Cookies That Use Cake Mix As Main Ingredient? Brilliant!

I love strawberries that are ripe with flavor. This easy to follow recipe helps to bring that freshness to strawberry lovers everywhere at any time. Plus, the delicate pink color is a real  attention grabbing show stopper!

You won’t believe how fast they disappear.   If you bake these right before a party at your house, your guests will walk into the most AMAZING strawberry smelling heaven!

So before you get started let’s go ahead and get the strawberries prepped. While the taste is something that we are really glad to add into our cookie dough, we need to make sure we don’t add too much liquid from the fruit, leaving your dough a bit too thin.

Strawberry Prep

  • Preheat your oven to 325 degrees.
  • Chop up about 5 large ripe strawberries and spread them in a single layer on parchment paper-lined cookie sheet.
  • Bake them for 10 minutes and then strain them using a fine mesh strainer.
  • Leave them in the strainer in the sink to continue to drain.

Turn your oven up to 350 degrees to preheat for the cookies.

Ingredients
1 15.25 oz. Box of Strawberry Cake Mix
1/4 Cup Canola or Vegetable Oil
2 Large Eggs
2 Cups White Chocolate Baking Chips
5 or 6 Medium to Large Fresh Strawberries  YUM!

Instructions

  1. In a large mixing bowl, mix together oil, eggs, and cake mix with a spatula or large spoon until consistent.
  2. Mix in berries until they are fully incorporated.
  3. Fold in the white chocolate chips, mixing them in evenly through the batter.
  4. Use your cookie dough scoop or a big spoon to drop the even amount of cookie batter onto parchment paper lined baking sheet. Space them about 2 inches apart.
  5. Bake them for 10-12 minutes at 350 degrees. Allow to cool in pan for 2 minutes – then transfer the scrumptious treats to a wire baking rack to continue to cool.

That is it! I am going to make sure I pick up a few cake mixes the next time I see them on sale, just so I can make these with my little granddaughter!

Quick Tip: This is a great recipe to have kids help with since they can help wash berries, dump cake mix in bowl, add ingredients and stir.
