Salad, Pita, Wrap? This recipe puts the FUN in Multi-functional!

This Chicken Salad it loaded with some of our families favorite ingredients..including bacon! Hello, I am ready to dive in right now.

When I think of luncheons, I think of small sandwiches and little cups of fresh fruit that one would serve either a preschooler or a senior citizen.

Not to say I expect of need a full lunch every time the clock strikes twelve. But let’s call it what it is..  It is a snack or a meal?

I don’t want to wish I had eaten before we left home, but sometimes that is what happens and trust me, when tweens or teens are involved, not having food that is filling or satisfying can be miserable for all concerned.

Being able to add a lot of ingredients in a dish doesn’t just add volume, but the fact that it is full of flavor is the key to feeling satisfied. This multifuncional salad can be served on a bed of lettuce or stuffed into a pita. Either way, you will be happy you made this when guests start raving about it.

I have to admit… I have quite a lot of crazy ideas for new recipes.  Some don’t work out so well.  Most of them turn out good, but sometimes it turns out like really, really good.  This, my friends, is one of those times!

Quick Tip: Shredding cooked chicken is a cinch if you toss it onto a food processor and it pulse. Wow, that is easy. You might want to go ahead and makeup twice as much chicken as you will need. Put half in a quart sized freezer bag and put in freezer to make again in a few weeks. (If you can wait that long :~)
