Chicken and Rice..mighty NICE!

My mom used to make this when company was coming over because she could make sure the kitchen was cleaned and table set before guests arrived. Nothing like being able to enjoy guests without having to think of all the cleaning that needs to be done after everyone leaves.

 

CLASSIC CHICKEN AND RICE HOTDISH

INGREDIENTS

  • nonstick cooking spray
  • 2 c. white rice
  • 1 onion, chopped
  • 2 c. chicken broth
  • 2 cans cream of mushroom soup
  • 4 large bone in, skin on chicken thighs
  • 2 tbsp. butter, melted
  • 2 tsp. thyme
  • 1 garlic clove, finely minced
  • 1 tbsp. Chopped parsley, for serving
  • kosher salt
  • Freshly ground black pepper

DIRECTIONS

  1. Preheat your oven to 350. Grease a 9 by 13 baking pan with nonstick cooking spray.
  2. Place rice and onion into baking pan.
  3. Pour in the broth and soup and stir to combine. Season with salt and pepper.
  4. Place chicken thighs in rice.
  5. Brush chicken with butter and sprinkle with thyme and garlic.
  6. Season with salt and pepper as well.
  7. Cover dish with foil and bake for 1 hour.
  8. Uncover and bake for 30 minutes more, until the rice is cooked and the chicken is golden.
  9. Top with parsley and serve.

Quick Tip: Need to take someone a meal? fix this in an aluminum foil pan so they can just Heat..Eat..and Toss.
