My husband loves to have a small space garden. He plants tomatoes and plenty of bell peppers. Being able to use his peppers in this dish is great because they have such a great flavor!  Being able to use the tomatoes to make the salsa..well I guess you could say that is the icing on the cake for me.

FANTASTIC BEEF FAJITAS

INGREDIENTS

  • 1 pound beef top sirloin steak or flank steak, trimmed and cut against the grain into 1/4-inch strips

MARINADE:

  • 3 tablespoons canola oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

FAJITAS:

  • 1/2 medium onion, sliced
  • 1 medium sweet red pepper, sliced into thin strips
  • 2 tablespoons canola oil, divided
  • 8 flour tortilla shells, warmed
  • 2 avocados, peeled and sliced
  • Salsa
  • Sour cream

DIRECTIONS:

  1. In a large resealable bag, combine marinade ingredients; add beef.
  2. Seal and refrigerate for 3-6 hours or overnight, turning several times.
  3. Discard marinade. In a skillet, saute onion and pepper in 1 tablespoon oil until crisp tender; remove from pan.
  4. Add remaining oil and saute meat until no longer pink, about 4 minutes.
  5. Add vegetables to pan and heat through.
  6. To serve, place a spoonful of meat/vegetable mixture on a warmed tortilla and top with avocado, salsa and sour cream.
  7. Roll tortilla around filling.
  8. Yield: 4-6 servings.

Quick Tip: Go ahead and marinate your beef the night before..if you end up making a huge amount of this for a big gathering, go ahead and buy your beef, cut it up and put it in freezer bags. Pour marinade over and place in freezer. This is great if you find a good sale on beef but don’t have time to make fajitas right then. The great part is that when you are ready to make them the meat will already be marinaded!
