So Tempting You Might Just Eat The Whole Thing

I love summer and all the fresh fruits. I just want to try as many recipes as I can before berry season comes to a close!  This strawberry season and blueberry season has really been the best ever. So what better way to celebrate than to combine those two colorful berries into one dessert. And best part is that you don’t even need an oven to make this icebox cake.

I love having a more relaxed summer schedule, but it still feels like we have a million places to be and a million things to do. Part of our summer used to include swim lessons. Not just going to the big outdoor community pool in time to take a class, but spending time with our neighbors and friends.

We would often get together with family and friends for last minute barbeques and we would take whatever we had on hand. Sometimes it was watermelon slices, sometimes I would toss together a southwest inspired green salad. I rarely made desserts unless it was something I already had in my cookie jar. But this recipe is a game changer.

I don’t have to heat up the house of hunt for hard to find ingredients since I usually have these on hand!

“You can throw it together whenever you have time (even the day before is fine) and it will be ready and waiting for you in the refrigerator when you want a sweet treat!”

The taste of key lime pie is so light and refreshing! After moving to Southern California I found that I use citrus much more than I ever have before. Lemons or limes!

Having a kiddo down the street who sells the lemons off his family tree is also pretty darned handy. I am a frequent customer of his lemons, blood oranges, and avocados, but if I want limes the place I head is the local Farmer’s Market.

Ohh my!

But fresh fruit isn’t always available to everyone or all year long so when I say this recipe I almost thought Keri was kidding.

I mean use an actual pie for one of the ingredients?

But that is exactly what she did, and after seeing how easy and creative this fun treat was I think I might have to keep at least one of those pies in the freezer for last minute guest or invites. Who am I kidding? I might need to keep an extra pie around for those nights when you just want something special without the fuss or mess!

This cool, creamy no-bake Key Lime Pie Dip with bite sized pieces of key lime pie is stirred right in.

Why yes, I would like S’MORE!

What is it about the taste of S’Mores? Is it the goey melted marshmallows and chocolate? The thought of spending time around the campfire with those you love? OR could it just be the fact that it is one of those tastes that takes you back to your childhood?

Pretty sure it is all the above.

Growing up in a family who loved to camp, my mom would have never thought to pack up the old Suburban if we didn’t have S’more Fixings.

Aaah the glow of marshmallows becoming little torches under the starlit sky!

Totally awesome that this little treat doesn’t require any fire, mosquito spray, or sleeping outside.

You can make this version of a campfire treat and serve it at your next family get together or your kids’ slumber party.

And the clean-up? Super easy breezy

No Bake Cheesecake? How cool! Literally.

I love the taste of cheesecake, but it can be so heavy and overwhelming. Adding in citrus really lightens up the flavor and the fact that this is a no bake treat makes it nice. Really, who wants to heat up the house during the summer months.

When we lived in the Midwest I noticed that the older farm houses had a “summer kitchen”.  It was a small outbuilding next to the house that had a stove and storage. It was where the canning, cooking, and baking took place during the summer months, especially when the harvest was plentiful.

Coming from CA, I thought that seemed odd, but when the temperature and the humidity started rising to a sweltering level I understood the wisdom.

Being able to make anything without having to heat up the house was a huge benefit.

Here is what Martha says about her no-bake Key Lime Cheesecake.

This airy, mousse-like treat blends the tartness of Key lime pie with the richness of cheesecake. Its graham-cracker crust sets in the freezer rather than the oven, and the traditional whipped-cream topping is folded right into the filling, along with fresh citrus juice and zest, cream cheese, and sweetened condensed milk. Chill it overnight, and wake up to a world of bliss.

One of the things I did when our kids were younger was to get them involved in the kitchen. I would wash their hands, put on their little aprons, and pull stools next to the counter for them to sit on.

It was a time to talk, to share, to teach, and a time when they felt the satisfaction of producing something they felt proud of and shared with others. It isn’t an easy thing because it does take time and energy, but it was worth every second.

One of the benefits is in the math department. When you are doubling a recipe a youngster can see for themselves as they measure out ingredients that 1/2 plus 1/2 does NOT equal 1/4, but rather 1 whole. Measuring out vanilla or salt is also key, 3/4 plus 3/4 is not 6/8. Well, you get the picture, and thankfully so does you little kitchen helper.

As someone who struggled with math growing up, I loved being able to offer a hands-on approach to learning with my kids.

Finding recipes that are easy enough for the youngest of cooking enthusiasts to help with isn’t always easy, but this one is a sure hit.

No Bake. No Fuss. No Problem!

One of my favorite things to do as a mom is to cook with my kids. I started letting them help me in the kitchen from the time they could hold a wooden spoon. Finding recipes that are yummy to serve as well as easy enough to have your kids help out isn’t always easy but this one totally works.

Not only are you talking about measurements and teaching your kids to follow directions, you allow them to help serve someone else.

Being able to make something that others appreciate gives kids a real sense of accomplishment. The recipe we usually made involved layering a few ingredients in a pan and baking. This recipe is very similar. Only instead of baking, you just pop this pan in the fridge to set up!

In fact, don’t be surprised if your kids volunteer to bring dessert more often!

The fudge sauce is also great on ice cream so you might want to make an extra batch just to have on hand!

The simple taste of graham crackers, vanilla pudding and chocolate are a sure winner for any occasion or potluck gathering.
