Dinner is a Snap When You Use Your Crock Pot!

Busy night? If you are like most families, just being able to sit down at the table is a huge task, trying to get something made and on the table is close to impossible. Sometimes we are too tired to think about dinner. Or the mess. We just need to have it ready for us and with this recipe it can.
Literally this gets made up and put on for 3 to 4 hours and it is hot and ready.

You can actually go ahead and load up your crock-pot the night before so in the morning all you have to do is turn it on.

I am thinking this would be a great lunch for a Sunday afternoon, or top take to a potluck. And served with a salad and crusty Sourdough bread I can’t imagine anything better.

I know it seems like a lot of food in this recipe so feel free to cut it in half if you need to, or plan to take a serving to someone who could use a little TLC.

Heaven knows I need it every once in a while and others do as well. the other day I took a small meal to someone whose husband had been sick. She was so grateful and it was really not a bother at all. A little tater tot love can go a long way that’s for sure.

Having A Ladle Of This Made Me Feel Loved and Cared For.

I had been in Northern California for over a month with our three youngest kids. Our son was given an intern at the small airport where his Civil Air Patrol met and it just worked out for me to pack up the kids and go for the whole summer.

At the end of summer we returned from the small cabin we had rented in the Sierra Mountains back to Southern California. Ii was over eight hours of driving in our very crowded Camry. To simply state that we were tired would be like saying the Olsen Twins are thin.

After we got over the Grapevine we were going to stop at my brother’s home. He was expecting us.

I was looking forward to seeing him and I think all four of us were anxious to get out of the car. But, I totally did not expect to be wrapped in the aroma of what he had simmering on the stove when I walked in the door.

I felt so loved and comforted from my head to my flip-flip wearing toes. “What is that?” I asked hi after a hug.
“Meat and Peas,” He responded. It still needs another hour and then it will be ready.”

So worth waiting for.

Even though this recipe is ridiculously easy, and each one of you probably has their own version of it, it’s all the random flavors that totally make it. Beef, peas, tomatoes, onions… the combination is SO GOOD!

Quick Tip: I actually cook several strips of bacon in the ditch oven until crisp. Remove to paper towel and use drippings to braise the meat in. Right before serving I crumble the bacon and add to top.

Hey, I just got back from my daughter and son-in-law’s home. I call him my bonus boy because I love him just like one of my own! They are expecting their second baby any day now.

Since I live on the other end of the state from them and I might not get to be there as soon as the baby is born I decided to fly up and spend a few days getting meals planned, prepped and in the freezer so my daughter can take it easy until the baby gets here. Well, they do have a two year old so I guess I should say “Take it as easy as possible with a toddler under foot.”

We did quite a bit of food prep and one of the things we did was purchase a rotisserie chicken to make a casserole with. It was awesome to not have to cook that extra ingredient and it was perfect fr what we needed.

I just wish I had this recipe when I went there. I love that you can prep this, put it in a pan, freeze it and bake it weeks after you made it. Now that is a helpful meal right there. Looking in the freezer and realizing you have a few of these kings of meals in your freezer would be like looking in the dryer only to discover that someone left a five dollar bill in their pocket. Actually I like to consider that my tip:~D

So let me give you a tip my cooking friend. Don’t spend so much time making each meal when you can cook extra and freeze half for later, it is such a huge time and money saver and seriously, think about not having to wash all the pans every single night. Woot Woot!

Nothing screams WELCOME HOME like Southern Style Comfort Food. Come and Get It!

When I saw that Becky mentioned being obsessed with this recipe I though she was kidding, but after making it for dinner I can see the serious attraction.

This meal has EVERYTHING. Chicken, vegetables and it is all wrapped up in a flaky crust. Pretty much sums up the perfect kind of a comfort food. Just the kind your family will love coming home to after a day at school or work.

In fact this is the kind of recipe that they might even ask for when they come home to visit.

I know I am trying to pull together recipes for our older kids as part of my Christmas gift to each of them..and this recipe is going in the Pie Baking Basket.  Ssshh..it is a surprise!

I know it is a bit too early to be thinking that far in advance, but when you come across a great idea and have amazing recipes to make it spectacular you might as well jump in right? Besides..comfort food? Yeah, I think the whole world could use a bit of that every now and then.

The other great thing about a recipe like this is that you can really cater to your families preferences. Like it a bit on the spicy side? Add in some diced fire roasted hatch chilies! Like it mild, that totally works as well.

And the left overs? if you have any ..will be even better the second day which is hard to imagine since you will be tempted to lick the plate with this easy to pull together recipe.

 You Don’t have to be SuperMOM to whip up this family favorite dinner.

Weeknights can be such a struggle to get dinner on the table. By the time everyone comes home from school, work, football or karate practice, it is late. Who wants to start making a mess?

Really! I have been there and it is a real struggle. Well this is a perfect recipe because you can actually put it together the night before. Yep, it can be marinated overnight and with minimal prep can be put in the oven.

I don’t have a large pan that I put in the oven, but I do have an enamel dutch oven and it works just fine.

The best part is that my pan is pretty enough to go right from the oven to the table! Add a tossed salad and your family will be so amazed.

There is something about being able to sit down together and recap the days events without having to deal with the after dinner mess that allows you to just sit and linger a bit longer.

This is what Jo of Jo Cooks has to say about one of her favorite recipes.

The rice is so unbelievably delicious and really cooked perfectly and flavored just right. The chicken is placed on top of the rice which also adds to flavoring the rice as it cooks, because all those juice from the chicken drip down into the rice, making it that much better.

I have to admit that I’m a huge pasta fan. The minute you say pasta I’m already sold. On those nights my family does eat out its usually Macaroni Grill where I love to order the Italian Pasta Bake.
