Worried about what to fix for dinner? Problem Solved.

One Pan meals are becoming a standard at our house. I always remember my mom making several dishes to put on the table. Anything cooked in a pan was put in a serving dish before being set on the table. It was just the way things were. We didn’t use cloth napkins but my mom did teach me how to set a nice table, complete with a center piece.

It was nice to sit down as a family, but afterwards there was always the task of dish duty. I was usually the one who was in charge of hand washing.

In fact all these years later I feel like I am still in charge of hand washing the pots and pans so whenever I come across a meal I can make in just one pot, or skillet I am totally on it.

Dinner doesn’t have to be a big production, but having dinner together should definitely be a priority. Meals that are a snap to fix, are a lifesaver. Make this for your family and I think they will agree that this is one of their favorites.

This is what Christina of Eat Well 101 has to say about this incredible recipe.

One pan chicken and Potatoes with Garlic Parmesan Cream Sauce makes for a nourishing dish perfect for a weeknight. Chicken thighs and potatoes are pan-seared, then finished in a delicious creamy sauce that perfectly combines all the flavors of garlic, tomato, spinach, spices and cheese. It’s truly an entire meal in a single skillet!

Quick Tip: For a leaner version of this dish make it with boneless skinless thighs or chicken breast.

The aroma of this simmering just says..come on in and grab a bowl!

I love the taste of a good stroganoff. Truth be told, I grew up with it being made with ground beef and my adult children make it that way as well. But my stroganoff is also made with a cream of mushroom soup. It is a thick gravy like topping to rice or noodles.

While I love the flavor, it can be on the heavy side. My problem is that it is so stinkin’ good that I tend to eat more than I should!

When I saw this recipe I knew I had to try it. All the flavor without all the calories. So much lighter and better for you. On the crisp evening when you just crave something to warm you from the inside out, this just might be your go to recipe.

Sometimes just the smell of this can bring everyone into the kitchen asking when dinner is ready.
When our son in the Army was coming home on leave, guess what he requested for his first dinner home. You got it soldier! I love that our kids have their favorite food that remind them of home. This one is at the top of the list.

When our son came home from overseas he was so happy when I fixed this. I asked if it was as good as he had been dreaming about and he replied it was better.
That is when you know you need to pass the recipe down so they can someday make it for you.

This is what Amy from Belly Full had to say about this family favorite.

Classic beef stroganoff is transformed into a hearty, yet light soup. And no need to cook the noodles first, because it’s all made in one pot. Easy weeknight dinner!

Quick Tip: Several of our kids do not like mushrooms so I saute then and put them on the side for my husband and I to add later. It isn’t that I am catering to them.. I just don’t want my mushrooms to be undervalued!

You Don’t have to be SuperMOM to whip up this family favorite dinner.

Weeknights can be such a struggle to get dinner on the table. By the time everyone comes home from school, work, football or karate practice, it is late. Who wants to start making a mess?

Really! I have been there and it is a real struggle. Well this is a perfect recipe because you can actually put it together the night before. Yep, it can be marinated overnight and with minimal prep can be put in the oven.

I don’t have a large pan that I put in the oven, but I do have an enamel dutch oven and it works just fine.

The best part is that my pan is pretty enough to go right from the oven to the table! Add a tossed salad and your family will be so amazed.

There is something about being able to sit down together and recap the days events without having to deal with the after dinner mess that allows you to just sit and linger a bit longer.

This is what Jo of Jo Cooks has to say about one of her favorite recipes.

The rice is so unbelievably delicious and really cooked perfectly and flavored just right. The chicken is placed on top of the rice which also adds to flavoring the rice as it cooks, because all those juice from the chicken drip down into the rice, making it that much better.

GO TO THE NEXT PAGE FOR INGREDIENTS AND DIRECTIONS.

Quick Tip:You can marinate the chicken the night before in a zip lock bag so when you are ready to put this dish together it is ready to go.

Nostalgic and delicious. This dish really brings back happy summer memories.

Every summer my dad’s side of the family had a big Family Reunion. It changed locations over the years and us kids, who used to go swimming afterwards all grew up and started having kids of our own. But one thing that has not changed are the long tables of some of the best cooking ever.

Homemade cherry cheesecakes, baked beans, potato salad, and Grandma Miller’s Chicken and homemade noodles.

Not just egg noodles like what you buy in the store, but floured dough noodles that were a labor of love.

She would mix the dough, then roll it out really thin, and eventually make small thin strips that would be dropped into the boiling broth.

It was one of those things that you couldn’t get enough of and knew that family reunion wouldn’t be the same without them.

This recipe is almost the same. Except instead of noodles the dough is cut into squares. So much easier, without compromising on the flavor.

This is what Tiffany of Eat At Home Cooks has to say about this Southern Hospitality Favorite.

A bowl of homemade chicken and dumplings. A glass of sweet tea. It’s a meal any Kentuckian would be proud to fix and danged happy to sit down to. And it’s not hard to make. Come on, I’ll show you how.

GO TO THE NEXT PAGE FOR THE INGREDIENTS AND DIRECTIONS.

Quick Tip: I like to add diced carrots and frozen peas to my chicken and dumplings for flavor, color and taste. Yum.

I am not sure what is more famous. IKEA furniture or their meatballs in creamy sauce?

I remember hearing a few friends talk about stopping in at IKEA’s for lunch. I thought they meant going on their lunch hour, but nope..they really meant lunch. As in .. WE just can’t live without these meatballs!

It must be the smell of Scandinavian furniture that lured them in, but now that they are addicted their freezers are stocked with IKEA entrees like these Swedish Meatballs.

We have never lived near an IKEA’s so I have to say I have not been one of those meatball fanatics, but when I saw that this recipe was a Copy Cat version I decided to give it a try.

I love that you can make a double batch and freeze the uncooked meatballs to cook up later or just put the cooked meatballs in freezer for later. Without the sauce on them , they can also double as spaghetti meatballs!

This is what Chungah of Damn Delicious has to say about her adaptation of this recipe.

Nothing beats homemade meatballs smothered in a creamy gravy sauce, and they taste much better than the IKEA version!

GO TO THE NEXT PAGE FOR THE INGREDIENTS AND DIRECTIONS.

Quick Tip: Not a beef or pork eater? Make these with ground turkey, or my favorite, ground chicken sausage.

Not sure what to fix for dinner for your family? Take it to the mattress!

Ok I admit I am one of the few adults that has never seen the Godfather. What can I say? I am a lightweight when it comes to scary movies!

But I do know that taking it to the mattress means fighting it out..which is sometimes what the dinner hour feels like.

I know the Godfather is really a movie icon but I am just not sure I can stomach the gore. But even if you haven’t seen any of the Godfather movies, chances are you have heard about several of the scenes and can quote a few of the lines.

I thought it was funny in “You’ve Got Mail” how references to the Godfather kept coming up. It really must be a guy thing. But you know what, so is food! Which is why Italians love their recipes involving pasta, marinara sauce, and would rather “leave the gun and take the cannoli”!

So get down to business in the kitchen, where it is for the whole mob or just a few and start cooking this Italian favorite that was shared to the Food Network by Giada De Laurentiis.

“Friendship is everything. Friendship is more than talent. It is more than the government. It is almost the equal of family.- Don Corleone”

Quick Tip: For a great add on- cook up angel hair pasta and serve this over it. Add a side salad and bread sticks and you are ready to roll.
