Your family is going to Love smelling this easy to make weeknight dinner when they walk in the door!

My mom used to make this quite a bit when I was growing up. Add a tossed salad and a steamed vegetable and you have a great dinner that is super simple meal. If you have a busy schedule, you know that getting dinner ready is no small task!

I fact I love that this dish can be assembled first thing in the morning or even the night before and ready to put in the oven.  This dish does take an hour and a half, but then it is ready.

Pop it in at 5 and eat at 6:30. No worries. If you have someone coming home earlier than you, just make sure they know to turn the oven on 350 and set the timer once they put this, still covered in foil casserole in the oven.

I have one of those Pampered Chef baking stone pans with the stone wear lid that I love so use whatever you have. In fact, this can also be put into a dutch oven and go straight from the oven to the table when it is done.

Trying to keep meal time as stress-free as possible, especially on a school night is a great goal to have and a simple dinner that doesn’t create mounds of dishes…or take-out boxes, really helps with balancing time and budget.

Nostalgic and delicious. This dish really brings back happy summer memories.

Every summer my dad’s side of the family had a big Family Reunion. It changed locations over the years and us kids, who used to go swimming afterwards all grew up and started having kids of our own. But one thing that has not changed are the long tables of some of the best cooking ever.

Homemade cherry cheesecakes, baked beans, potato salad, and Grandma Miller’s Chicken and homemade noodles.

Not just egg noodles like what you buy in the store, but floured dough noodles that were a labor of love.

She would mix the dough, then roll it out really thin, and eventually make small thin strips that would be dropped into the boiling broth.

It was one of those things that you couldn’t get enough of and knew that family reunion wouldn’t be the same without them.

This recipe is almost the same. Except instead of noodles the dough is cut into squares. So much easier, without compromising on the flavor.

This casserole has everything in it!

Enchilada sauce, chilies, corn, black beans, ground beef..and TATER TOTS?

Full confession, when I saw this recipe I thought maybe I had looked at it wrong, but there it was, tater tots on basically everything I would wrap into a tortilla and smother with cheese. But then I realized it made so much sense because it saved so much time!

I was used to serving tater tots to our kids when they were young with a small dab of catsup to dip them in, but this recipe uses the finger food as an ingredient. Brilliant.

Basically, a tater tot is just a hash brown. The small little potato creations make for a perfect serving because of the line up neatly on top of the casserole.

When we lived in Minnesota, Tater Tots were part of several “hotdishes” that graces the long church potluck tables that also brimmed with an assortment of Jell-O salads. But the contents of the main dish usually involved string beans, sausage, and cream of mushroom soup.

This recipe is a spicy dish that can have extra heat added or be toned down a bit for those with a delicate palate.

And chances are you might even have most of the ingredients in your pantry!

Because you are skipping the tortillas, this is also a great gluten free option. Your company will love that you thought of everything. But knowing how quick and easy this is to put together can be our little secret!

The smell of freshly baked goods creates more than you think.

There is nothing like the smell of fresh bread getting ready to come out of the oven.

This is exactly the kinds of recipe they are talking about. The yeast dough that may take longer than simple quick breads such as a biscuit or muffins, but will be remembered long after the last roll is eaten.
The thing required makes this a labor of love. Time.

Thankfully you might have a mixer with a dough hook or even a bread machine with a dough setting, but if not, there is something that feels therapeutic about hand kneading the dough until the consistency is just right, letting it rise and then punching it down and letting it rise again.

And the taste..there is just nothing like it in the world.

I used to make cinnamon rolls about once a month when our kids were young. Usually on a Saturday morning so that on Sunday I could put these out, along with a dish of egg casserole and some fruit.

The perfect breakfast or brunch for a day to rest.

Sometimes I would just roll up cinnamon and sugar, sometimes I would add chopped nuts, dried apricots, and craisins.

It was not uncommon for someone to “Stop by” as they strolled past our house. I would love to think it was because they wanted to chat for a few minutes, but think it most likely had to do with the fact you could smell the cinnamon rolls from the street right as they were getting ready to come out.

Unresistable.

You can create that same memory for your family. One they will never forget from the first bite of this classic, yet timeless pastry.

I Have Baked A Lot of Bread, But Never One Topped With These Ingredients.

 

I started baking my own bread about 25 years ago. I made several loaves at a time and put some in the freezer. It was a long day of waiting for the dough to rise, punching it down, kneading it, letting it rise again, and then baking. But it was worth it.

I heard once that the smell of freshly baked bread helps to increase your sense of well-being and I totally believe it. My family is used to eating sandwiches made with home-baked bread, homemade pizza crusts, and sweet bread with dried apricots, dried cranberries, and nutmeg.

Several years after I started baking bread the best thing ever was invented. Bread machines! No longer did bread baking take all day, it was just a matter of putting in the ingredients and waking up to the smell of a bakery right in my own kitchen. I still use my bread machine, but knowing a few recipes I can create by hand it nice as well.

Here is what Stacey at Bake. Eat. Repeat had to say about her delicious creation.

Can I just say that this roasted strawberry and feta focaccia with balsamic glaze just might be one of the best things to ever come out of my kitchen?  I don’t think that’s overstating it.  Well, maybe.  I do tend to state that everything is my favorite. But still.  This was incredible.

Quick Tip: If you have a bread machine and are pinched for time, go ahead and make the dough in it, or use your Kitchen Aid to help with the mixing and kneading. If you don’t do the whole thing by hand, there is no judgment here!

A yummy cross between two of our family favorites! This recipe has all the flavor, without all the calories.

I am always trying new muffin recipes that are hearty, healthy, and will help fuel up our family. With this cross recipe, I think I found a winner! Plus, it is a lower calorie version of many of the muffin recipes I have tried.

Being able to replace half the oil with unsweetened applesauce really helps to keep the muffins from being heavy and dense. Because these muffins are full of carrots, apples, and raisins, they are perfect for a quick snack.

My husband, John, works in the construction industry. He often eats breakfast and starts his day long before the sun comes up. Needing a healthy mid-morning snack is something I try to pack in his lunch. Having muffins that pack well are a big hit.

Adding raisins or dried cranberries to a batter is not anything new, but this is the first time I have ever soaked the dried fruit before adding it. I loved how it turned out.

Quick Tip: If you have bananas that are starting to get freckled and are beyond eating. Try mashing up and replacing the applesauce. I am a huge fan of not letting food go to waste and having a plan for when your fruit starts to look like it might be beyond it’s shelf life helps you be “pantry frugal”!

Face it, I haven’t heard very many people say the eat too many vegetables, but with a recipe like this, getting your tribe to eat their greens won’t be too difficult. In fact, they might even ask for a second helping!

Take The STRESS out of Breakfast!

There is nothing like playing “Beat The Clock” every day when you are trying to get kids out the door for school or in the car for early Saturday soccer games.

No matter how hard we try to get up in time to get everything done, there is always that last minute permission slip that needs to be signed, searching for a missing cleat, or waiting on someone who is brushing their teeth.

Sometimes you don’t have time to sit down to eat breakfast because you don’t have time to even sit down!

The thought of sending your kids to school armed with nothing more than a Pop-Tart and a juice box isn’t exactly the breakfast you feel proud to serve every day of the week. However, a blueberry filled Pop Tart every now and again isn’t going to stump your little cherubs growth.

Have no fear! You don’t need to send the family out into the world on an empty stomach; there are some awesome recipes that, can actually be made the night before and quickly zapped in the microwave.

These easy to grab breakfast muffins are packed with egg, spinach, cheese, and a few other veggies! I love cooking up a bunch of sausage or bacon and adding those to the cups as well as sauteed mushrooms and bell peppers. As I mentioned, all of this can be done while you are doing your dinner prep!
