Right From Aunt Betty’s Recipe Box!

One of the main ingredients is a cake mix! Who would have thought? Now, I don’t know if Aunt Betty used a cake mix or if the whole thing was from scratch, but these are so close I can’t tell the difference.

Ooey Gooey Cake Mix Bars

Ingredients

CRUST:

  • 1 box yellow cake mix, dry- not prepared
  • 8 Tablespoons butter, melted
  • 1 egg

GOOEY LAYER:

  • 8 oz. cream cheese, softened
  • 2 eggs, beaten
  • 16 oz. powdered sugar

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine cake mix, melted butter and egg. Mix until smooth and well combined.
  3. Pat and press dough evenly over the bottom of a greased 9×13 baking pan. Set aside.
  4. In a separate large bowl, beat and cream the cream cheese.
  5. Add the eggs and beat until smooth for a minute or two.
  6. Add powdered sugar and continue to beat until well combined.
  7. Pour over crust and bake at 350 degrees F for about 25-30 minutes or until done. Do not over bake.
  8. When done, remove from oven and let cool completely before cutting into.

Quick Tip: want to make your tea party extra special, freeze a lemon slice and few blueberries in ice cubes to add to a soda water.
