Mocktails Anyone? I will have what she is having!

Freezing fruit? One thing I do is dice them up and put into ice-cube trays. You can add a little coconut water if you want but it has enough moisture to make a good cube when frozen.

After the trays of diced up fruit is frozen I dump the fruit cubes into a freezer bag. I can re-use the trays for as long as I need to. When I am ready to make a Mocktail, smoothie, or sauce, all I have to do is take out a few cubes and BAM..the flavor is still fresh.

Strawberry- Mango Tango MockTail

Ingredients

For the mango layer:

  • Heaping 1/2 cup frozen mango chunks
  • 3/4 cup orange juice
  • 3 tablespoons water

For the strawberry layer:

  • Heaping 1/2 cup frozen strawberries
  • 1 cup orange juice, more if needed
  • 1 tablespoon honey or sugar, optional

Directions:

For the mango layer:

  1. Place all of the ingredients in the body of a blender; pulse until smooth, adding a little more orange juice or water to thin, if needed.

For the strawberry layer:

  1. Place all of the ingredients in the body of a blender; pulse until smooth, adding a little more orange juice to thin, if needed.

Assembly:
Fill each glass half way with the mango mix then fill the rest of the glass with the strawberry mix; add straws and serve at once!
Quick Tip: For a creamier smoothie/mocktail, go ahead and swap out yogurt for the orange juice.
