When You Have to Bring a Side Dish.. check out this Savory Wonder!

I made a mashed sweet potato recipe with Trinidad Gravy. This recipe reminds me of that. The sauteed bell peppers and onion are something that is common in a lot of the caribbean cooking.

It really adds a nice flavor and texture to this dish as well. Plus, the colors re anything but bland.

Trinidad Corn Pie

Ingredients

  • 1 can 15 oz can of Corn
  • 1 Large egg
  • ½ cup corn meal
  • 4 tablespoons butter
  • 2 green onions, chopped
  • ½ cup diced onion
  • 1 bell pepper green or red, diced
  • 1 teaspoon or more salt
  • ½ teaspoon cayenne pepper
  • 1 c. milk
  • 2 Tablespoons parsley
  • 1 cup sharp cheddar cheese divided
  • 1  tablespoon sugar
  • salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees F.
  2. Strain out water from the corn, into a bowl . Pour the liquid into 1 cup , if it does not fill add enough water to fill it.
  3. Add egg and cornmeal to liquid. Mix thoroughly. Set aside.
  4. Melt butter to a sauce pan, then add green onion, bell pepper, onion, salt and pepper then stir for about 2-3 minutes or until tender.
  5. Add the milk to bell pepper, onion and butter, bring to a boil
  6. Quickly add the cornmeal and egg mixture.
    Reduce heat to low and cook for about 4 minutes stirring frequently to prevent over cooking.
  7. After about 4 minutes add corn and continue cooking for another 5 minutes until the mixtures comes easily from the sides of the pot.
  8. Add ½ cup cheese, parsley and sugar, mix well .
  9. Transfer corn mixture into prepared casserole, top with remaining cheese and bake until top is lightly brown about 30-40 minutes and the cheese is bubbly .
  10. Let it cool before servingQuick Tip: This is a great dish to bake for a large crowd. Just double or triple the ingredients. For small crowds, consider baking this in several small dishes to you can freeze one for later!

    never bring something in plastic to a potluck — take the time to make something incredible like this corn pie or green beans or hamburger casserole or sweet potato casserole. If you have to think about something in plastic, change your mind and bring fresh bread from a bakery and something to dip it in or spread on it. anything but plastic. I know you can do it…go!

      I agree. If you take the time and money to make something like this , buy a casserole dish to bring it in and give the recipe to the hostess. She will always think of you when she uses the dish.

    Personally, I would choose to bring the milk to just BELOW boiling. Never boil milk! Other than that, I think I’m making this tonight. It looks and sounds delicious.
