Baked..Not Fried! Try these Southwestern Spring Rolls Tonight and Watch Them Disappear!

I love making these with our kids. I try to have all the food prepped and in separate bowls, then have as many “egg rollers” as possible. It is a great way to teach them how to create something and be able to enjoy something that they helped make.

Baked Southwestern Egg Rolls

YIELD: ABOUT 15 EGG ROLLS

  • 1 pound ground chicken or lean beef
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (15-oz.) can black beans, rinsed and drained
  • 1 cup corn kernels (if frozen, thawed)
  • 1/2 cup shredded Mexican blend cheese
  • 12 square (7-inch) egg roll wrappers
  • Olive oil or cooking spray, for coating
  •  OPTIONAL -Guacamole or salsa, for serving

DIRECTIONS

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or silicon liner.
  2. Thoroughly cook ground chicken or beef in a medium nonstick pan over medium-low heat. Crumble.
  3. Add the garlic powder, ground cumin, chili powder, salt and pepper and cook, stirring, until combined.
  4. Transfer meat mixture to large bowl.
  5. Stir in the black beans, corn and cheese.
  6. Arrange the egg roll wrappers on a dry work surface so that the corner of each wrapper is closest to you. Add a small amount of water to a dish.
  7. Place 1/3 cup of the chicken mixture in the lower third of each wrapper then beginning at the bottom, roll the wrapper up and fold the edges inward.
  8. Before your final fold, wet your finger with the water and apply to the edges.
  9. Roll the wrapper shut, pressing lightly to seal the edges together.
  10. Arrange the egg rolls, seam side down, on the baking sheet then brush them lightly with olive oil or coat them with cooking spray.
  11. Bake the egg rolls for about 15 minutes or until they’re golden brown and slightly crisped.
  12. Remove the egg rolls from the oven and serve them with guacamole or salsa for dipping.

Quick Tip: If you have worked with Egg Roll Wrappers before then you know the drill. If not, don’t panic. It is really easy and there is a a diagram on the package of the wrappers. I have had my kids help me since they were young. It really is that easy.
