Crazy About This Curry Mango Chicken!
This spicy dish is loaded with fresh and is tantalizing from the moment you inhale the aroma.
After my son and daughter moved to a new town and settled into their apartment they invited us over for dinner. Before I even knocked on the door, I could smell the amazing aroma of this Indian dish.
The fact that I just purchased an 8 cup Cuisinart food processor made creating this extra quick. I still hand cut the chicken, tomatoes, and mango, but that was about it.
EXTRA TIP: Don’t have any curry powder on hand? No problem. curry is actually a blend of several spices and chances are that you have everything you need to make this right in your blender.
Combine all ingredients in a blender and process until a fine powder. Store in an airtight container.
Curry
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 2 teaspoons ground turmeric
- 1/2 teaspoon crushed red pepper flakes
1/2 teaspoon mustard seed - 1/2 teaspoon ground ginger.
