Surf’s Up DUDE! But thankfully you don’t need to head to the beach to Pick Up a Platter of these!

I had never really heard of fish tacos until I moved to the San Diego area. In fact, I thought someone was kidding the first time they were talking about it.

Soon I realized that not only were a huge deal, but people rated places to eat based on their fish tacos. It was almost like the “Hang Ten” version of the classic kids story The Three Bears. ” This taco is too soft, this taco is too hard. THIS taco is just right!”

So what makes a great fish taco? It is in the cooking of the fish and fresh ingredients. The thin spicy batter helps to seal in the juice.

The fresh bold flavors of the salsa add to the tangy mixture creating what some would call the ultimate Barrel. (That is Surf Lingo for a Great Wave.) Like I would really know from experience since one of my biggest fears is being eaten by a shark. Besides, who is going to stay on the beach and watch our chairs and towels!

Even if you aren’t planning to hit the waves anytime soon, you can still fix these for your luau. A platter of these and toss some fine sand in your hair and it will feel like you just stepped off the beach to one of the little hole in the wall Taco stands.

Quick Tip: If you want to buy pre-made guacamole go ahead. Sometimes it is hard to find avocados that are perfectly ripe when you are having a craving for this meal. No shame in purchasing it.

The first time I heard the word mocktail I thought it was someone making a joke, but the reality is that not everyone wants a drink.

Some of the best flavors combined usually have a shot of something that has the word proof associated with it. Time to re-think, re-package and re-name some of those amazing combos and face it the word smoothie just isn’t very sexy.

And Bartending? It never got easier..especially when you serve this with Strawberry-Lemon Crumble bars, Rice Krispy bars, Chocolate Salted Carmelo bars. I think you get the picture!

So Mocktail  party on! Whether you are pregnant, driving, want a non-alcohol option, or serving something to your kids that is as healthy as it is beautiful, get your party started!

Celebrate the warm days of summer. Sit in the shade and savor a real fruit treat.

 

Some of my favorite memories with are kids involve being together on long summer days. School was out, and being able to sleep in a bit, stay up late enough to watch the stars overhead in hope of wishing on one as it sped across the sky, disappearing before you could even point it out to the person sitting next to you.

We loved our big lawn. Sometimes the neighbor kids would join in a game of football or hide and seek. It was a lot of mowing, but even the smell of freshly mowed grass was savory. And then there was the sprinkler.

The one that sprayed tiny streams into the air, looking more like a curtain than actual water drips. The basic sprinkler would move on simple gears to the setting we had put it on. But, in our minds, it was always trying to tag us with its watery fingers. There were the times where the kids would squeal with delight as they ran and jumped to the other side.

Bathing suits dripping wet, they would sit outside while I ran in to pull popsicles out of the freezer.

While we used to just get the basic juice popsicles, I love that these are made with real fruit.

This is what Martyna of The Wholesome Cook says about her recipe.

Healthier than their ice cream counterparts they are low in fat and have no added sugar. To spice them up a little, I have added some coconut milk and ground cinnamon.

Bring on the Chips Because This Salsa Is The Bomb!

I used to think that mango and salsa didn’t belong in the same sentence let alone as a recipe. The mangos I had eaten were a bit on the slimy side and the thought of dredging a perfectly good tortilla chip through the sweet mash seemed almost criminal.

But, that was before I learned how to pick out a good mango and cut one up. One of the perks of living in Southern California is the abundance of fresh fruit for such a long season.Mangos are a staple at our house.

Two of our kids joined Ballet Folklorico when we moved from Northern California to San Diego. The culture, dance, and food is bright and colorful. Just like this fresh fruit salsa.

This easy recipe is a perfect blend that makes my taste buds feel like are having a fiesta! It is perfect to serve with chips, on fish, and whatever else your heart desires.

Quick Tip:  If you do bring home a mango that’s slightly firmer to the touch, and not quite ready to go — ripening is easy! Just leave the mango out at room temperature, OR, to speed up the process, let the mango ripen (also at room temperature) inside a paper bag.
