Move Over Classic..There is a New Lasagna In Town!

For me planning ahead is key to keeping things running smoothly. Making this first thing in the morning so all I have to do is pop it in the oven 30 minutes before dinner is a huge help.

Spicy Chicken Lasagna Roll-ups

Ingredients:

  • 1 tsp. dried Italian seasoning
  • 1 tsp. crushed red pepper
  • 1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
  • 3 cups shredded cooked chicken
  • 1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese, divided
  • 1/2 cup KRAFT Grated Parmesan Cheese
    2 eggs, beaten
  • 12 cooked lasagna noodles, rinsed

Directions:

  1. Heat oven to 375ºF.
  2. Stir first 2 ingredients into sauce.
  3. Remove 1/2 cup of the pasta sauce mixture; place in large bowl.
  4. Add chicken, 1 cup mozzarella, Parmesan and eggs; mix lightly.
  5. Spread 1/2 cup of chicken mixture along the length of each noodle; roll up.
  6. Spread 1/2 cup of the remaining pasta sauce mixture onto bottom of 9×13-inch baking dish sprayed with cooking spray.
  7. Place lasagna roll-ups, seam sides down in pan.
  8. Cover with remaining pasta sauce mixture; sprinkle with remaining mozzarella.
  9. Bake 25 min. or until heated through.

Quick Tip: If you are making this meal for a smaller crowd, make this same recipes into 2 8 x 8 pans or 3 loaf pans. You can freeze the extra pans for later, or share with someone who might need a meal brought over.  Since there is tomato sauce in this, if you are planning to freeze it always lay down saran wrap or parchment paper before covering with aluminum foil. Remove paper before baking.
