I am such a push over for anything with bacon in it and so is my family!

My mom made homemade macaroni and cheese the whole time I was growing up and I make basically the same baked version for my family. But adding bacon takes this to a whole new level of YUM! I wouldn’t be surprised if I caught my kids eating this for breakfast because it is so good!

Adding in that this is actually a slow cooker or crock pot recipe makes this even better. I am sure you avid Insta-Pot enthusiasts are already all over this kind of recipe, but for this crock pot rookie, I am still learning the tricks of the trade.

I love that this doesn’t require turning on the oven! I mean who really wants to heat up the house when it is already warm and there are times when being able to keep something warm is perfect.

Think family gathering here, church potluck, baby showers, or just one of those busy evenings when everyone is getting home at different times.

Hopefully you will have left overs because they are wonderful to take in your lunch and heat up in the office.

So plug in and get to cookin’! This is once dish you are not going to want to miss!

Dinner is a Snap When You Use Your Crock Pot!

Busy night? If you are like most families, just being able to sit down at the table is a huge task, trying to get something made and on the table is close to impossible. Sometimes we are too tired to think about dinner. Or the mess. We just need to have it ready for us and with this recipe it can.
Literally this gets made up and put on for 3 to 4 hours and it is hot and ready.

You can actually go ahead and load up your crock-pot the night before so in the morning all you have to do is turn it on.

I am thinking this would be a great lunch for a Sunday afternoon, or top take to a potluck. And served with a salad and crusty Sourdough bread I can’t imagine anything better.

I know it seems like a lot of food in this recipe so feel free to cut it in half if you need to, or plan to take a serving to someone who could use a little TLC.

Heaven knows I need it every once in a while and others do as well. the other day I took a small meal to someone whose husband had been sick. She was so grateful and it was really not a bother at all. A little tater tot love can go a long way that’s for sure.

At the end of a toothpick these are a tiny taste of Heaven (insert sigh here).

Don’t you hate it when you are asked to bring finger food and you draw a blank. Quickly you run down the list of things you usually take to the party, or gathering and always come up with the same three things.

Veggie dip and a bag of mini carrots, chips and bean dip, or a watermelon. Yeah, I know that is lame, but obviously I am not the only one who gets stumped seeing that we had five people bring sliced watermelon to the last family reunion.

Int eh time it actually takes to cut up a watermelon, and trust me on this, I am pretty darned good at that, you could have these little beefy nuggets in the crock-pot and turned on.

The secret isn’t in the three simple ingredients. It is in the time you give it to soak and saturate in the slow cooker or crock pot depending where you are from.

After 3 hours your family and friends will start forming a line, toothpicks in hand, and offer to see if these meatballs are done. That my friend is when you know you have reached appetizer greatness.

Who came up with the idea to mix chili sauce and grape jelly together and then toss it over some meatballs? I remember these being served at any and every single party I attended growing up.Church gatherings, family potlucks, baby showers…..they’re everywhere!

If there was an award for the most magical kitchen appliance even invented, the slow cooker would win hands down.

Nothing like being gone all day and having to step into the house wondering what your next play will be. Seriously, sometimes I feel like I need a wipe-off board so I can do a Madden football style huddle. “Ok kids..I am going to run around the laundry and you go out for a long pass…”

I find myself thinking “Dinner? You guys just ATE!” But that is just life. One mess and chaos to the next. Wouldn’t it be nice, for once, walk into the house and have the smell of dinner greet you at the door? Now that is what I am talking about. No, you don’t have to hire someone to come in and cook for you. That is always an option, but not always practical.

With a little bit of prep you can make this dream a reality.This is a great recipe to add in some of your favorite ingredients and who know, maybe even use that left over rice from last night’s dinner!

Because it is cooked in the crock put the mess is pretty minimal. So you can spend less time geting things on the table and more time visiting with those you love around the table! Now That is an All-star Game plan!

Quick Tip: Don’t want to have to cook up the ground beef after you get home? Go ahead and buy a big package and cook it up. Divide it into smaller ziplocks and stick in the freezer. Who doesn’t love a great taco? But, heating up the house by turning on the oven during the hot summer months? Yeah, not so much.

It is great that this recipe can be made on the stove or better yet, in a crock pot!

We just went to a huge family reunion with dozens of cousins and I wished I had found this recipe earlier. It would have been so simple to put the chicken in and let people build their own tacos, burritos, or even just a really yummy salad.

Seriously, if you have all the ingredients out, let guests make up their own plate with their favorite ingredients, and it can be ready to put out as soon as you are ready to eat so no big fuss around meal time!

It is hard to feed a crowd and with recipes that are super functional like this one you are sure to please everyone. In fact, if you have left over chicken, save it and make a pan of chicken enchiladas later!

This recipe calls for chicken breast, but if you are partial to boneless skinless thighs go ahead and use them as well.

This Side Dish Dresses Up Any Picnic!

I just checked to make sure our gas grill is ready to fire up. The taste of grilled chicken, crusty french bread and a cold side make eating outside extra awesome. Especially when you don’t have to spend a ton of time cooking in the kitchen.

This recipe originally called for frozen spinach but I love being able to toss some fresh spinach into anything for an added wholesome touch.

Being a busy family on the go means having to either have great recipes or having to buy prepackaged foods to take to picnics and get-togethers.

Thankfully, this recipe calls for everything I usually have on hand and is super easy to make the day before. I just put this into a large zip-lock bag to save on space and when it is time to serve, just pull it out of my ice chest or fridge, put into a bowl, add a small handful of extra Parmesan cheese on top and BAM..we are ready to dish up!

Come One In and Pull Up A Plate!

There is nothing like having a big family and including extra people over to share a meal. There is laughter, several lively conversations, and lots of food. Sometimes my kids would have friends over, and when I started cooking dinner I noticed they would ask if there was anything they could do to help, which was an unspoken code for “That smells so amazing is it possible to stay for dinner?”

My mom had taught me from a young age that there was always room around the dining room table for one or two more. When our neighbor’s lemon tree start to show bright yellow dots against the green leafy branches I get ready to apron up and try a few new recipes. They have several citrus trees that are full of fruit, but they can’t use all of it and are happy to have me come and pick the tree ripened fruit anytime I want.

When I saw a recipe for Lemon Magic Cake, let me just be honest, my mouth began to water!

What really captured my attention was that this recipe has only once batter that bakes into three separate layers! Super cute, so easy, and you don’t need to spill the beans on how easy this recipe is.

Simply magical.

If You Can Use a Can Opener, You Can Make This Hearty Meal!

I admit I haven’t been very good at using my crockpot, until now! I think the biggest obstacle for me was finding recipes that our whole family would like.

I tried making lasagne and other recipes that flopped until my kids asked me to PLEASE stop trying to use the crockpot. So I set it on the back shelf or the pantry, right next to the panini press and forgot about it.

When I came across this recipe and decided to give crockpot cooking another try. So glad I did, and you will be too!

Nothing beats coming home to a hot bowl of homemade chili! And the fact that I can put everything in the crockpot, turn it on and come back 6 hours later to a fabulous meal makes kitchen clean-up a snap.

Since it is made with chicken and chicken broth I can already tell this will be a lighter version of the beef and heavy tomato base chili. Who knows, with a few good recipes, I might just try my hand at crock pot cooking more often!
