Think You Have Tried The Best Lemon Bars Ever? Think Again

I love the taste of lemon drops. There is just something that reminds me of summertime. It might have to do with the fact that we used to go to my grandma’s house on the lake house every summer and she used to make these for us. Nothing like coming in from a day of swimming and fishing for a freshly baked lemon bars.

And seriously, the butter really does make everything better. Now, everytime I eat one of these yummy lemon bars I think of my grandma and can almost smell the sunscreen, whether we eat this in the summer or any other time of year.

Old Fashioned Lemon Bars

Ingredients

  • 2 cups all-purpose flour, for crust, plus 6 tablespoons for filling
  • 1 cup confectioner’s sugar, plus more for dusting
  • pinch of salt
  • 2 sticks butter, at room temperature, plus more for greasing
  • 4 eggs
  • 2 cups granulated sugar
  • 6 tablespoons fresh lemon juice

 

Directions

  1. Preheat the oven to 350°. Lightly grease 9x13x2-inch pan.
  2. Make the crust by combining 2 cups flour, confectioner’s sugar, and salt in a large bowl
  3. Cut in the butter to make a crumbly mixture
  4. Press the mixture into the prepared pan. You may need to dip your fingers into a little flour or confectioner’s sugar to keep the dough from sticking to your fingers
  5. Bake for 15-20 minutes.
  6. Tomake the filling, mix the eggs, granulated sugar, 6 tablespoons flour and lemon juice.
  7. Pour this over the baked crust and bake for 25 minutes longer.
  8. Sprinkle with confectioners’ sugar, if desired, when the bars are done.

Quick Tip: Wow. These are so yummy that you might just want to make a double batch!
