This strawberry dessert salad is ADDICTING!

I just started cooking for a family and one of the little boys LOVES strawberries. When I saw that this is a super easy recipe that feels like a dessert but is loaded with fresh berries I put it on my list of things to make.
I know he is going to be thrilled and might even request “salad” more often.

As much as I love cooking with the fresh berries, I love that this salad is made with fresh berries AND homemade toffee topping.
How impressive is that?

Can you imagine showing up with a bowl of this at your next function or potluck? All I am saying is that you might want to make a double batch so you can leave a little at home because, take it from me,  there is a very slim chance that this dish won’t be one of the first ones gone.

My plan was a success and everyone loved it so much I actually have made it twice this week! I decided this was too good to keep a secret. If you want to to make everyone’s mouth happy at your next potluck or family gathering, this salad will not disappoint!

When you think about it, the ingredients of this Frozen Yogurt are actually good for you!~ The Greek yogurt and strawberries are perfect together and with only a few more ingredients, a blender, and room in the freezer, and you are set for cooling off!
I was thinking that this might also be good to make into small individual cups or better yet, popsicle containers.

I love that this recipe uses strawberries, but to be honest when I was looking up fast and easy summer recipes, the ones that really kept [popping out were the ones that didn’t require an Ice Cream Freezer.

You only need a blender for this one. I can’t believe I didn;t try this sooner. Plus,

I know there are a lot of people who make their own Greek yogurt, but I am totally OK to just buy it from the store, After all, a mom can only do so much!

Pie for a crowd? No problem with this “Best of Show” recipe!

It is always a tough thing when you are bringing a pie to a family function or big potluck. You know that there are only 8-10 pieces in a dish..depending on how small you cut the pieces.

But Pie for a whole crowd? Now that is what I am talking about! I love the fresh taste of strawberries and how they add just as much color as they do flavor to any meal, so being able to make one dessert to feed several people is a real bonus recipe for me.

My grandpa used to say that he only liked two kinds of Pie, Warm and Cold! I think he would totally have loved this one and so will your family and friends.

This is what Milisa of Miss In The Kitchen says about her recipe.

This recipe is super simple and I love the filling.  It’s so much better than the gloopy glaze that you can buy in the little containers.  Made easily in a sheet pan, it is easy to make ahead and take to a cookout!

It is light and fresh and just plain delicious.  I just know you are going to love it!

What is not to love with this fresh fruit packed pastry!

I am seriously going to the store almost everyday. Why? We have milk, bread, eggs and so on but the thing we are running out of at an alarming rate are fresh strawberries!
The berries are ripe right now and I know exactly who has them on sale as well as which ones are the best. Since we are in Southern Ca, we happen to live in what once was considered the Strawberry Capital of the World.
The thing about fresh berries is that they don’t have a long shelf life.So it is better to buy them and make things or eat them right away..at least that is what I keep telling myself!

Since I have been writing up new recipes I am amazed at all the scrumptious recipes I am finding and can’t wait to try. I think I could make a new one everyday for the rest of the summer and barely scratch the surface.

As much as I thought I needed to chop up berries for baking, this recipe calls for the opposite. I might have to make several batches to perfect this recipe just to make sure I have it down pat. :~D

Don’t Leave The Farmers Market Without This. Berry Interesting!

I am going to be honest with you. I keep hearing the bakers on “The Great British Baking Show” talk about adding marscarpone cream in their dessert layers and also frangipane, which I still am totally clueless about except I think it is made with almonds.

Now, I am far from being voted Star Baker, but I did some research and found out that marscarpone cream is made with marscarpone cheese, cream, powered sugar and vanilla.

After coming across this yummy strawberry dessert that included the cream in it’s list of ingredients I decided I need to look into making some Marscarpone Cream for myself.

Who knew it was a cheese? I guess I am such a basic mozzarella, cheddar, Parmesan girl that I never noticed.

I can’t wait to try this, but the frangipane, yeah that might have to wait a while!

Here is what Liz Berg of That Skinny Chick Van Bake has to say about this fruit bursting dessert.

Custard mixed with whipped cream and mascarpone cream was to.die.for. I made sure every molecule left in the mixing bowl went straight into my mouth. Sigh. It was heavenly. Plus having luscious, ripe red strawberries thrown in the mix didn’t hurt either.

It really should be called Str-ahhh-berry Shortcake.

I am pretty sure I have been eating strawberry shortcake my whole life.

I wouldn’t say I am an official connoisseur, but when your grandmothers from both sides of the family are amazing cooks and they live in Salinas, CA which can practically grow strawberries year round, you tend to develop a taste for a really good shortcake.

My grandparents always had a garden and in the coastal weather, something was always growing. Beans, corn, lemons, onions, artichokes, and strawberries. The garden plot was almost the same square footage as the small house they had built.

They left Kansas during the dust storms with all their belongings to a valley where they hoped to find jobs, a place to set down roots, and build a future for their family.

And they did.

One of the first things my grandparents did was to plant a garden. The shelves were always lined with canned goods, the freezer full of produce, and when we went to their home, we always knew something amazing would be served.

I think my grandmother would have loved this recipe.

One of the things I did when our kids were younger was to get them involved in the kitchen. I would wash their hands, put on their little aprons, and pull stools next to the counter for them to sit on.

It was a time to talk, to share, to teach, and a time when they felt the satisfaction of producing something they felt proud of and shared with others. It isn’t an easy thing because it does take time and energy, but it was worth every second.

One of the benefits is in the math department. When you are doubling a recipe a youngster can see for themselves as they measure out ingredients that 1/2 plus 1/2 does NOT equal 1/4, but rather 1 whole. Measuring out vanilla or salt is also key, 3/4 plus 3/4 is not 6/8. Well, you get the picture, and thankfully so does you little kitchen helper.

As someone who struggled with math growing up, I loved being able to offer a hands-on approach to learning with my kids.

Finding recipes that are easy enough for the youngest of cooking enthusiasts to help with isn’t always easy, but this one is a sure hit.

Wow, this recipe is so easy and simple. You won’t believe it!

Seriously? I hardly ever buy boxed cake mixes! We are more of a cookie family so unless I am baking from scratch, we rarely eat cake. But this cookie recipe is causing me to re-think cake mixes.

The fact that this recipe uses fresh strawberries and has only 5 ingredients might just make this something I need to keep in mind.

Plus, who doesn’t love the flavors of white chocolate and strawberries? Bring on the lemonade because Summer Time is here!

I think these would also be adorable for baby showers if the baby is a girl, or even the gender reveal party that seems to be the rage these days! Whatever you are celebrating, I hope this recipe will have you seeing pink.
