If You Grew Up Eating Campbell’s Mmm-mm-Good Soup, You Will Love This

I was perusing the soup isle at the grocery store the other day because I needed a can of cream of chicken soup. When my eyes landed on the Bean and Bacon soup I just couldn’t get it out of my mind. I loved eating Bean and Bacon soup when I was a kid, it was so creamy and satisfying. I almost picked up a can but when I saw how much it cost for what was sure to be one meal I hesitated. I knew I could make a whole pot of soup for my family and have enough for leftovers if I made it myself, and even though I grew up on the taste of the Campbell’s version I know that anything made fresh tastes so much better and is better for you.

Boy was I right. This soup is really easy to make and is so delicious that I am already looking forward to making it again. There is something about a bowl of this, cupped in your hands, that just warms you to the core. So while the commercial jingle says “Mmm..Mmm..Good.” I am now singing a new tune that states “Ahh Ahh Amazing!”

I love that this uses canned northern beans, but for you die hard Insta-Pot chefs, go ahead and start with dry beans and cook them up first. Talk about stretching your food budget dollars.

Bring On The Chili Weather!  Pun Intended

What is a busy mom to do when dinner time rolls around and EVERYONE is hungry? Well, try this dish and watch your family eat it up. I love a hearty meal that you can create in a hurry and with simple, yet hardy ingredients. Really, it comes down to just taking a few moments to sauté the onions and fresh garlic before adding in the carrots, browning the beef and adding the pinto beans. Really, this is the perfect comfort dish that reminds me of my husband’s favorite food. Chili beans and cornbread. Seriously, he could eat it every week if I made it for him. The fact that this cornbread is baked right on top means no more dry cornbread for my family!  I love the fact that this is cooked in one dish, which means the clean-up is fairly minimal.  So, whether you are looking to take something to a cabin or just want a hearty Game Day Dinner, this Cornbread Chili Pie is a perfect dish.

And for more of a Southwest flavor go ahead and add in some diced fire roasted hatch chilis and a can of corn.  That really helps to stretch this dish out and if you are lucky, you might even have some for left overs.

The Taste Of a Classic, Only In A Soup

I love making and eating soups. I think that on a brisk day nothing beats a big bowl with some fresh breadstick to just warm you up from the inside out. We lived in MN for nine years and believe me, there were lots and lots of soup days.

When we moved back to Northern California we lived in the Sierra Mountains. It was a wonderful feeling to have a big pot of soup or stew on the stove when snowflakes started to fall.  The perfect meal after a day of sledding or shoveling the walkway!

Then we made the move to San Diego area. I have to admit I miss the seasons. Not only is it hard to think of fall or winter when you are still wearing flip flops and short sleeves, we don’t eat soup very often. At least not as often as I would like, but thankfully I hear temperatures are going to be dropping soon. We might even have a few mornings where you will be able to see your breath when you walk outside. If there is a dusting of frost, well down in SoCal they refer to that as a weather event.

Make This Dinner Just Like An Italian Chef. Bon Apetite!

When I saw that Ree Drummond posted this recipe I had to check it out. I love all her recipes. I think I started following her when she was just getting started and there was just something personal about her life with Marlboro Man and her kids. It made me want to move out to a ranch! Ree started out talking about taking caer of her family and that is exactly what I was doing as well. Her simple yet delicious recipes really helped me add some fabulous meals to our monthly menu.

I love that this recipe calls for tiny little meatballs, so there are plenty throughout this zesty dish. However if you find that is a bit more time consuming than you had anticipated, go ahead and make them a bit bigger, but I will warn you right now, you might as well make a double batch because the meatballs they are going to be such a hit that your family will be diving into the middle of the pasta to find the last one.

“It’s got miniature meatballs, carbalicious pasta, and big chunks of mozzarella all throughout, and after you bake it in the oven the heavens open up. It’s delicious!”

If You Love Tomato Soup, You Are Going To Flip Out When You Taste This

I never knew how much I loved tomato soup until several years ago. My mom used to use the canned soup in recipes but she never made it to serve as a soup. I hadn’t really tried it until I was an adult. I just remember the first time I tried it at my favorite restaurant. It was the Soup of The Day so I figured it couldn’t hurt. But, after only one spoonful I knew I loved it. Seriously! On a chilly day there is nothing like that creamy soup that just warms you up from the inside out. I love adding in a few spoonfuls of my favorite salsa to heat things up a bit more and a small dollop of sour cream on the top to stir in.

I guess I had never thought to make this from scratch, which is hilarious since I make everything from scratch, including marshmallows!  Ree Drummond takes this recipe up a notch by making adorable croutons to float on top. They remind me of a smaller version of what I make for French Onion Soup.  Ree goes the extra mile in so many of the things she does. I hope one day I will have the opportunity to visit her Mercantile Store, because if it is anything like she is I am sure it is down home, practical and very personable.

Quick Tip: If you are having a huge crop of tomatoes and are not sure what to do with them, consider lightly rubbing with oil, cutting them in half and placing them cut upside side down on a baking tray to place under broiler until blistered. It is a great roasted tomato taste.

This Might Just Be The Best New Recipe You Try All Fall

Let’s just be totally honest here. I love American food just as much as anyone else such as hamburgers and French fries, Mac and Cheese, where the cheese just connects your fork to the plate it is so stringy and gooey, and pizza. So when I saw a recipe where all these flavors were mixed together in one skillet I was a bit skeptical. I mean is this like a “Clean out the fridge and see if anyone notices.”  Kind of a recipe?  The answer to that is NO! This literally where you cook everything using only one pan, wave your magic wooden spoon, and smell the magic happen!

I should have known this would be amazing when I saw it had bacon in it. Now the biggest hurdle is to see if my family loves it.

The apples and Brussel sprouts are perfect cooked this way, which is a huge deal for me. I am not the biggest Brussel sprout fan, but my family just could not get enough of this once I put it one the table. In fact, they already asked me to put it on the menu again and want me to make a double batch so we have enough for lunch left-overs.

A Cross Between Your Favorite Recipes Make This Single Serving A Huge Saving

Isn’t it nice to find a few creative ways to make our lives easier? I know I can use all the help I can get when it comes to making my days run a little smoother.  One thing I did was to de-clutter my entry closet. Wow! Why in the word would I need so much stuff in a place that should only hold a few items. In fact, I even found a packet of sample dog food in there. What is the problem with that? We don’t even have a dog!

My goal is to eventually go through each nook and cranny and get rid of things I don’t need so I can make more room in my life for the things that are the most important to me.

Being able to keep my meals planned and rotated are a huge help as well. If I can have several meals that are super easy, delicious, and a breeze for clean-up, I know that will have a huge impact on how things are run.

I have made meatloaf for years! But making them in muffin tins are a whole new experience. I can already see how this will freeze well so I can just take out what we need. Perfect!

Do Not Try To Make These Without Learning The Secret Ingredient In This Recipe.

I don’t know about you but if I could pick a food that I have learned to love as an adult I would have to say it would be sweet potatoes.  There is a little bit of a difference between sweet potatoes and tams. I actually thought they were the same thing but they are different plants. I think the sweet potato is a little sweeter and it also has more of a consistency of Yukon gold as far as fibrous texture goes.

As far back as I can remember my mom used to make a sweet potato dish by starting with canned yams. You know the ones. They show up on the end caps at grocery stores around Thanksgiving. Usually there is also tall stack of mini marshmallows right next to them along with brown sugar. Yep, that is the casserole I am talking about and while Thanksgiving might not feel complete without it, kind of like the multi layer Jello Salad recipe that has been around for ages, sometimes a little change is a good thing.

Using fresh ingredients is such a game changer. When I first made recipes that called for sweet potatoes and began cooking with them I had no idea how delicious they really were. When I found out they were good for you, well let’s just say a happy dance might have happened right in my kitchen!

“Also, I always make these with breadcrumbs. The times I’ve tried these with flour, they come out gooey in the centre. Very, very soft and almost like a cake batter.”

Would Your Hungry Family Rather Eat Something Out Of A Can Or Sink Their Fork Into This?

Don’t you love a happy ending? I do. I am kind of a sucker for movies that are so predictable you could see it coming. Seriously, who didn’t know that You’ve Got Mail, the character that Tom Hanks played wasn’t totally going to sweep Meg Ryan’s character off her feet. I have probably watched that movie twenty times and I still love the ending. Why? Because it is nice to know that something’s turn out better that we could have hoped for. That is the key to chic-flick books and movies. We need the reassurance that things work out, even if it is a fictional story that ends in the middle Central Park.

Well you are in luck. This recipe will always bring you a happy ending.  I have probably made this as often as I have watched You’ve Got Mail and every time it is perfection.

I think because this recipe, like a good chic-flick, starts out with a real good cast of character that we call ingredients, and puts them in the perfect setting. When you put those two elements you have a match made in Heaven.

Why not make a pan of this creamy, cheesy, chicken and pasta and watch the story unfold. Instead of needing a Kleenex you can use a napkin!

Some Things Just Take Time To Simmer.

There are times when you need to make something extra memorable and special. You know those times. Your daughter and son in law just announced they are having a baby. Your son comes home after boot camp. A sister survives breast cancer. Retirements, anniversaries, and the list goes on.

Sure it would be great to have a quick casserole that takes less than 30 minutes from the time you put it in the oven to when you can place it on the table. Some things take time. In fact I think that TIME, just like Thyme, is a very valuable ingredient.
