broccoli. Really whatever you have and love put it in!

Directions:

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. Add pasta to a large bowl and stir in pesto.
  3. Add tomatoes and fresh mozzarella cubes and toss to combine.
  4. Top with parmesan cheese.
  5. Garnish with extra sprigs of fresh basil, if desired.
  6. Enjoy!

Quick Tip: Having company? Make this the day before to save you time. If this doesn’t have any meat or egg product you don’t need to be so worried about keeping it chilled during your get-together.
