Not Sure What To Make For Game Night? Try This Twist On a Classic Slider!

I would have never thought to use a potato as a bun! I cook for a family and they want me to try to add more gluten free recipes into their menu. When I came across this flavor packed and tasty morsel I knew I had to try it! It is perfect for a family of any size because you can easily adjust the ingredients to meet your crowd’s size.

 

Whether you are watching the game at your house, or having everyone over for a get together Nobody can resist this creative finger food!

 

Won’t they be surprised when I serve up a small platter of this with some sliced fresh fruit on the side! And if you are anything like me you are probably wondering what to do with the potato that you scoop out. I am such a frugal cook when it comes to using everything I can. So what I did was to save it for the next day to use in potato pancakes!

And since I knew I was going to do that, I went ahead and cooked up extra bacon for the morning as well. Seriously, life is way to short to always be cleaning so I try to plan ahead and cook ahead as much as I can.

Quick Tip: We LOVE pepper crusted bacon or maple bacon but if bacon is not on your list of favorite foods, you can always swap out the hamburger for chicken or turkey sausage.

Make This Dinner Just Like An Italian Chef. Bon Apetite!

When I saw that Ree Drummond posted this recipe I had to check it out. I love all her recipes. I think I started following her when she was just getting started and there was just something personal about her life with Marlboro Man and her kids. It made me want to move out to a ranch! Ree started out talking about taking caer of her family and that is exactly what I was doing as well. Her simple yet delicious recipes really helped me add some fabulous meals to our monthly menu.

I love that this recipe calls for tiny little meatballs, so there are plenty throughout this zesty dish. However if you find that is a bit more time consuming than you had anticipated, go ahead and make them a bit bigger, but I will warn you right now, you might as well make a double batch because the meatballs they are going to be such a hit that your family will be diving into the middle of the pasta to find the last one.

This is what Ree has to say about her recipe.

“It’s got miniature meatballs, carbalicious pasta, and big chunks of mozzarella all throughout, and after you bake it in the oven the heavens open up. It’s delicious!”

Hot And Zesty, Just Like You Love It!

I love the spicy flavors of Mexican food. And I love pasta! This is a perfect twist of two amazing dishes into one, and thank goodness they are easy to make!

I remember the first time I made jumbo stuffed shells. Talk about an epic failure! I think I must had read the recipe all wrong because I had to actually scoop out the filling and try to start again. I had not read that the shells needed to be cooked in advance! So I had tyo go back to the drawing board. Let’s just say by the time I filled the shells, scraped out the shells, and refilled the shells again the whole kitchen counter was a mess. The worst part was that was my very first meal I cooked for John after we got married. I guess I could only improve from there!  Now that we have been married over 32 years I am sure there have been a few meals that really were not the best, but that is just the way life goes sometimes. We can’t always be on our game, some days are just harder than others. I am not just talking pasta here friends, I am talking about the day in and day out of just living.

Seriously, break out the pinata, this party is about to get started!

I read through the ingredients after looking at the photo, but when I go to one of the ingredients on the list I was thinking, YOU HAVE GOT TO BE KIDDING!

I would have never thought to put a can of tomato soup in this! Sure I have a few cans around because on a crisp Autumn day I love the hot tomato-y soup with a small pile of gold fish crackers next to my bowl. But in a casserole?

I followed the recipe and guess what? It looks like I will need to get a few more cans the next time we go to the store. It was that good. In fact, the next time we have company coming over right after church, I am going to make a few pans of this the night before so as soon as I get home all I have to do is pop them in the oven.

Big crowd? Make a double batch!

Because the hash browns are already cooked up it is nice to have something that can be ready at the drop of a hat.This recipe calls for corn and I admit I love the canned corn that I buy from Costco. I think there is more than one cup in each can so if you don’t want to store the tiny bit that is left over, go ahead and put it in!

This is your casserole for goodness sake.
So make it yours by adding your favorites ingredients.

This is what Judith of Bake At Midnight has to say about her quick and delicious casserole.

The base of this casserole is a creamy taco-flavored ground beef mixture. You can leave the taco seasoning out or use other spice blends if you’d like. My recipes are never carved in stone…make them your own.
Top all this off with a crunchy-cheesy-peppery layer of hash browns and you’ve got a complete dinner in a dish!

Whether you are hosting a slumber party or a tailgate party, this spud is the best!

I remember having “potato Bar” dinners when we had all the kids at home and half the neighborhood kids as well. Being able to feed a bunch of people without getting stressed at all the meal prep and post party clean-up.

This is also an easy dinner for when you are having a bunch of people over. You can be in charge of cooking the potatoes and have everyone bring their favorite topping. You can have a taco theme or mix it up a bit with other flavors.

And the best part is that people can build their own spud, much like a taco salad, so they are getting exactly what they want. Perfect for those on the pickier side!

If your group is large, you can keep the hot aluminum wrapped potatoes in an empty ice=-chest or freezer bag to help them from losing their heat.
The other big benefit from this recipe is that you can literally have all the ingredients prepped several days in advance before you need to use them.

If you know you will be having back to back meetings, school activities, company, consider having a few meals that are ZERO effort to get to the table.

Any left over potatoes can be used for hash browns the next morning! How is that for making life delicious!

Somethings are just worth the effort! Wait until you stick your fork in this!

There are a few foods that my family could eat every single week. Lasagna and pizza are on the op of the favorite foods list. So seeing those two words together in the same recipe is perfect!

I have been a little hesitant to try this recipe because it looked like more work than I wanted to tackle. But really, it isn’t something too gigantic and if you make this on a Sunday afternoon, you can bake it as soon as you get home from work on Monday.

Since this makes a huge pan, I suggest being prepared for two meals and maybe some lunch leftovers. Gotta
love that!
When you are having a large crowd over it is nice to be able to figure out how many serving you are going to need and this recipe really sets the serving and portion size up with each roll. plus you can have everything ready to just pop those babies in the oven.

Just ask someone to bring the salad, bread, and a side or dessert.

I know not everyone is a pork eater so don’t toss this recipe out because of the pepperoni! After all you can do a meatless option or a chicken meat option.

Either way, the fresh ingredients in this homemade sauce will be a show stopper that will definitely turn heads.

These pizza lasagna rolls are a fun meal that the whole family will love — what’s not to love about pizza and lasagna? With a little planning ahead, they are a great weeknight meal.

This is two of our Family Favorite Recipes Rolled into One Pan of Yummy Goodness!

I had never thought to use tortellini as an ingredient  in what is almost like a lasagna. This recipe totally rocks!

Being able to bite into that cheesy pasta is almost too good to be true. It is savory and because it really is loaded with lots of flavor and a hearty meal, it really feeds a crowd.

Toss together a salad and slice up a french bread and there you go! In fact, this is the kind of main dish you can make ahead a d just pop in the oven 45 minutes before you want to serve it up! With a big crowd of kids, it is nice to know I can have a main dish that everyone will love.

So if I want to have a small bowl for lunch the next day I know to dish it out and HIDE it before everyone eats it all!

Skip the Hamburger Helper! This is just as easy and TWICE as good!

When I was growing up my parents built a cabin near Lake Tahoe. Every weekend, for about a year, we would pile into the old Suburban and head toward the mountains where we “roughed it”.

Part of that was eating our fair share of Hamburger Helper. For being limited on having the luxury of a stocked kitchen, it was pretty darned easy. I mean cook up hamburger, dump the packet if ingredients in the same skillet, add water and simmer until cooked.

I remember sitting on paint cans with our plate of food, under the construction lamp while we were building. One night a moth flew into my plate and tried to do the butterfly stroke out of my dinner.
It must have been one of those childhood traumatizing events because think that was the last time I ever ate Hamburger Helper.EVER.

This recipe looks just like what we used to make out of the box, only better! It is one of those recipe that you can have all the ingredients for as a back up plan.

Heaven knows there are some days that you can use all the help you can get and having a dinner that is easy enough your teens can put together without trashing the kitchen is a huge bonus. Just make sure you are free of flying bugs and you will be amazed at how tasty this One Skillet meal is.

I’ve eaten my fair share of processed food. I actually don’t want to know the percentage of my meals that were microwave ready or found in the freezer section. This recipe is my ode to Hamburger Helper. Just as easy and so much tastier and healthier!

Quick Tip: To really make this a super easy option for those “What are we going to have for dinner?” days. Buy 4 pounds of ground beef and cook all of it up at once. Go ahead and drain, then divide into fourths.

Make your meal out of one of the fourths and put the other three into quart size Ziploc bags and put in the freezer.

Next time you want to make this all you have to do is defrost and you are ready to roll.

When I Heard How Famous This Meatloaf Was I Thought They Were Kidding!

I was going through several Pinterest sites when I saw the recipe for what looks like the same recipe my mom used to make. She mixed the egg, cracker crumbs, and diced onion together with her clean hands, then sprinkle with the salt, pepper, and onion powder and roll into a big ball. After being placed into a shallow baking dish it was lovingly formed it into a perfect loaf.

Before putting it in the oven, she would cover the top with her ketchup based sauce to help keep the moisture in and add flavor while it cooked. She never needed the recipe because she knew it from heart.

Mom usually made a Jell-O salad and mashed potatoes to go with it. When she sliced it to serve it up, the juices just ran onto the plate. I always love meatloaf as a kid because I knew the next day my mom would pack us meatloaf sandwiches. Even cold, her meatloaf tasted incredible. Yumm-O! As an adult, I am all about the sandwiches! I think that was the part my dad liked the best.
