You Don’t Even need to Turn On Your Oven For This Summer Dessert!

My grandparents lived in Salinas, CA. It is one of those areas that has super consistent weather all year long. Behind their small home was a big garden that had several rows of strawberry plants. The plants produced berries all year round. Crazy!

Most of us don’t have the luxury of year round berries, so when it is berry season I tend to try lots of new recipes. This one is going on my list!

No Bake Strawberry Cheesecake Icebox Cake

Ingredients

  • 2 (3.4 oz) packaged cheesecake flavored pudding mix
  • 4 c. milk
  • 24 graham crackers
  • 16 oz Cool Whip
  • 2 lbs fresh strawberries, washed and sliced in half
  • 1/2 c. graham crackers crumbs for topping

Directions:

  1. Prepare the cheesecake pudding mixes according to directions using 4 cups of milk. Set aside.
  2. In the bottom of a 9×13 pan place a single layer of graham crackers.
  3. Spread 1/3 of the cheesecake pudding on top of the graham crackers and then a 1/3 of the Cool Whip on top of the pudding mixture followed by 1/3 of the sliced strawberries.
  4. Repeat two more times.
  5. Refrigerate at least 4 hours or overnight before serving.
  6. Sprinkle with graham cracker crumbs before servings.

Quick Tip: No Strawberries? Try this with your favorite fresh berries. Or better yet, make it a combo of blueberries and strawberries!
