Dinner for the whole TEAM???

My grandparents lived near Stockton, CA. I remember driving near the farms and seeing roadside stands of fresh fruit and vegetables for sale. One year I bought a big bag of potatoes. They were the size of small cantaloupes!

For a couple on a tight budget, those potatoes were the best ever!

TACO POTATOES

INGREDIENTS

  • 4 – 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 (1 oz.) packet Taco seasoning

TOPPINGS

  • shredded lettuce
  • cheddar cheese
  • sour cream
  • salsa
  • guacamole
  • green onion

Directions

  1. Preheat oven to 400° F.
  2. Wash potatoes in water, pat dry with paper towels.
  3. Poke a few holes in each potato then wrap each in foil.
  4. Bake potatoes for 1 hour.
  5. Carefully remove hot potatoes from oven and set aside to cool slightly.
  6. In a large skillet, brown and crumble ground beef over medium-high heat. Drain grease, if any.
  7. Add taco seasoning to beef and amount of water packet calls for.
  8. Bring mixture to a boil, then reduce heat to low and simmer for 10 minutes.
  9. Remove foil from potatoes then cut a slit in the top to open.
  10. Fill each potato with ground beef and all of your favorite taco toppings.

Quick TIp: You can also use nacho cheese and whatever you would put on nachos!
