A total FIESTA of FLavors without all the calories!!

Wow. Where did the summer go?

I really thought I would get so much done over the summer break, but now that school is getting ready to start back up and all the sport schedules are posted on the fridge I know i am going to have to kick it into gear as far as dinner planning goes.

I try to have my meals planned out at least two weks in advance. It just saves me so much work and let’s face it, if you are going to be chopping onions and mincing garlic, you might as well do it all at once and get the clean-up done. Am I right? YES! So apron up and get to cooking.

Weight Watchers Chicken Enchilada Bake

Ingredients

  • 19 ounce can of enchilada sauce
  • 9 extra thin yellow corn tortillas
  • 16 ounce can fat free refried beans
  • 1 packet of taco seasoning (or equivalent of homemade taco seasoning)
  • 1.5 pounds boneless, skinless chicken breasts chopped into small pieces
  • 1 cup black beans drained and rinsed
  • 1 can diced tomatoes and green chilies, drained
  • 1 cup shredded mexican blend cheese

Directions

  1. Preheat oven to 350 degrees F.
  2. Spray a 9 x 13 baking dish with non-stick cooking spray.
    Pour a 1/3 cup of the enchilada sauce into the bottom of the pan and spread around.
  3. Arrange 4.5 tortillas across the bottom of the pan to cover it as best as possible.. OR cut them into strips and create a layer..which I think is a bit easier.
  4. In a bowl mix the refried beans and the taco seasoning together.
  5. Spread this mixture in an even layer on top of the corn tortillas.
  6. Using the same bowl mix cooked chicken, black beans, tomatoes/chilies and remaining enchilada sauce together.
  7. Spoon half of this mixture on top of the refried bean layer.
  8. Place the remaining 4.5 corn tortillas on top of the layers.
  9. Put the remaining chicken mixture on top of the corn tortillas and spread evenly.
  10. Sprinkle the cheese over the top.
  11. Bake for about 30 minutes.Divide this casserole into 8 servings and each one will be 7 Weight Watchers SmartPoints.

OPTIONAL- Add lettuce, fresh tomatoes,  jalapenos and salsa to the top if you want!

Quick tip: This is a great option for those with gluten restrictions.
