Can you really have TOO much bacon?

Life was tough for those gals who had to feed their families on barely enough food to live off of. They really had to get creative and often bartered for things. I wonder what I could barter for a batch of these unique cookies.

If the chocolate chips seem like they might have too much going on in one cookie. Feel free to omit them, or at least make half chips and half without.

 Depression-Era Oatmeal Bacon Cookies

Ingredients

  • ¾ cups White Sugar
  • ¾ cups Dark Brown Sugar
  • 1 whole Egg
  • ¾ cups Bacon Drippings, Room Temperature ( or butter)
  • 2 cups Old Fashioned Rolled Oats
  • 1-½ teaspoon Ground Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1-½ cup All-purpose Flour
  • 4 pieces Bacon, Cooked And Chopped (optional)
  • 6 ounces, weight Chocolate Chips (optional)

Directions

  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl, combine the white sugar, brown sugar, egg and bacon drippings.
  3. Add the oats, cinnamon, salt, baking soda, flour and mix well.
  4. Gently fold in the bacon and chocolate chips.
  5. Using your hands shape the dough into 1 1/2″ to 2″ cookies.
  6. Place on ungreased cookie sheets and bake for ten minutes or until done.

 

Quick Tip: Try using some of the flavored bacon options such as apple or maple. If you are a no pork person, you can always go with the turkey bacon.
