This Bowl of Soup Will Really  Warm You Up!

I love being able to toss a handful of ingredients in a slow cooker and know that in 5 hours we will have an amazing soup ready to eat. This is the kind of meal I love putting together during the week when it feels like you are running out of time and the last thing you want to do is make a meal and clean up a mess! I mean, sure you will have to deal with the empty cans but I can totally handle that!

Ree Drummond always pulls together the easiest meals that are bursting with flavor! And this is one soup that does not disappoint! Ree knows that having a family dinner together is important and being able to take the frazzled mess out of meal planning is a huge benefit.

I love that this recipe can be made while you are out and about, but in a pinch, you can always make this on the stove top in a Dutch oven and let it simmer for a while. Since this recipe makes 12 servings you can count on having leftovers to take for lunch, or enjoy another meal!

“It’s my favorite kind of slow cooker recipe in that it requires no pre-cooking or sauteing or browning. You literally throw everything in, turn it on, then go live your life until it’s done.”

If You Grew Up Eating Campbell’s Mmm-mm-Good Soup, You Will Love This

I was perusing the soup isle at the grocery store the other day because I needed a can of cream of chicken soup. When my eyes landed on the Bean and Bacon soup I just couldn’t get it out of my mind. I loved eating Bean and Bacon soup when I was a kid, it was so creamy and satisfying. I almost picked up a can but when I saw how much it cost for what was sure to be one meal I hesitated. I knew I could make a whole pot of soup for my family and have enough for leftovers if I made it myself, and even though I grew up on the taste of the Campbell’s version I know that anything made fresh tastes so much better and is better for you.

Boy was I right. This soup is really easy to make and is so delicious that I am already looking forward to making it again. There is something about a bowl of this, cupped in your hands, that just warms you to the core. So while the commercial jingle says “Mmm..Mmm..Good.” I am now singing a new tune that states “Ahh Ahh Amazing!”

I love that this uses canned northern beans, but for you die hard Insta-Pot chefs, go ahead and start with dry beans and cook them up first. Talk about stretching your food budget dollars.

The Best Pasta Dish Hack I Have Seen and Is So Simple!

Do you ever wonder how restaurants like Olive Garden seem to nail it on all their dishes? I do! I often find myself looking at the plate of food before eating it just to see if I could recreate something similar in my own kitchen. I have been close, but there was always something that I wasn’t getting. Until now.

 

I had remembered to add all the ingredients but it still wasn’t the same. When I read this recipe I realized what I was missing.  I needed to know how to cook it. Utilizing the pasta water creates a sauce that clings to the ziti noodles like two lovers at the airport terminal saying goodbye.

Gone are the days of dumping plain pasta into a bowl and spooning over the sauce over it which just slides off into the bottom of the bowl. Why does it matter? Because the starch in the pasta cooking water emulsifies with the fat in the sauce causing it to naturally thicken. Brilliant and so easy to do from now on.

I still love going to Olive Garden once in a while, but it is nice to know that I can create something wonderful for those around my dining table any time I want.

Make This Dinner Just Like An Italian Chef. Bon Apetite!

When I saw that Ree Drummond posted this recipe I had to check it out. I love all her recipes. I think I started following her when she was just getting started and there was just something personal about her life with Marlboro Man and her kids. It made me want to move out to a ranch! Ree started out talking about taking caer of her family and that is exactly what I was doing as well. Her simple yet delicious recipes really helped me add some fabulous meals to our monthly menu.

I love that this recipe calls for tiny little meatballs, so there are plenty throughout this zesty dish. However if you find that is a bit more time consuming than you had anticipated, go ahead and make them a bit bigger, but I will warn you right now, you might as well make a double batch because the meatballs they are going to be such a hit that your family will be diving into the middle of the pasta to find the last one.

This is what Ree has to say about her recipe.

“It’s got miniature meatballs, carbalicious pasta, and big chunks of mozzarella all throughout, and after you bake it in the oven the heavens open up. It’s delicious!”

Would Your Hungry Family Rather Eat Something Out Of A Can Or Sink Their Fork Into This?

Don’t you love a happy ending? I do. I am kind of a sucker for movies that are so predictable you could see it coming. Seriously, who didn’t know that You’ve Got Mail, the character that Tom Hanks played wasn’t totally going to sweep Meg Ryan’s character off her feet. I have probably watched that movie twenty times and I still love the ending. Why? Because it is nice to know that something’s turn out better that we could have hoped for. That is the key to chic-flick books and movies. We need the reassurance that things work out, even if it is a fictional story that ends in the middle Central Park.

Well you are in luck. This recipe will always bring you a happy ending.  I have probably made this as often as I have watched You’ve Got Mail and every time it is perfection.

I think because this recipe, like a good chic-flick, starts out with a real good cast of character that we call ingredients, and puts them in the perfect setting. When you put those two elements you have a match made in Heaven.

Why not make a pan of this creamy, cheesy, chicken and pasta and watch the story unfold. Instead of needing a Kleenex you can use a napkin!

I Just Saw This Recipe In A Food Magazine And Thought I Would Try It Myself!

Want to know a little secret of a super busy mom. True confession time. When I am really not sure what I am fixing for dinner and need to stall a bit while I come up with something. I do this..really! So far it has worked pretty darned well so I am hoping that no one in my family ends up reading this.

I cut up an onion and mince a clove or two of garlic. Put some butter in a small pan and saute them over low heat.

As soon as my family walks in the house they  pause for a huge inhale and say, “Something sure smells great in here!”

“Oh,” I reply, “I am just getting dinner ready!”

Bur the reality is that there have been quite a few times I had absolutely no idea what I was going top make.

This recipe really saves the day. Most of the ingredients I keep in the fridge and in the pantry and guess what? It really does start out with sauteed onion and garlic.

Now, if only dealing with the huge mounds of laundry was this easy to solve. Oh, well at least dinner will be awesome.

If I Had A Nickel For Every-time Someone Asked Me For This Recipe…

There are so many awesome casseroles and one skillet meals out there, but sometimes you really want to eat a nice tender piece of chicken.

This baked chicken is better than a fried version because it is less calories and a lot let mess. Plus, the taste is so memorable that you might be asked to make it every week.

The first time I had something similar to this was when I was staying over at my grandma and Grandpa’s house. I watched my grandma Doris pound out the chicken into thin strips, coat them, and then dredge them through crushed cornflakes. This recipe takes it up a notch as far as flavor. I am sure if she had thought of French fried onions she would have loved that!

Because of the oil, the chicken remains super tender when it is baked. Think of a homemade chicken tender only better!

I have to admit, I love making this chicken so much that I will often make up a double batch so I can cut up the chicken later and put on a tossed green salad for lunch.

I also love that every time I make this family favorite I think of my creative and beautiful Grandmother who taught me how to make this. Now all I need is a side of her potato casserole and this meal is ready!
