Can't Resist a Great Meatloaf

Mom usually made a Jell-O salad and mashed potatoes to go with it. When she sliced it to serve it up, the juices just ran onto the plate. I always love meatloaf as a kid because I knew the next day my mom would pack us meatloaf sandwiches. Even cold, her meatloaf tasted incredible.

Yumm-O! As an adult, I am all about the sandwiches!If you want to make small serving all you need to do is use your muffin tin.

Muffin Pan Meat Loaves: Divide meatloaf mixture into 12 balls. Place each ball into a muffin cup. Pour ketchup over top of each. Bake in preheated 350°F oven 25 to 30 minutes or until cooked through. Let stand 5 minutes before serving.

Ingredients

  • 1 pound of lean ground beef (I used organic)
  • 2 eggs
  • 1 cup Panko bread crumbs
  • ½ cup ketchup + extra to top meatloaf
  • 1 small onion, chopped up
  • 1 teaspoon onion powder
  • 1 teaspoon McCormick salt
  • ½ teaspoon pepper

Instructions

    1. Spray/grease slow cooker.
    2. In a large bowl, mix together by hand all ingredients.
    3. Form a loaf from the mixed ingredients and place into slow cooker (the meat should not be touching the sides of the slow cooker).
    4. Top meatloaf with Annie’s Organic Ketchup to your liking (I drizzle it to pretty much coat the top).
    5. Cook on low for 7-8 hours.

*If desired, you can add potatoes and carrots to the slow cooker. Just coat them lightly with olive oil and a bit of salt.

 

Quick Tip: If you want to make small serving all you need to do is use your muffin tin.

You can also bake these in the oven on 350 for about 55-60 minutes
