I am such a push over for anything with bacon in it and so is my family!

My mom made homemade macaroni and cheese the whole time I was growing up and I make basically the same baked version for my family. But adding bacon takes this to a whole new level of YUM! I wouldn’t be surprised if I caught my kids eating this for breakfast because it is so good!

Adding in that this is actually a slow cooker or crock pot recipe makes this even better. I am sure you avid Insta-Pot enthusiasts are already all over this kind of recipe, but for this crock pot rookie, I am still learning the tricks of the trade.

I love that this doesn’t require turning on the oven! I mean who really wants to heat up the house when it is already warm and there are times when being able to keep something warm is perfect.

Think family gathering here, church potluck, baby showers, or just one of those busy evenings when everyone is getting home at different times.

Hopefully you will have left overs because they are wonderful to take in your lunch and heat up in the office.

So plug in and get to cookin’! This is once dish you are not going to want to miss!

If there was an award for the most magical kitchen appliance even invented, the slow cooker would win hands down.

Nothing like being gone all day and having to step into the house wondering what your next play will be. Seriously, sometimes I feel like I need a wipe-off board so I can do a Madden football style huddle. “Ok kids..I am going to run around the laundry and you go out for a long pass…”

I find myself thinking “Dinner? You guys just ATE!” But that is just life. One mess and chaos to the next. Wouldn’t it be nice, for once, walk into the house and have the smell of dinner greet you at the door? Now that is what I am talking about. No, you don’t have to hire someone to come in and cook for you. That is always an option, but not always practical.

With a little bit of prep you can make this dream a reality.This is a great recipe to add in some of your favorite ingredients and who know, maybe even use that left over rice from last night’s dinner!

Because it is cooked in the crock put the mess is pretty minimal. So you can spend less time geting things on the table and more time visiting with those you love around the table! Now That is an All-star Game plan!

This is probably one of the easiest soup recipes you’ll ever make AND it’s delicious. So it’s a win win! This is one that you can throw everything in the crock pot before work and just keep it on the warm setting all day. Once you get home just quickly brown up the ground beef and dinner is done. Quick Tip: Don’t want to have to cook up the ground beef after you get home? Go ahead and buy a big package and cook it up. Divide it into smaller ziplocks and stick in the freezer. This is a basic crock-pot 101 that nails it on flavor and versatility.

I really stink at using the crockpot, or slow cooker, as some of my sisters in the South call the handy-throw-everything-in-and-forget-about-it kitchen appliance.
I am not sure if I had a bad crock-pot experience as a child or what. Nothing that a few batches of cookies therapy won’t cure, but still. I really think it is because the only thing I knew how to make was the pot roast with onion soup mix, potatoes, and carrots. Not bad, but not something you want to eat very often. The potatoes and carrots were yummy, don’t get me wrong, but they were coated with a layer of grease from the meat. I felt like I should serve it with a kale smoothie as a clean-out for my system.

My crock-pot is in the top shelf all the way in the back, right next to the fondue pot. I need a chair to reach it and when I do, I usually have to wash the dust off before I can use it. I have considered several times giving it away but am always hopeful that “One Day I will get the hang of this and when I do it will make my life so much easier!”
Well, I think that day may have arrived!
I just purchased a huge tenderloin cylinder from Costco. The price was 1.99 a pound and it had a $2.50 discount per package at the register. Too good of a deal to pass up.

So, with renewed optimism,  I looked up recipes as soon as I got home. This one looked amazing.

Come One In and Pull Up A Plate!

There is nothing like having a big family and including extra people over to share a meal. There is laughter, several lively conversations, and lots of food. Sometimes my kids would have friends over, and when I started cooking dinner I noticed they would ask if there was anything they could do to help, which was an unspoken code for “That smells so amazing is it possible to stay for dinner?”

My mom had taught me from a young age that there was always room around the dining room table for one or two more. The big question is what can I make that everyone will like and will feed the masses without the huge messes! The key? Have a few great stand-by recipes just like this crowd-pleasing favorite.

You had me at Tater Tots!

Seriously, this casserole is as American as hot dogs and apple pie. Tater Tots, cheese, bacon and sour cream, what more could you want in a dish?

When we lived in the Midwest, this would have been a huge hit in the potluck line! Tater Tots are considered one of the major food essentials. Potlucks were usually loaded with either Jello-O salads or hot dishes that included a layer of these spud morsels.

The only place in town to get Mexican food was at Taco Johns, where they had Tater Tot Oles on the menu. Which is basically tater tots wrapped up in a tortilla with some taco seasoning and maybe catsup. While I think I might pass on that tater tot creation, this one looks too good to not give it a try.

When I Heard How Famous This Meatloaf Was I Thought They Were Kidding!

I was going through several Pinterest sites when I saw the recipe for what looks like the same recipe my mom used to make. She mixed the egg, cracker crumbs, and diced onion together with her clean hands, then sprinkle with the salt, pepper, and onion powder and roll into a big ball. After being placed into a shallow baking dish it was lovingly formed it into a perfect loaf.

Before putting it in the oven, she would cover the top with her ketchup based sauce to help keep the moisture in and add flavor while it cooked. She never needed the recipe because she knew it from heart.

Mom usually made a Jell-O salad and mashed potatoes to go with it. When she sliced it to serve it up, the juices just ran onto the plate. I always love meatloaf as a kid because I knew the next day my mom would pack us meatloaf sandwiches. Even cold, her meatloaf tasted incredible. Yumm-O! As an adult, I am all about the sandwiches! I think that was the part my dad liked the best.

Big, Bold, Flavor, California Style!

When our family moved from California to Minnesota, I was in for a bit of a shock the first time we went to a large potluck, the menu was a bit different from what we ate in California, starting with the vegetables.

Salads could easily range from finely chopped iceberg lettuce to Jell-O with fruit cocktail in it, and a dollop of Cool Whip on top. They thought that a salad could be the main course was a bit foreign. Uff Da!

I am a huge fan of this salad, and this one has it all! In When the weather starts to get a little warm, and the local farmer’s market is full of fresh produce it is time to put away the soup pot. I have to admit, as much as I know having a salad with dinner is a good idea; sometimes I get a little bored with the same veggies tossed together in a bowl.

This is one of my go-to recipes that I never get tired of. Plus, I love the fact that I can cook up a bunch of chicken in the honey mustard glaze and set aside some in a freezer bag so we can enjoy another amazing salad by just popping it in the microwave and putting it over the rest of the garden goodness.
