Wondering if You have time for a cup of coffee? When these are hot out of the oven, you will want to make time.

I grew up near a place called Apple Hill. Every fall as a teenager I worked at one of the many orchards serving up all kinds of yummy apple recipes, including caramel apples, apple pie, apple cake, apple doughnuts and apple cider. But, I don’t recall ever serving up apple muffins!

These are super easy and chances are you already have most of the ingredients in your pantry and fridge. Martha Stewart uses a Macintosh apple , but seriously, any baking apple will work fine. If in doubt you can always grab a granny smith apple. In fact these muffins are going to be gone before they are cooled so you might just want to grab two in case you need to make another batch.

One of the things I loved about working in the orchard was seeing how many varieties of apples there were. Each apple was distinct and had various benefits. We had neighbors up in the Sierras who had an apple orchard. It was over 3,200 foot elevation and the Arkansas Blacks could not be picked until after the first hard frost. That was when the sugar set in. Who knew?

They weren’t great for eating because they were hard and super crunchy, plus a bit tart, but they made the best apple butter you have ever tasted.

So pick your apples wisely to get the best flavor in what you are cooking and baking.

Then there are the Pink Lady apples..and Honey Crisp..oh my!

Quick Tip: Feel free to make a double batch of these muffins. When completely cool, wrap in saran wrap and place in freezer bag. Put bag in freezer. When you want to have one or take one with you to school or work, all you have to do is pull one from the bag and go. It will defrost soon enough or just put it in the microwave for 10 seconds.

The morning hustle is something that I am ready to ditch!

Trying to get everyone up and out the door on any given morning is a huge task. Especially considering we had six kids!

While cereal, instant oatmeal, or peanut butter on toast was always a quick go-to for that morning where we all needed to leave bright and early, there is something magical that happens when you have something in the oven that literally lures your offspring our of bed, smiling, and ready to tackle whatever the day holds. I am not going to say that happened every day, but on mornings where I had something in the oven it seemed like everyone got off on the right foot.

Really, the smell of freshly baked apples, mixed with butter, brown sugar and cinnamon would make even the stingiest curmudgeon get up on the right side of the bed.

Try this for your family and see if it works! Chances are you won’t even have to ask them to tidy their room, remember to brush their hair, or take out the trash. Okay, maybe that is pushing it a bit.

This casserole was a big hit! The cinnamon and apples are such a great flavor for breakfast. The apples soften while baking, but they aren’t soggy. The inside is soft and moist, the top is just crunchy enough.

Quick Tip: Go ahead and set the table the night before. I loved doing this on Saturday nights when I knew we would all need to get ready for church the next morning. I felt more pro-active than re-active and my family felt loved and cared for.

A yummy cross between two of our family favorites! This recipe has all the flavor, without all the calories.

I am always trying new muffin recipes that are hearty, healthy, and will help fuel up our family. With this cross recipe, I think I found a winner! Plus, it is a lower calorie version of many of the muffin recipes I have tried.

Being able to replace half the oil with unsweetened applesauce really helps to keep the muffins from being heavy and dense. Because these muffins are full of carrots, apples, and raisins, they are perfect for a quick snack.

My husband, John, works in the construction industry. He often eats breakfast and starts his day long before the sun comes up. Needing a healthy mid-morning snack is something I try to pack in his lunch. Having muffins that pack well are a big hit.

Adding raisins or dried cranberries to a batter is not anything new, but this is the first time I have ever soaked the dried fruit before adding it. I loved how it turned out.

Quick Tip: If you have bananas that are starting to get freckled and are beyond eating. Try mashing up and replacing the applesauce. I am a huge fan of not letting food go to waste and having a plan for when your fruit starts to look like it might be beyond it’s shelf life helps you be “pantry frugal”!

With Only a Few Ingredients You Can Create Something Almost Scandalous!

While I am a big fan of fruit, I love apples, either raw and crunchy, or cooked into pies, muffins, and baked. While I have several of my favorite recipes, this is a new one I just came across and looks quick and easy.

We end up having company. A lot. I love being able to serve up something yummy and homemade, but that isn’t always easy at a moments notice. Ree Drummond’s Apple tart might just be one of the best solutions for last minute dessert ideas.
