This recipe is like the best of the best fair food all in once place..yours!

There is a whole lot going on with the flavors in this recipe. Who can resist the flavor and textures of a corn dog. Have you ever had a craving for some of the good old fashioned fair food?

I grew up involved in 4-H so we were at the fair every summer, showing our sheep. Plus we had other things in the fair but the thing I really loved was the food. So much to choose from.

I could never decide which food was my ultimate favorite. Now that I think about it I am pretty sure it was the freshly dipped corn dogs that the Lions Club used to make at their booth.

While it has been a while since I have been to a county fair, you can make these little nuggets right at home. Now that is a prize winning idea!

Nicole of The Salty Marshmallow had this to say about her classic recipe.

Does it get any more classic than a hot dog loaded up with warm chili and melty cheese? I think not. Pretty sure my kids could live off of the things.

Why or why are most of my favorite foods heavy on the calorie side? It is just the way life goes sometimes, but this recipe is rich and flavorful. I am definitely going to add this to my Mexican Dinner night!

Even if calories aren’t a concern for you..well first of all congratulations.. but it is great to have a few recipes that you can serve up to guests or take to a potluck. Not only does this highlight chicken instead of beef, being able to replace the flour tortillas with corn tortillas also is a big bonus.
In fact, I am wondering why I didn’t think of this sooner!

I know I am always talking about cooking ahead, but it just makes my week go so much smoother. When we had all six kids at home I used to dread the dinner hour because I was always running someone to or from someplace or helping with homework. Being able to just put something in the oven was a life saver. Having food prepped ahead sometimes made the difference between having a hot meal, or pouring a bowl of cold cereal. Yes, that did occasionally happen.

So plan ahead to make this yummy south-of-the-border dish and pick up a big tray of chicken! Cook it all up and put an extra pan of this in your freezer with cooking instructions on top.
Wehn you know you are going to have a full day, just pull this out the night before and defrost in the fridge.

This Easy recipe has all the flavor without all the fat!

The thought of heating up a deep pan of oil and cooking food in it is a bit daunting for a few reasons.

1) I am always looking for ways to cut back on calories.

2.) It is messy. Really Messy! I might be doing something wrong but I seem to spend as much time cleaning up after dinner as I did fixing and eating dinner. No thanks. and finally

3.) I never know what to do with the oil afterwards. Since I rarely ever deep fry anything so it just sits in a mason jar in my cupboard until I eventually toss it out.

But being able to bake these finger foods is great! You can make a whole tray all at the same time and the crispy outside will be close enough to the greasy counterpart that your family really won’t mind. They are like mini burritos! And for big kids, they can eat as many as they want because what is inside is a great alternative to junk food.
Set a bowl of salsa next to these and you might even get a “Mom of The Day” sticker! Can I get a Woot Woot!

If You Can Use a Can Opener, You Can Make This Hearty Meal!

I admit I haven’t been very good at using my crockpot, until now! I think the biggest obstacle for me was finding recipes that our whole family would like.

I tried making lasagne and other recipes that flopped until my kids asked me to PLEASE stop trying to use the crockpot. So I set it on the back shelf or the pantry, right next to the panini press and forgot about it.

When I came across this recipe and decided to give crockpot cooking another try. So glad I did, and you will be too!

Nothing beats coming home to a hot bowl of homemade chili! And the fact that I can put everything in the crockpot, turn it on and come back 6 hours later to a fabulous meal makes kitchen clean-up a snap.

Since it is made with chicken and chicken broth I can already tell this will be a lighter version of the beef and heavy tomato base chili. Who knows, with a few good recipes, I might just try my hand at crock pot cooking more often!
