You Don’t Need To Be Amish To Try This Casserole

This is the absolutely the best chicken casserole I have ever made. Probably because is so easy to put together and tasted great every single time I have made it. The great thing is that if you are super busy you can even pick up a rotisserie chicken.

Why is it called Amish Casserole? I have absolutely no idea except that this is super frugal and most likely uses ingredients that you probably already have in your freezer and pantry.

It is really tough when you have to stop at the store for just one or two items. If you are anything like me you end up getting several things you don’t even need. Your family will love it.

The reason some people don’t make casseroles? It is too much for just a few people to eat. No problem. Go ahead and divide this into three loaf pans and freeze two of them for later! Before you bake them go ahead and put them in the freezer. Take out the night before and bake as usual. So what are you waiting for!

I came up with this casserole, based off of a traditional Amish chicken casserole recipe  using REAL ingredients, that has all the above reasons covered. It is delicious, easy to put together, and best of all, a huge hit with the family.

Finally, I found a recipe that tastes just Mom used to make! Amazing!

I thought they were kidding when I read that a 2 cup serving of this beefy pasta was only 8 Weight Watchers points! The taste is something that will knock your socks off!

I cook for a family besides my own. I am their part time “Household Manager”. One day I took over some recipe books and I went over some of the meal planning.

One of the recipes that was requested was for goulash.

My mom used to make goulash, but I don’t think she followed a recipe. it was pretty much a little bit of everything with marinara sauce on top. I loved it as a kid.

But I knew I needed a real recipe that I could actually repeat over and over.

When I came across this one I was surprised. It has soy sauce in it to give it a little kick. And the fact that is fairly low in calories..wow, I am so happy since I am trying to watch my weight.

The family loved it as well and it is one of their favorites, I hope you family will love it as well.

I definitely recommend making this recipe as written so don’t omit the soy sauce, paprika or seasoned salt – they’re necessary for the flavor! Some people add bell peppers or cheese, and you can definitely add other veggies or mix-ins. I am usually of the mindset that anything can be improved by cheese, but I honestly found this dish doesn’t even need it.

Rolling up these noodles is a whole new twist to this favorite dish.

I have basically made the same lasagna recipe for years. I don’t even need to follow directions because I really never had any. I just watched my mom growing up as she layered the noodles, cheese, meat and sauce.

It was such an amazing aroma as the cheese began to melt and the tomato sauce cooked together with the onion, garlic, and Italian spices. Yummo!

When I saw these rolled up lasagna noodles I thought it seemed a bit odd. It reminded me of driving through farm country where instead of rectangle cubes of alfalfa there were huge round bales. But the more I though about it the more I realized it is a brilliant serving size idea.

Face it, lasagna isn’t always the prettiest thing after it is served onto a plate. Plating these for a larger crowd is super easy and a nice twist on an old favorite.

And this uses chicken. For those who lean more toward poultry instead of beef, it is nice to have recipes that appeal to the masses!
