Get the Dish on This Multitasking Pasta Salad

When our kids were involved in weekend sports it seemed like we were always on the run. Having something on hand was a huge time and stress saver. Plus, since this has a great combination of carbs and vegetables it was a great pick me up between games. Score!

Kristyn says this about her yummy salad.

I’m all about simple these days and this recipe is just that! Being simple, doesn’t have to mean simple taste though. This Spinach and Tortellini Salad has few ingredients but is bursting with yummy flavor.

Spinach and Tortellini Salad
Ingredients

  • 1 – 9-ounce package cheese-filled tortellini-
  • 1 cup chopped fresh spinach
  • ⅓ cup grated Kraft Parmesan cheese
  • 2 cups cherry tomatoes, halved
  • 1 – 2 ounce can sliced black olives
  • 1 – 8-ounce bottle Greek salad dressing

Instructions

  1. Cook tortellini pasta according to package directions.
  2. Rinse under cold water and drain.
  3. In a large bowl, combine the tortellini, spinach, cheese, tomatoes and olives. Toss with Greek dressing and season with salt and pepper.

ENJOY!

Did I tell you it was simple or what? I think the hardest part is boiling water for the tortellini.

Quick Tip: Buy a big bag of tortellini the next time you go to Costco so you have plenty of pasta for several meals!
