Every Day Should be Fajita Day!

I can’t believe I almost missed it! National Fajita Day is every August 18th but seriously, at our house we could eat that sizzling multi functional meal several times a week!
I love being able to tuck the hot onions, bell peppers and marinated chicken or beef into a tortilla of putting the fajita filling right onto a bed of crisp lettuce.

In fact, I have been known to cut up left over fajita filling and toss it in scrambled eggs for a breakfast burrito. You just can’t go wrong when you start out with fresh ingredients. With Red, yellow, orange, and green peppers, this dish is just as pretty as it is tasty!

Have you been to a Mexican restaurant where they bring the fajitas out in a hot skillet? You can hear the popping and smell the sizzling aroma before they even put it in the center of the table. It is just so good that you can’t stop eating it.

Make this ahead for your Nacho or Salad bar lunch or dinner. You might be surprised what a hit it is, and with minimal clean up you can spend more time dancing the Flamenco and less time doing dishes! So get your sizzle on.

This day only happens once a year.. but if you make it all through the rest of the year, well let’s just say Viva La Fajita!

The first time I made these beef fajitas, my family couldn’t get enough. The next time I had to make a double batch so everyone had enough. This is a favorite evening meal for me because it fixes up quick. It would be a good one for entertaining, too—the avocados add a nice dash of color. —

Make This and Your Family Will Make Sure they are Home For Dinner!

The other day I picked up our teen from work. When he got in the car he asked what we were having for dinner. When I told him I already had the Creamy Salsa Verde Chicken hot and ready to put on the table I seriously could hear him give an audible sigh.

Food is a serious Love LAnguage in our house and this recipe has LOVE written all over it.

I recently heard a report that talked about drug abuse and teens. It stated the top Thre things parents can do to help their kids make wise choices. In that top three was..you might have already guessed it. Eating dinner together as a family. Yep, that was one of the things cited for helping your kids through the adolescent years.

When you family comes in the door and smells something yummy and homemade they feel loved and cared for and you can feel good about knowing the ingredients.

Since this is made with cream cheese versus sour cream you can freeze this without having any issues. ( Sour cream doesn’t freeze too well). Go ahead and make this up and freeze half for later.

These Salsa Verde Chicken Enchiladas are made with a creamy and delicious filling, and smothered with cheese. They will kick any Mexican food craving!

Who doesn’t love a great taco? But, heating up the house by turning on the oven during the hot summer months? Yeah, not so much.

It is great that this recipe can be made on the stove or better yet, in a crock pot!

We just went to a huge family reunion with dozens of cousins and I wished I had found this recipe earlier. It would have been so simple to put the chicken in and let people build their own tacos, burritos, or even just a really yummy salad.

Seriously, if you have all the ingredients out, let guests make up their own plate with their favorite ingredients, and it can be ready to put out as soon as you are ready to eat so no big fuss around meal time!

It is hard to feed a crowd and with recipes that are super functional like this one you are sure to please everyone. In fact, if you have left over chicken, save it and make a pan of chicken enchiladas later!

This recipe calls for chicken breast, but if you are partial to boneless skinless thighs go ahead and use them as well.

So Tasty You Will Be Asked To Make A Bowl of This Every time You Get Together With Friends.

I was just talking with someone about what we loved about living in the Midwest.

First of all, being from California, I thought that fireflys were just about the most magical thing I had ever seen. When you saw them in a grassy field on a warm muggy night, it was like watching a party of Pixies bounce along in the sky. Lighting up, then disappearing, like leaving little dash marks.

The other thing we loved about the Midwest was the slower pace of life. Everything was measured in miles, not minutes.It wasn’t 45 minutes to work, it was 20 miles.

I loved the people. We had some of our closest friendships with the people we met while living there. Friendships that, almost 18 years later, are still dear to our hearts.

This is the kind of salad that is easy to have the ingredients on hand so that you can toss something together for impromptu gatherings.

And if you are lucky, you might even spy a few fireflies in the expansive night sky.

This is what Sally McKenney says of her salad recipe.

This kicked up pasta salad with a zesty Greek yogurt dressing is full of the fixings from taco seasoning to cilantro, cheddar cheese, avocado, black beans, and corn. So easy to mix up ahead of time, too!

I just ran the numbers! And this packed with flavor meal is only 10 points for Weight Watchers!

 

I can’t do it anymore! I have a whole stack of clothes that I love but are just too tight. I have to make a decision, just pack them up and donate them to the local thrift store, or seriously lose the weight.

Right now they are just collecting dust and I keep thinking “One Day..”. I know that if I don’t take action in getting this 20 – 25 pounds of extra weight off, it isn’t going to just melt off by itself.

I have always struggled with my weight and it does make me feel self-conscious. Now that we are starting to welcome little grandbabies to our family I don’t want to be the one to always hides behind the camera. I want to be in the photo!

So I made the decision to join Weight Watchers. Paid for 3 months to get the ball rolling and went to my first weigh-in.

I was afraid I would have to give up some of my favorites, and it is true, I will have to re-think what I eat. Instead of a huge serving, I might only be able to have a small slice. But, nothing is off the menu with Weight Watchers Smart Points. Whew! It is not a diet, but rather a shift in eating habits.

I took one of my favorite recipes and ran it through the recipe builder to see how many points is was. I even added extra chicken. I was afraid to hit calculate but when I did I was doing the happy dance. 12 points!

This is what Karina says about her flavor packed one bowl salad.

HONEY MUSTARD CHICKEN, AVOCADO + BACON SALAD, WITH A CRAZY GOOD 5 INGREDIENT DRESSING THAT DOUBLES AS A MARINADE!

Quick Tip: If you are planning to make this salad to take for lunches. Go ahead and cook up all the chicken. Get out 4 wide mouth pint sized mason jars or airtight containers and layer your salad, starting with dressing on the bottom, then chicken, lettuce, tomato, corn, and so on. Put the bacon in a little sandwich bag so it stays crisp and also do the same with the avocado. When you are ready to eat, just dump the salad onto a plate or bowl. the chicken and dressing will then be on the top. BRILLIANT!
