Sometimes feeling CRUMMY is a good thing!

When our family lived in Minnesota one of my favorite things to do was load the kids in our old Suburban and go with my friend Ginger and her kids to the U-Pick strawberry patch on the outskirts of our little town.

We tried to pick first thing in the morning before the sun rose very high.

As soon as we had our buckets of sweet strawberries picked and paid for we headed to one of our houses where we would begin making strawberry jam and strawberry desserts. Ginger happened to have a huge rhubarb patch and many of our pies and desserts included a perfect blend of strawberry and rhubarb.

Our kids are now grown but the taste of strawberry and rhubarb always take me back to those wonderful Midwestern summer days. I think Ginger will love this recipe as much as I do.

Quick Tip- This recipe can also be made in individual ramekins and served with a dollop of whipped cream.

Get Ready To Sizzle!

As soon as the days start getting longer and the days are warmer, I find myself drawn to food magazines like a moth to porch lights.

Summer is a time for kicking off your clogs and buying a new pair of flip-flops. Jeans and sweaters are traded for shorts and T-shirts, or sundresses and floppy hats. I am ready to trade in soups and chili for salads and fresh fruit. Basically, I love summer cooking!

The last thing I want to do on a hot summer day is turn on the oven and heat up the house, so I try to grill outside as much as possible.

Quick Tip. Go ahead and buy twice as much chicken and make extra marinade. Put chicken and marinade in a freezer bag and save in freezer until ready to use.

If this is what a salad looks like all I can say is Bring it on!

Enticing my kids to eat their vegetables is like trying to turn cleaning their room into a game. It only works if you are Mary Poppins!

Packed with vegetables, crisp apples, craisins, and walnuts this is as satisfying to the taste buds as it is pleasing to the eye.

Face it, I haven’t heard very many people say the eat too many vegetables, but with a recipe like this, getting your tribe to eat their greens won’t be too difficult. In fact, they might even ask for a second helping!

An Added Bonus Is That This Dessert Is Gluten Free

Once of my mom’s best friends from high school married a man from Australia and moved to the land of Koala Bears and Kookaburra birds.

I remember it was a big deal every time her family traveled to the states because it was usually several years between visits. I think it was when they were having a get together that we had pavlova for the first time. After that, every time my mom made the melt in your mouth dessert I would think of Wendy and her family.

Serving Pavlova in Australia is what serving pie is in the United States.

I am a such a pushover for anything with lemon in it

When our neighbor’s lemon tree start to show bright yellow dots against the green leafy branches I get ready to apron up and try a few new recipes. They have several citrus trees that are full of fruit, but they can’t use all of it and are happy to have me come and pick the tree ripened fruit anytime I want.

When I saw a recipe for Lemon Magic Cake, let me just be honest, my mouth began to water!

What really captured my attention was that this recipe has only once batter that bakes into three separate layers! Super cute, so easy, and you don’t need to spill the beans on how easy this recipe is.

Simply magical.

Don’t Let This Simple Muffin Fool You.

Perfect for those soccer mornings where just getting out of the house with everyone’s gear in hand is worthy of a trophy..or at least a sticker!

Recently I combined two of my favorite muffin recipes and doubled it. I ended up with a huge mountain of muffins, and my family couldn’t be happier. As a mom of 6 very busy and hungry kids, I know what I am talking about when it comes to feeding your family hearty and healthy food.

I put a dozen in each gallon sized zip-lock bags and put most of them in the freezer so I could just take a few out at a time. Because I substituted most of the oil for applesauce, these muffins are moist without being heavy.

 “As much as I love the convenience of buying cardboard trays of muffins from the large discount warehouses. I know it is so much cheaper, and healthier when I make them from scratch.”

Helpful Hint: If you don’t have buttermilk on hand you can make your own! Who knew?  Pour 1 cup of milk into a bowl. Stir in 1 tablespoon of lemon juice or white vinegar. Let stand 5 to 10 minutes. There you go!

The Last Recipe You Will Ever Need.

The first time I made scones, they were heavy and dense. I think I over mixed them. Ok, I am pretty sure I overmixed them! I needed to find a few recipes that were fool proof, one that would have made Jane Austin smile as she sipped her afternoon tea.

Making sure everyone feels welcome, love, and cared for is very important to me. There is nothing like walking into a kitchen to smell the freshly made coffee and something still warm from the oven that says “Come on in.” It totally sets the mood for sitting down and cherishing a moment of unhurried bliss.

You don’t have to run to the bakery or fret over baking something that is like eating a day old biscuit. You can create something that is flavorful and with the fun topping will have people thinking that you slaved in the kitchen for hours. In fact, I keep a bag of frozen blueberries on hand just in case I need to whip something up at the last minute.

Being able to combine lemon and blueberries is just a perfect blend for anything. This scone has it all. In fact, I might just make up a batch, put on a fresh pot of coffee, and invite a few people over this week, who knows we might even talk about Mr. Darcy!
